Day After Thanksgiving Stuffed Mushrooms & Potatoes image

Using leftover stuffing for mushrooms is genius ... and delicious. These stuffed mushrooms and cheesy stuffed potatoes are a great way to reinvent your holiday leftovers. They'd be great for watching weekend football.

1 pkg whole mushrooms large size
whatever stuffing or mashed potato you have left over from Thanksgiving
1 medium sweet onion
1 c parsley, Italian
2 large eggs
1/2 lb crisp bacon
1 c cheddar cheese, shredded
1/2 c Panko bread crumbs
1 stick butter, melted
6 medium baked potatoes

Steps:

  • 1. Clean the mushroom with a damp paper towel. Remove the stems and reserve them.
  • 2. Using a spoon, split the baked potatoes in half. Remove the flesh of the potato leaving the shells intact.
  • 3. Add the potato to your mashed leftovers. Preheat oven to 350.
  • 4. Chop the onions and the mushroom stems finely. In separate pans, sauté the onion and mushroom stems in a little bit of butter until tender.
  • 5. Add the mushrooms to your stuffing.
  • 6. Add the onions to your potato.
  • 7. Crumble the bacon and add to the mashed potato with the cheddar cheese, mixing well.
  • 8. Using a spoon, fill the mushroom caps with the stuffing mixture.
  • 9. Fill the potato with the potato mixture.
  • 10. Sprinkle the tops with the Panko bread crumbs with the remainder of the butter and bake in a preheated oven in separate pans for 45 minutes.
  • 11. Check the mushrooms after about 30 minutes as they will likely finish before the potato. Garnish with the chopped parsley and enjoy! :)

24 ounces white button mushrooms
1/3 pound hot pork sausage
1 tablespoon minced fresh rosemary
2 teaspoons minced fresh sage
4 cloves garlic, finely minced
1/2 medium onion, finely diced
1/3 cup dry white wine
Kosher salt and freshly ground black pepper
8 ounces cream cheese
1 large egg yolk
3/4 cup grated sharp Cheddar cheese
2 tablespoons chopped chives

Steps:

  • Preheat the oven to 350 degrees F.
  • Wipe off or wash the mushrooms in cold water. Pop out the stems, reserving. Chop the mushroom stems finely and set aside.
  • Crumble the sausage into a hot dry skillet and cook until browned, 6 to 8 minutes. Set aside on a plate to cool.
  • Add the rosemary, sage, garlic and onions to the same skillet; cook for 2 minutes over medium-low heat. Pour in the wine to deglaze the skillet, allowing the liquid to evaporate for a couple of minutes. Add the chopped mushroom stems and cook, stirring, for 2 minutes. Add salt and pepper to taste. Set the mixture aside on a plate to cool.
  • In a bowl, combine the cream cheese and egg yolk. Add the Cheddar cheese and mix. Add the sausage and mushroom stems and stir together.
  • Arrange the mushroom caps on a baking sheet. Spoon some of the sausage mixture into the cavity of each mushroom, filling the cap and creating a sizable mound over the top. Bake until golden brown, 20 to 25 minutes. Sprinkle with the chives.

4 4- to 5-inch-diameter portobello mushrooms
6 teaspoons olive oil
1/2 cup chopped onion
2 tablespoons chopped fresh parsley
1 teaspoon minced fresh rosemary
2 6-ounce bags fresh baby spinach

Steps:

  • Cook all potatoes, garlic, and bay leaf in large saucepan of boiling salted water until very tender, about 12 minutes. Drain; discard bay leaf. Return potatoes to pot. Mash until smooth; cool slightly. Mix in 3 tablespoons cheese. Season with salt and pepper. Whisk in eggs.
  • Remove mushroom stems and chop finely. Heat 2 teaspoons oil in large nonstick skillet over medium-high heat. Add mushroom stems and onion; sauté 5 minutes. Stir in parsley and rosemary. Season with salt and pepper.
  • Preheat oven to 400°F. Brush rounded sides of mushrooms with 3 teaspoons oil. Place on baking sheet, gill sides up. Bake 10 minutes. Reduce oven temperature to 350°F. Divide onion mixture among mushroom caps. Mound potato mixture in caps. Sprinkle with 1 tablespoon cheese. Bake until heated through, about 25 minutes.
  • Heat 1 teaspoon oil in large pot over medium heat. Add spinach; sauté 2 minutes. Season with salt and pepper. Divide among 4 plates. Top each serving with 1 stuffed mushroom.

1 tsp. chopped fresh thyme, divided

Steps:

  • Heat oven to 400°F.
  • Cook bacon in medium skillet until crisp. Remove bacon from skillet; drain on paper towels. Discard all but 1 Tbsp. drippings from skillet.
  • Add shallots to reserved drippings; cook 3 to 4 min. or until crisp-tender, stirring frequently. Remove from heat.
  • Chop bacon. Combine half the bacon with shallots, potatoes, Parmesan and half the thyme; mix well. Spoon into mushroom caps. Place on foil-covered rimmed baking sheet.

12 fresh mushrooms
½ pound ground beef
1 tablespoon minced onion
1 clove garlic, minced
1 tablespoon butter
¼ cup bread crumbs
salt and pepper to taste
¼ cup heavy cream
¼ cup butter, melted
1 teaspoon chili powder

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Remove and chop mushroom stems.
  • In a saucepan over medium heat, combine ground beef, onion, and garlic. Cook until beef is no longer pink; drain. Mix in chopped mushroom stems, 1 tablespoon butter, bread crumbs, salt, and pepper. Cook, stirring frequently, for 5 minutes. Remove from heat, and stir in cream.
  • Dip mushroom caps in 1/4 cup melted butter, and stuff generously with meat mixture. Arrange stuffed mushrooms in a baking dish. Sprinkle with chili powder.
  • Bake for 20 to 25 minutes in the preheated oven.

6 large russet potatoes
2/3 cup heavy whipping cream
1 cup shredded cheddar cheese, divided
1/4 cup chopped fresh mushrooms
1/2 to 1 teaspoon garlic salt
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
4 bacon strips, cooked and crumbled, divided

Steps:

  • Bake potatoes at 375° for 1 hour or until tender. When cool enough to handle, cut a thin slice off the top of each potato and discard. Scoop out pulp, leaving a 1/4-in. shell; set shells aside. Place pulp in a bowl; add cream and mash. Stir in 3/4 cup cheese, mushrooms, garlic salt, basil and oregano. Set aside 2 tablespoons bacon; stir the remaining bacon into potato mixture., Spoon into potato shells. Top with remaining cheese and bacon. Microwave, uncovered, on high for 3-4-1/2 minutes or bake, uncovered, at 375° for 25-30 minutes or until potatoes are heated through.

10 -12 mixed mushrooms, I used Portabello
1 tablespoon butter
1 garlic clove, finely chopped
2 green chilies, finely diced
1 shallot, finely diced (or 1/2 small onion)
150 g feta, chop into very small pieces
1/4 cup parmesan cheese, grated
1/4 teaspoon black pepper, cracked
1/2 teaspoon cayenne pepper

Steps:

  • Heat oven to 180 degrees.
  • Wipe mushrooms with a damp cloth and carefully scoop out the stems.
  • Finely chop the mushroom stems.
  • Heat butter in a frying pan over a medium heat and fry the garlic, shallot, mushroom stems and chillies until all juice has evaporated. About 7 minutes.
  • Transfer to a medium sized bowl and let cool for a few minutes.
  • Mix in feta, then add Parmesan, pepper and cayenne pepper, stirring well to combine.
  • Fill each mushroom cap with the stuffing and place on a baking tray lined with baking paper.
  • Bake 20 minutes.
