Big, bakery style Apple Butter Streusel Muffins have a layer of apple butter and crumb streusel, with an apple cider glaze on top.

2 cups flour
1/2 cup granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 large egg
3/4 cup milk
1/2 cup oil
1/3 cup apple butter
1/2 cup flour
1 teaspoon cinnamon
1/2 cup brown sugar
1/2 cup walnuts
4 tablespoons butter ((softened))
1/2 cup powdered sugar
2-4 tablespoons apple cider ((or heavy cream))

Steps:

  • In a small bowl, combine the flour, sugar, baking powder, baking soda, cinnamon and salt. In another bowl, mix the egg, milk, and oil. Add the dry ingredients into the wet ingredients and mix just until combined. Do not overmix!
  • For the streusel, combine the flour, cinnamon, sugar and walnuts together. Cut in the softened butter until you have a crumbly mix and the butter is all mixed in.
  • Spray jumbo muffin tins with cooking spray and spoon a heaping tablespoon of batter into the bottom of each cup. Put a tablespoon of apple butter over top the batter. Then sprinkle some streusel topping over the apple butter. Distribute the remaining muffin batter over each of the muffin cups equally. Sprinkle the remaining streusel evenly over top the muffins.
  • Bake at 425º Fahrenheit for 5 minutes, then reduce the oven temperature to 375º Fahrenheit and cook for an additional 13-15 minutes. The muffins are done when a toothpick inserted into the center comes out clean.
  • Mix the powdered sugar and apple cider together until smooth, then drizzle with a spoon over top the muffins.
  • Store in an airtight container at room temperature.

In another bowl, whisk together eggs, melted butter and vanilla; add to flour mixture, stirring just until moistened (batter will be stiff). Fold in apples. , Fill 12 greased or paper-lined muffin cups three-fourths full. For topping, mix brown sugar, flour and cinnamon; cut in butter until crumbly. Sprinkle over batter. , Bake until a toothpick inserted in center comes out clean, 15-20 minutes. Cool 5 minutes before removing from pan to a wire rack to cool. Mix glaze ingredients; drizzle over tops.

1 cup all-purpose flour
1/2 cup sugar
3/4 teaspoon salt

  • Preheat oven to 400°F.

  • Add apples.

  • Sprinkle over tops of muffins.
  • Bake 15-20 minutes or till tops test done.
  • While they bake, place all caramel drizzle ingredients except powdered sugar in sauce pan and bring to a boil. Cook and stir 2 minutes.
  • Remove from heat and blend in powdered sugar.
  • Remove muffins from oven and then from pan.
  • Place on wire rack and drizzle all with caramel drizzle. Cool and store in airtight container.

Use your favorite apples, this recipe used Northern Spy. Honey Crisp are one of my favorite apples, along with Gala and Fuji. A tart apple would do well here too. 2 cups sugar
2 1/2 teaspoons baking powder

  • With your hands blend sugar, flour, cinnamon(and nutmeg if using) and softened butter until mixture reaches a crumb-like texture.
  • Grease muffin tin well(may use cooking spray or butter or margarine) and fill each section ¾ full with muffin batter. Top generously with streusel topping.
  • Bake at 400 degrees for about 20 minutes.
  • To test: gently press the top of a few muffins with your index finger, if the top gives and then springs back the muffins are done. Enjoy!
