This cake recipe was given to me in 1967 when I was a brand new bride by a neighbor, Ethelda Wagner. What a dear woman she was. And her cake is fantastic!

1 1/2 cups boiling water
1 cup oatmeal
1 cup white sugar
1 cup brown sugar
1/2 cup butter
1 1/3 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
2 eggs
1 teaspoon vanilla
1 cup raisins, chopped dates,and nuts can be added
3 tablespoons butter
2/3 cup brown sugar
1/4 cup cream
1/2 teaspoon vanilla

Steps:

  • Pour boiling water over oatmeal.
  • Set aside to cool.
  • Cream sugars and butter.
  • Add: oatmeal, flour,soda,cinnamon, eggs, vanilla.
  • Bake at 350 for 30-40 minutes in a greased and floured 9x13 pan.
  • Make icing.
  • Mix all icing ingredients,and spread on hot cake.
  • Put under broiler for a few minutes til bubbly.

1/2 cup water
1/4 cup sugar
1-1/2 cups quick-cooking oats
1 cup all-purpose flour
1 cup packed brown sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
1/3 cup butter, melted
1 large egg white, room temperature

Steps:

  • Preheat oven to 350°. Place dates, water and sugar in a small saucepan; bring to a boil, stirring constantly. Reduce heat; simmer, uncovered, until thickened, about 5 minutes, stirring constantly., In a large bowl, mix oats, flour, brown sugar, baking soda and salt; stir in melted butter and egg white. Press half of the mixture into an 8-in. square baking pan coated with cooking spray. Spread carefully with date mixture; top with remaining oat mixture. , Bake until lightly browned, 20-25 minutes. Cool in pan on a wire rack. Cut into bars.

1 3/4 cups boiling water

Steps:

  • Preheat oven to 350°F Put oatmeal and dates in a bowl.
  • Pour on the boiling water.
  • Stir to combine.
  • Let stand 20 minutes.
  • Gradually add brown and white sugars to the shortening, creaming well.
  • Add eggs, one at a time, beating well after each one.
  • Stir oatmeal mixture into creamed mixture.
  • Sift together flour, baking powder, salt, baking soda, and cinnamon.
  • Add to wet mixture, mixing well.
  • Pour into a greased and floured 13" X 9" baking pan.
  • Bake in a preheated 350F oven for 45 to 50 minutes, or until done.
  • Cool on a rack.
  • Frost.
  • For frosting, combine butter and lemon peel.
  • Sift icing sugar and mix into the butter mixture.
  • Gradually stir in the lemon juice.
  • Stir until smooth.
  • Frost cooled cake.

1 cup rolled oats
1 1/2 cups boiling water
1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup margarine
1 cup brown sugar
1 teaspoon vanilla
1 cup chopped dates
1/2 cup walnuts
2 tablespoons margarine
1 1/4 cups icing sugar (sifted)
2 teaspoons cocoa powder
1 tablespoon strong coffee, cooled
1 teaspoon vanilla

Steps:

  • Preheat the oven to 350F & prepare your baking dish (I like using a bundt pan for the shape, but a 9" square baking pan is what's recommended).
  • In a small bowl, combine oats and boiling water; let stand until cool (note: this takes a while. You might want to combine the oats and water and brew the coffee, take a break and come back to do the rest to allow time for the liquids to cool).
  • In a separate bowl, combine flour, baking soda and salt. Set aside.
  • In a large bowl, cream together margarine and brown sugar until fluffy. Beat in vanilla, oat mixture and flour mixture. Stir in dates & walnuts.
  • Pour mixture into prepared pan and bake in preheated oven for 30-35 minutes, or until cake tester inserted in middle comes out clean. Set aside to cool.
  • Prepare the frosting: in a bowl, blend together all frosting ingredients until fluffy. If icing is too thick, add a little more coffee to thin it. If too thin, add icing sugar. Spread icing over cooled cake.

Steps:

  • Preheat the oven to 350 degrees F. Pour boiling water over instant oatmeal and let stand for 20 minutes. Cream together the margarine, brown sugar, and sugar. Next add the eggs, vanilla, and oatmeal and mix well. Blend in flour, soda, cinnamon, and salt. Mix well. Pour into 9 by 11-inch pan. Bake for 35 minutes.
  • Combine all ingredients. After the cake is cooked, spread icing over the cake. Place under broiler for 3 minutes or until frosting is slightly browned.

1/2 cup steel-cut oats
1 1/4 cups boiling water
8 tablespoons (1 stick) unsalted butter, softened at room temperature
1 1/2 cups granulated sugar
2 eggs
1 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
1/2 cup oat bran
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup apple sauce
1 pound cream cheese
1 cup powdered sugar
1/4 cup honey
1/2 to 3/4 cup chopped walnuts, toasted

Steps:

  • In a saucepan, place the oats and the water and simmer 15 minutes to soften slightly. Allow to cool to room temperature.
  • Preheat the oven to 350 degrees F. Lightly butter a 8-inch square cake pan.
  • In a mixer fitted with a whip attachment, cream the butter until smooth. Add granulated sugar and mix until smooth and fluffy. Add the eggs and vanilla and mix just until combined. Add the cooked oats and mix just until combined.
  • In another bowl, mix the flour, oat bran, baking soda, cinnamon, and salt. Working in 3 batches, add the dry ingredients to the butter-oat mixture, alternating with the applesauce mixing just until combined after each addition. Pour into the prepared pan. Bake until a tester inserted into the center of the cake comes out dry and almost clean (a few crumbs are fine), 40 to 50 minutes. Let cool completely. Turn cake out onto a square serving platter. Place strips of paper under the cake around all the edges.
  • To make the frosting, in a mixing bowl with a whip attachment cream the cream cheese on medium to high speed until light and fluffy. Turn the mixer to low and mix in the powdered sugar and honey. Frost the cake on the sides with a thin layer of frosting then use the remaining to cover the top and swirl it decoratively. Using your hands, press the toasted chopped nuts onto the side of the cake to coat it. Remove the paper strips before serving. Cut into 2-inch square pieces.
  • Notes about the recipe: This is a delicious hearty and healthful cake. The texture added by the cooked steel cut oats makes you thing there are nuts inside. I made it to help me use up ends of jars of oat bran in the freezer and steel cut outs in the cereal drawer after the hot cereal breakfast season was over for the year.

Steps:

  • Preheat oven to 375 degrees F.
  • Combine cake mix, melted butter, flour, eggs, pumpkin pie spice, and vanilla in large bowl. Beat with a hand mixer for 1 minute, or until well blended. Stir in oats, walnuts and dates. 8 tablespoons (1 stick/​115 g) unsalted butter, at room temperature
¼ cup (50 g) granulated sugar
½ cup packed (105 g) dark brown sugar
½ teaspoon kosher salt
1 teaspoon baking soda
½ teaspoon ground cinnamon
1 large egg
¾ cup (100 g) Sonora wheat flour, or any other heirloom wheat flour
¾ cup (80 g) old-​fashioned rolled oats
1 cup (145 g) chopped pitted Medjool dates (about 16 )

Steps:

  • In a stand mixer fitted with a paddle attachment, cream the butter and both sugars at medium speed until smooth, about 3 minutes. Add the salt, baking soda, and cinnamon and mix until well combined, 1 minute. Add the egg and mix for another minute. Add the flour and oats and mix on low speed until combined. Finally, add the dates in two additions to make sure they're distributed evenly throughout. The dough will be very soft at this point.
  • Transfer the dough to a sheet of parchment paper or plastic wrap. Flatten into a disk with your hands, then wrap tightly and refrigerate for at least 30 minutes (and up to 2 days)-​chilled dough will be much easier to handle.
  • Place two racks in the middle positions and preheat the oven to 350ºF. Line two baking sheets with parchment paper.
  • Divide the dough into 16 equal portions, about 1½ ounces (45 g) each. Working quickly so that the dough doesn't warm up, shape each portion into a ball with your hands. You can freeze the cookie dough balls for up to 2 weeks in a freezer bag to be baked from frozen at a later time. Place cookies on the prepared baking sheets, at least 3 inches apart to prevent the cookies from touching as they spread when they bake. Bake for 10 minutes, rotate the baking sheets and switch their positions in the oven, and bake for another 6 to 8 minutes, until the edges are brown and the middle is golden. Rotating and switching the sheets halfway through the baking process will ensure that the cookies bake evenly. Let the cookies cool completely on the baking sheets. The cookies keep well for a couple of days stored in an airtight container.

225g butter , plus a little extra for greasing
140g cooking apple , peeled, cored and chopped
140g stoned date , chopped
280g light soft brown sugar
175g plain flour
1 tsp bicarbonate of soda
100g porridge oat

Steps:

  • Heat oven to 190C/170C fan/gas 5. Grease an 18cm square tin and line with baking parchment.
  • Tip the apples into a pan with 2 tbsp water. Bring to the boil and simmer on a low heat for 5 mins until tender and slightly pulpy. Add the dates and 50g of the sugar, and cook for a further 5 mins. Take off the heat and break the apples down with the back of a spoon until smooth and well mixed with the dates. Set aside.
  • Gently melt the butter in a saucepan. Mix the flour, bicarb, oats and remaining sugar in a bowl. Pour in the melted butter and stir well until oats are coated.
  • Press half the mixture firmly into the tin, spread the apple mix on top and smooth over. Cover with the remaining oat mixture and press down. Bake for 30-35 mins until golden and firm. Cool in the tin before cutting into squares.

1 1/2 cups water
1/4 cup granulated sugar
1 cup packed brown sugar
1 cup butter or margarine, softened
1 3/4 cups all-purpose* or whole wheat flour
1 1/2 cups quick-cooking oats
1/2 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • In 2-quart saucepan, cook filling ingredients over low heat about 10 minutes, stirring constantly, until thickened. Cool 5 minutes.
  • Heat oven to 400°F. Grease bottom and sides of 13x9-inch pan with shortening.
  • In large bowl, stir brown sugar and butter until well mixed. Stir in flour, oats, baking soda and salt until crumbly. Press half of the crumb mixture evenly in bottom of pan. Spread with filling. Top with remaining crumb mixture; press lightly.
  • Bake 25 to 30 minutes or until light brown. Cool 5 minutes in pan on cooling rack. Cut into 6 rows by 6 rows while warm.
