I got this recipe from lots of different sources. I couldn't find one I liked. So took what I liked and added my own spin and this is what came out. I love this recipe, because it has all the flavors of fall. A little trick I learned from my grandmother: use different types of apples for the best flavor. I use Granny Smith, Braeburn, and Golden Delicious, but you can use whatever you like. I serve it as is, but encourage the use of ice cream, whipped cream, or whatever addition the occasion calls for.

1 ½ cups all-purpose flour
½ teaspoon salt
2 egg yolks
¼ cup cold butter, cubed
⅜ cup water
6 apples - peeled, cored, and chopped
¾ cup white sugar
2 tablespoons all-purpose flour
1 teaspoon ground mulling spices
1 pinch salt
½ cup butter, softened
½ cup white sugar
¾ cup all-purpose flour
¾ cup rolled oats
1 teaspoon ground cinnamon
1 pinch salt

Steps:

  • Mix 1 1/2 cup flour and 1/2 teaspoon salt together in a large bowl. Rub egg yolks and cold butter into the flour mixture until it forms fine crumbs. Add water a little at a time just until dough starts to form and stick together. Wrap dough with plastic wrap and allow to rest in the refrigerator, about 30 minutes.
  • Roll pie dough out on a well-floured surface and place in 9-inch deep-dish pie plate.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine apples, 3/4 cup sugar, 2 tablespoons flour, mulling spices, and pinch of salt in a large bowl; mix well to combine. Place apple mixture in prepared pie shell.
  • Cream 1/2 cup softened butter and 1/2 cup sugar together in a bowl with an electric mixer. Stir in 3/4 cup flour, oats, cinnamon, and pinch of salt. Sprinkle the topping mixture over the apples.
  • Bake pie in the preheated oven until crust and topping are golden brown and filling begins to bubble, about 1 hour.

Classic deep-dish apple pie flavored with cinnamon, ginger, and a pinch of allspice and topped with brown sugar crumbs.

1 9-inch deep-dish pie crust
4 pounds assorted apples (approximately 8 apples)
¼ cup flour
½ cup granulated sugar
1 tablespoon lemon juice
1½ teaspoons cinnamon
½ teaspoon ground ginger
¼ teaspoon allspice
¾ cup flour
½ cup brown sugar
Pinch of salt
5 tablespoons unsalted butter, melted

Steps:

  • Preheat oven to 375 degrees.
  • Peel, core, and slice the apples. Place in a large bowl with the flour, sugar, lemon juice, and spices. Stir to combine.
  • In a medium bowl, stir together flour, brown sugar, and salt for the crumb topping. Drizzle in the melted butter; combined with a fork until crumbs form. Set aside.
  • Place pie crust in a 9-inch deep-dish pie plate. Carefully pour in apples, arranging to mound up in the middle (they should mound up quite a bit). Carefully place crumbs on top of the apples, pressing lightly on the sides so they stay in place.
  • Place pie on a rimmed baking sheet. Bake for 1 hour and 10 minutes to 1 hour and 20 minutes, or until crust and crumb topping are golden and the juices are bubbly. Allow to cool completely before cutting and serving.

This traditional American recipe for deep dish apple crumble pie is the ultimate comfort dessert.

150g plain flour
1 tbsp icing sugar
1/4 tsp ground cinnamon
75g cold unsalted butter, cubed
1 egg yolk, beaten
2 tbsp milk
600g Bramley cooking apples, peeled, cored and sliced
3 red eating apples, peeled, cored and sliced
2 tbsp cornflour
50g soft light brown sugar
3 tbsp lemon juice
1/2 tsp ground cinnamon
50g walnut pieces
225g bag Chosen by you Crumble Topping

Steps:

  • Pre-heat the oven to 160C/140C Fan/Gas 3. Put the flour, a pinch of salt, icing sugar, 1/4 tsp cinnamon and butter in a processor, and blitz until fine crumbs form. Add the egg yolk and enough milk to make a dough that is soft but not sticky. Wrap in cling film and chill for 30 minutes.
  • Put the apples in a pan with the cornflour, sugar, lemon juice and 1/2 tsp cinnamon. Stir well to coat, then stir in 200ml water. Cook for 5 minutes, stirring occasionally, until soft but not mushy. Allow to cool.
  • Roll out the pastry on a floured surface and use to line the base of a deep 24cm pie dish. Spoon the apple mixture over the top.
  • Stir the walnut pieces into the crumble topping and scatter thickly over the top of the apple filling.
  • Bake for 45 minutes. Check halfway through, and cover with foil if the crumble is starting to brown too much. Serve warm with custard, crème fraîche or a scoop of vanilla ice cream.

When I make apple pie, this is the recipe that I usually use, it always turns out great ---prep time does not include preparing the pastry.

1 large pastry pie crust (to fit bottom of a 9 or 10-inch deep dish pie plate)
7 -8 large baking apples (Granny Smith is best!)
1/2 lemon, juice of
3 tablespoons sour cream
1 1/2 tablespoons flour
1/3 cup white sugar
1/2 teaspoon cinnamon
1/2 nutmeg
3 tablespoons melted butter
1/2 cup flour
1/2 cup sugar
1/4 cup cold butter

Steps:

  • Line the bottom of a deep dish pie plate with pastry, flute edges.
  • Peel and slice apples thinly and place in a bowl.
  • Squeeze the lemon juice over the sliced apples; toss to coat with the juice.
  • Then mix in the 3 tablespoons sour cream, mix well; set aside.
  • Prepare the crumb topping.
  • To make the crumb topping: in a small bowl mix the flour and sugar together; cut in the cold butter until crumbly.
  • In another small bowl, mix the 1-1/2 tablespoon flour, 1/3 cup sugar, cinnamon and nutmeg.
  • Pour the flour mixture over the apples; toss well to coat.
  • Spoon the apple mixture into prepared pie shell.
  • Drizzle with the 3 tablespoons melted butter.
  • Sprinkle with the crumb topping.
  • Place the pie on a foil-lined cookie sheet (too catch any spills).
  • Bake on the lowest oven rack position at 375 degrees for approximately 1 hour, or until the filling is bubbly and apples feel soft.
  • **Note** if you find that the topping is browning too much, cover lightly with foil.

1 tablespoon cornstarch
1/2 cup sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 cup all-purpose flour
1/2 cup brown sugar, firmly packed
1 pinch salt
6 tablespoons butter, cut into pieces and softened
1 cup almonds, sliced

Steps:

  • Preheat oven to 400 degrees. Place the apple slices in a large bowl; set aside. In a small bowl, mix together the cornstarch, sugar, cinnamon, and nutmeg. Sprinkle the sugar mixture over the apples, tossing gently to coat.
  • Spread the mixture evenly into a 1 1/2 quart baking dish. In a separate bowl, mix the flour, brown sugar, salt, and butter until the mixture is crumbly. Add the sliced almonds and mix well. Spoon the mixture over the apples, pressing down slightly as you go. Completely cover the apples with the topping mixture.
  • Bake 45 minutes or until apples are tender. Remove from oven and cool on a wire rack to desired temperature for serving. Or after cooling, refrigerate until ready to eat and serve cold.
