CINNAMON ROLL PEACH COBBLER
Take a package of refrigerator cinnamon rolls and re-purpose them for your dinner dessert! Use fresh or frozen peaches, and add a scoop of vanilla ice cream, if you wish.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Combine water, 1/4 cup butter, sugar, lemon juice, and salt in a large pot over medium heat. Stir and cook until butter is melted and sugar is dissolved, 5 to 10 minutes. Remove from heat and stir in cream cheese frosting from cinnamon roll package.
- Add peach slices to the pot and stir until coated.
- Place remaining butter in the bottom of a 2-quart baking dish and put in the preheated oven until butter melts, about 3 minutes. Remove from oven.
- Cut each of the refrigerated cinnamon rolls into 4 pieces. Place roll pieces into the baking dish and coat on all sides with melted butter. Remove pieces from the baking dish and set aside. Pour peach mixture into the baking dish and top with butter-coated roll pieces, pressing down slightly, until tops are even with the peaches.
- Bake in the preheated oven until cobbler is browned and bubbling, 45 minutes to 1 hour. Serve warm.

- 1. In a non-stick pan, on a very low heat, mix the brown sugar, condensed milk, cinnamon, and salt. Heat until it is creamy, stirring constantly. Stir in the very soft cream cheese. Heat until it is well blended. Take off burner and set aside to cool for 5 minutes. Add the canned peaches (with their syrup). Blend well.
- 2. Pour the peach/brown sugar mixture into a 9x13 pan. Sprinkle the dry cake mix evenly on top. Spoon the melted butter over the cake mix. Bake at 350 degrees until top is golden brown (about 45 minutes to an hour).

- Preheat oven to 350 degrees. Spray a 9x13 casserole pan or 3 quart baking dish with cooking spray and set aside. Cut each cinnamon roll into bite size pieces. Each cinnamon roll was about 6 pieces. Set aside icing from cinnamon rolls to use later.
- In a microwave safe dish, soften cream cheese, next add powdered sugar and stir together until well combined. Add in cinnamon and vanilla and peaches and mix well. Mix the cinnamon rolls into cream cheese peach mixture. Fold in pecans and spoon mixture into casserole pan.
- Cook for 38-42 minutes or until cinnamon rolls are cooked through. Top with cinnamon roll icing and serve with ice cream.

- For the dough: Make sure the milk is warmed up to around 110°F. I like to do this by placing my cold milk in a microwave safe vessel and microwaving it for 45-50 seconds (it should be warm as if you are giving it to a baby and not scalding). In the bowl of a stand mixer, add in the sugar and warmed milk. Then sprinkle the yeast on top. Let sit for 7-10 minutes for the yeast to activate- the mixture will be bubbly and fragrant.
- Next, add in the melted butter, eggs, flour, and salt. Attach dough hook attachment to mixer and knead on medium speed until the dough begins to come together, about 6-8 minutes. Look for the dough to be smooth. If your dough is sticking to the bowl, add in a tablespoon more of flour, only if needed. Alternatively, if you are not using a stand mixer- you can knead the dough by hand for 10 minutes on a lightly floured surface.
- Shape the dough into a ball and place it into a lightly greased large bowl. Cover the bowl tightly with plastic wrap and a clean towel/linen- let the dough rise in a warm environment until it doubles in size, about 1 1/2 hours or longer depending on the temperature of your environment.
- Once the dough has risen, punch the dough down and turn it out onto a lightly floured surface work area. Roll the dough out into a rectangle, about 15×10 inches, now let’s prepare the filling.
