SOFT MOLASSES COOKIES

Number Of Ingredients 12

3/4 cup shortening (3/4 cup correct amount)
1 cup packed brown sugar
1/2 cup white sugar (reserved for coating raw dough balls)
1 large egg
1/2 cup molasses
2 1/2 cups all-purpose flour
1/2 teaspoon salt (see note below)
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon allspice
1 teaspoon nutmeg

Steps:

  • Cream together shortening and brown sugar.
  • Stir in egg and molasses and mix well.
  • Fold in dry ingredients and stir.
  • Cover and chill till firm (1-2 hours).
  • Preheat oven to 350°.
  • Roll dough into small balls and roll in white sugar.
  • Place on lightly greased cookie sheet.
  • Bake at 350° for 9-10 minutes.
  • Leave on sheet one minute until set.
  • I changed the amount of salt in here. My original recipe calls for 1 tsp of salt but that may be too much for some. A few people have made it as is (the majority) with no complaints on salt, however a few commented it was too much. I think 1/2 tsp can be used with no alterations to the recipe. I will leave it up to you either way you still WIN !

1/4 pound (1 stick) unsalted butter
1/2 cup packed dark-brown sugar
1 large egg
1/4 cup plus 2 tablespoons molasses
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
Granulated sugar, for sprinkling

Steps:

  • Heat oven to 375 degrees. Line 2 baking sheets with parchment paper; set aside. In an electric mixer, use the paddle attachment to combine butter and brown sugar; mix on high speed until fluffy, about 2 minutes.
  • Add egg and molasses, and mix on medium speed until combined, about 20 seconds, scraping down the sides of the bowl once.
  • In a medium bowl, whisk together flour, baking soda, and salt; add to butter mixture. Mix on low speed to combine, 20 seconds.
  • Using 2 spoons, drop 2 teaspoons of batter on a baking sheet; repeat, spacing them 3 inches apart. Bake for 5 minutes. Sprinkle tops of cookies with granulated sugar, rotate sheets between oven shelves, and bake 8 minutes more. Rotate sheets again and bake until cookies are just brown around the edges, about 6 minutes more. Slide parchment with cookies onto a wire rack; let cool for 15 minutes. Store in an airtight container.

I love the Molasses Clove Cookies from the Dancing Deer Bakery. I adapted the Molasses Spice Cookie recipe from Cook's Illustrated to create this recipe. Bake the cookies 1 sheet at a time. Remove the cookies from the oven when they still look slightly raw and underbaked.

2 1/4 cups all-purpose flour (use lower-protein unbleached flour such as Gold Medal)
1 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1 teaspoon ground cloves
1/2 teaspoon ground ginger
1/4-1/2 teaspoon ground allspice
1/4 teaspoon salt
12 tablespoons unsalted butter, softened but still cool
1/3 cup packed light brown sugar (about 2 1/3 oz.)
1/3 cup granulated sugar
1 large egg yolk
1 teaspoon vanilla extract
1/2 cup molasses
1/2 cup sugar, for rolling the dough

Steps:

  • Adjust oven rack to the middle position and heat the oven to 375°. Line a large baking sheet with parchment paper or spray sheet with nonstick cooking spray.
  • Whisk the flour, baking soda, spices, and salt in a medium bowl until thoroughly combined; set aside.
  • Either by had or with an electric mixer, beat the butter with the brown sugar and the 1/3 cup granulated sugar at medium-high speed until light and fluffy, about 3 minutes. Reduce the speed to medium-low and add the yolk and vanilla; increase the speed to medium and beat until incorporated, about 20 seconds.
  • Reduce the speed to medium-low and add the molasses; beat until fully incorporated, about 20 seconds, scraping the bottom and sides of the bowl once with a rubber spatula.
  • Reduce the speed to the lowest setting; add the flour mixture and beat until just incorporated, about 30 seconds, scraping the bowl down once. Give the dough a final stir by hand to ensure that no pockets of flour remain at the bottom. The dough will be soft.
  • Place the 1/2 cup sugar for rolling in a shallow bowl. Fill a medium bowl halfway with cold tap water. Dip your hands into the water and shake off the excess (this will prevent the dough from sticking to your hands and ensure that the sugar sticks to the dough).
  • Using a tablespoon measure, scoop a heaping tablespoon of dough and roll it between your moistened palms into 1 1/4- to 1 1/2- inch ball; drop the ball into the sugar and repeat to form about 4 balls. Toss the balls in sugar to coat and set them on the prepared baking sheet, spacing them about 2 inches apart. Repeat with the remaining dough, moistening your hands as necessary with the water.
  • Bake until the cookies are browned, still puffy, and the edges have begun to set, but the centers are still soft (the cookies will look raw between the cracks and seem underdone), about 11 minutes, rotating the sheet from front to back half-way through the baking time. Do not overbake.
  • Cook the cookies on the baking sheet for 5 minutes, then use a wide metal spatula to transfer to the cookies to a wire rack; cool the cookies to room temperature.

Rolled Molasses Cookie. A soft rolled cookie that is lightly spiced. Good for gingerbread men and good for using as Christmas tree ornaments.

1 pint lard
1 cup brown sugar
1 cup sugar
2 eggs
1/2 teaspoon salt
1 teaspoon ginger
2 tablespoons baking soda
1 pint molasses
1 cup cold water (, or coffee)
6 -8 cups flour

Steps:

  • If you want to use vegetable shortening instead of lard, increase the amount by 1/2 cup I have never done this.
  • (I add cinnamon too).
  • Cream lard, sugars; add eggs, salt, spices, and baking soda.
  • Add molasses and beat well, add water slowly.
  • Stir in enough flour to make a dough stiff enough to roll.
  • (I chill dough for a few hours) Roll 1/4 inch thick (or thicker if you want cake-y cookies) and you may sprinkle with extra sugar.
  • Cut cookies, place on ungreased cookie sheets, bake in a 400 oven for 8 to 10 minutes.
  • They are done when you can press down with a finger and leave a dent.
  • Cool on wire racks.
  • I prefer to gauge doneness by looking at the underside of the cookie and seeing how brown it is.
  • If you want a cake-y cookie, don't let the cookies get dark browned, you want them golden, dark tan.
  • Baking time will vary with the size of your cookies too.
  • Small ones take a lot less time to bake.

This was one of my favorite cookies growing up and now it's one of my daughter's favs. A nice moist cookie that tastes fantastic with butter/confectioner's sugar frosting.

Steps:

  • Cream shortening and brown sugar.
  • Stir in eggs and molasses.
  • Stir together the flour and spices in a separate bowl.
  • Add the milk alternately with flour mixture until blended, but don't overmix.
  • Drop by tablespoonfuls onto greased baking sheet.
  • Bake at 350 degrees 10-12 minutes.
  • Cool and frost with buttercream frosting.
