Steps:
- 1. Add butter, cream cheese, garlic powder, onion powder & paprika to a large pot over medium heat. Stir frequently until melted and blended together.
- 2. Add heavy cream and chicken broth, stir to combine. Bring to a boil over medium high heat, stirring occasionally. Once boiling allow to boil 5-8 minutes.
- 3. Add broccoli, stir and return to a boil. Once boiling reduce to simmer and cover. Cook for an additional 20 minutes.
- 4. Remove from heat, add cheddar, salt and pepper to taste. Stir and Serve.
- This makes 6 - 1 cup servings at 4.1 net carbs.

LOW-CARB CREAM OF BROCCOLI SOUP
While this recipe is high in fat it works great for people on the Atkins diet. Even after eating two bowls per day I was still in ketosis. Heavy cream has no carbs which is why this works so well for folks on low-carb diets. Also fat is more filling, leading you to eat less and feel more full. Leftovers can be stored in the refrigerator. It's even better the second day. However, I've found if it sits longer than that the broccoli can become too strong.

- Combine chicken broth, cream cheese, Cheddar cheese, butter, and onion flakes in a large pot over medium heat; cook and stir until smooth, 3 to 5 minutes. Add heavy cream and chicken; bring to a gentle simmer.
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add broccoli, cover, and steam until tender, 4 to 5 minutes. Transfer to a colander to drain excess moisture.
- Pour chicken broth mixture into a slow cooker; add broccoli.
- Cook on Low until flavors combine, about 4 hours.

KETO CREAM OF ASPARAGUS SOUP
This cream of asparagus soup recipe is the perfect soup for when you are craving something flavorful and creamy. It is rich without being overly heavy and has the perfect balance of flavors.

Steps:
- Melt the butter in a pot over medium heat on the stove.
- Add the onions to the pot, and saute until softened.
- Stir in the asparagus pieces and saute until the asparagus has become a bit tender.
- Mix in the garlic and salt and pepper to taste. Saute another 30 seconds.
- Pour the chicken broth into the pot and simmer for 10-15 minutes.
- Add the soup mixture to a blender or food processor and let it cool for a few minutes.
- Blend the soup until it is smooth.
- Return the soup mixture to the pot and stir in the heavy whipping cream as well as more salt and pepper to taste.
- Simmer another 5 minutes and serve topped with chopped chives.

- Cook and stir carrots, onion, and celery in hot oil in large saucepot on medium-high heat 3 minute Add chicken broth and water: stir. Bring to a boil.
- Stir in broccoli and rice. Reduce heat to medium-low; simmer 10-15 minutes or until vegetables are tender, stirring frequently.
- Add soup, in batches, to belnder or food processor container; cover. Blend until pureed. Return soup puree to pot. Add milk and cheese; cook until heated through, stirring occasional.

- Melt butter & oil in heavy cooking pot, over med-high heat. Sauté onions and celery until tender (~4 min.). Add garlic and sauté ~30 seconds (don't scorch - gets bitter). Add flour, stirring constantly for 1 minute, to cook out raw flour taste. Add water, broth, and Knoor soup base (or substitute bouillon). Stir until smooth. Bring to a gentle boil. Boil for 2 minutes to set the thickening.
- Add diced potatoes, chopped asparagus (or broccoli), salt, and pepper. Reduce heat to med-LOW and simmer for ~25 minutes.
- Puree about ¾ of the soup in a blender in small batches. (Hot soup expands when blended, so fill blender only about 2/3 way full!). I place batches in an intermediary large Pyrex bowl to hold until returning to pot.
- Return blended soup to pot. Stir in half-and-half, soy, and cheeses. Simmer (do NOT BOIL) 5-10 more minutes - stirring often, then taste for seasonings (probably needs a bit more pepper, doubtful it needs more salt - cheese, soup base, and broth are already somewhat salted).

- (1) Take a 4 quart pot and saute the onions in the butter for five minutes or until soft.
- (2) Take Broccoli place in dish, place dish in microwave cook on medium for five minutes or until Broccoli warm. When done drain excess liquid from dish.
- (3) Add all ingredients (Except broccoli to pot) bring to simmer and stir well.
- (4) Once ingredients in pot are at a simmer add Broccoli and simmer for eight minutes.
- (5) After 8 minutes have elapsed let soup cool enough to place in blender and blend for one minute until soup is smooth. Then Serve.

Steps:
- Take one asparagus spear, hold at both ends, and bend it until it breaks.
- Use the broken spear as a guide and cut the remaining spears to approximately the same length, discarding the large ends.
- Slice asparagus spears in 1 inch lengths.
- You should have about 2 cups of asparagus pieces.
- Cook the asparagus pieces in a small amount of boiling water for 10 minutes or until tender.
- Drain well.
- While asparagus cooks, place (unmelted) butter, flour, and garlic into a blender container.
- Top with cooked asparagus, then add all remaining ingredients and blend until smooth.
- Pour into saucepan and heat gently until soup thickens.
- I like to use thinly sliced green onion tops, low-fat sour cream and a couple of croutons for a garnish.

Steps:
- Chop the asparagus (if using frozen, steam or microwave it a little first), reserving the tips.
- Put the asparagus, onion, garlic and broth in a large saucepan.
- Bring to a boil, then reduce to medium heat and cook until the vegetables are tender, about 15 minutes.
- Put contents of saucepan into blender.
- Add the flour, soy milk, soy sauce and basil.
- Process until smooth.
- Return the soup to the saucepan and add the asparagus tips.
- Cook over medium heat until the soup thickens and is heated through.
- Season to taste with salt and fresh cracked pepper and serve.
