These wonderful, chewy date cookies are chock-full of dates and chopped pecans. Bake the cookies for your family or take them to the bake sale.

For the Date Filling:
8 ounces dates (pitted, chopped)
3/4 cup water (warm)
1/4 cup​ ​ sugar (granulated)
For the Cookie Batter:
1/2 cup butter (or margarine, softened)
1 cup brown sugar (packed)
1 large egg (beaten)
1/4 cup water (warm)
1 teaspoon vanilla extract
2 cups flour (all-purpose)
3/4 teaspoon baking soda
1/4 teaspoon salt

Steps:

  • Gather the ingredients.
  • In a medium bowl, combine the flour, baking soda, and salt; whisk or stir to blend and set aside.
  • In a large mixing bowl with an electric mixer , beat the butter and sugar together until light and fluffy, about 2 to 3 minutes. Add the eggs, one at a time, beating after each addition, then add the vanilla and beat until smooth and blended.
  • Add the dry ingredients and mix on the lowest speed just until blended, then fold in the chopped dates and pecans. Refrigerate the dough for 1 hour.
  • Position a rack in the center of the oven and preheat to 350 F. Line baking sheets with parchment paper.
  • Drop the cookie dough by rounded tablespoons onto the baking sheets, leaving 2 inches between the cookie mounds.
  • Bake the cookies until set and the edges are lightly browned, 10 to 14 minutes.
  • Let the cookies cool in the pan for 5 minutes, then transfer them to a rack to cool completely.

½ teaspoon baking soda
¼ teaspoon salt
¼ cup shortening
¾ cup packed brown sugar
1 egg
½ cup sour cream

Steps:

  • Pre-heat oven to 400 degrees F (205 degrees C). Lightly grease two baking sheets.
  • Combine flour, baking powder, baking soda and salt and set aside.
  • In a large bowl, cream together shortening and brown sugar. Beat in the egg and the sour cream. Gradually blend in flour mixture. Fold in dates.
  • Drop dough by teaspoonfuls 1-1/2 inches apart onto baking sheets. Press a walnut half into the center of each cookie.
  • Bake for 8-10 minutes until lightly colored. Cool cookies on wire racks.

8 ounces pitted Deglet Noor dates
hot water as needed
1 cup chopped walnuts
2 tablespoons vegetable oil
1 egg
1 ½ teaspoons vanilla extract
¼ cup rolled oats
¼ cup dark cocoa powder (such as Hershey's® Special Dark)
¾ teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon salt
½ cup dark chocolate chips

Steps:

  • Place dates in a small bowl and add enough hot water to cover. Allow to sit for 10 minutes to soften.
  • Preheat the oven to 350 degrees F (175 degrees C). Line 2 large baking sheets with parchment paper.
  • Remove dates from water, reserving soaking liquid. Combine dates, walnuts, and vegetable oil in the bowl of a large food processor. Pulse several times until mixture forms a paste and no large chunks of dates remain; this may take several minutes. If mixture is too dry, add soaking liquid, 1 tablespoon at a time, until a paste-like consistency is reached. Add egg and vanilla extract; pulse to combine. Add oats, cocoa powder, baking soda, cinnamon, and salt. Pulse until combined, scraping down the sides of the bowl as necessary. Fold in chocolate chips; dough will be very sticky.
  • Use a medium cookie scoop to place rounded balls of dough 1-inch apart on the prepared baking sheets. Press tops of dough down with damp fingers to flatten slightly.
  • Bake in the preheated oven until cookies are just set, 13 to 15 minutes. Allow to cool on the baking sheets for 5 minutes before removing to wire rack to cool completely. Keep stored in refrigerator until ready to serve.

1 ½ cups chopped pitted dates
¼ cup packed light brown sugar
1 teaspoon orange zest
¼ teaspoon ground cloves
½ teaspoon ground cinnamon
¼ teaspoon ground allspice
1 ½ tablespoons lemon juice
⅞ cup water
2 cups quick-cooking oats
½ cup packed light brown sugar
1 cup all-purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon salt
¾ cup butter
2 tablespoons water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch square pan. In a small saucepan, combine the dates, 1/4 cup brown sugar, orange zest, cloves, 1/2 teaspoon cinnamon, allspice, lemon juice and water. Cook over medium-high heat, stirring constantly, until dates are soft and the mixture becomes a thick paste, about 10 minutes. Remove from heat and set aside to cool.
  • To make the crust and topping, stir together the oats, 1/2 cup brown sugar, flour, baking powder, baking soda, 1/2 teaspoon cinnamon and salt in a medium bowl. Cut in butter using a pastry cutter or your fingers. Mixture should be coarse and crumbly. Stir in 2 tablespoons water until evenly distributed. Press about 2/3 of the mixture into the bottom of the prepared pan. Spread the date mixture evenly over the crust all the way to the edges. Sprinkle the remaining crust mixture over the date layer. Press down lightly.
  • Bake for 20 to 25 minutes in the preheated oven, until the top is lightly toasted. Cool completely before cutting into bars.

  • Place a teaspoon of the date filling on top of the dropped dough and then a tiny bit of dough on top of the filling.
  • Bake till lightly browned and done in a 375 degree oven for 8-10 minutes.

In making cookies for Christmas I was trying to keep in mind what I had in my cabinets (instead of running out for more supplies). I found a recipe in the "More With Less" cookbook that looked interesting. I adapted it pretty heavily based on what I had. These are soft cookies that spread a ton while baking. They are a little crumbly but had a lovely soft, almost old fashioned molasses type taste. Sucanat is unrefined sugar. It has a lovely taste and more redeeming social value then refined sugar. If you don't have it, though, brown sugar would be a fine replacement.

1/2 cup butter or 1/2 cup margarine
1 cup sucanat or 1 cup brown sugar
3 eggs
1 1/2 cups whole wheat pastry flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 cup skim milk
2 cups rolled oats (quick cooking or regular - not instant)
1 1/2 cups chopped dates

Steps:

  • Preheat the oven to 350 degrees.
  • Cream together the butter, sucanat, and eggs.
  • In a different bowl combine the flour through all spice.
  • Add the flour to the butter mixture alternating with the milk until it is all combined.
  • Stir in the oatmeal and dates.
  • Drop by teaspoons onto a cookie sheet sprayed with cooking spray.
  • Bake for 10-12 minutes or until slightly browned.
  • Immediately remove from pans onto a rack to cool.

¼ cup white sugar
1 pinch salt
1 ¼ cups water
1 teaspoon lemon zest
4 teaspoons lemon juice
⅔ cup finely chopped walnuts
3 ½ cups all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon baking soda
¾ teaspoon salt
¾ cup butter
½ cup white sugar
1 cup packed brown sugar
2 eggs
1 ½ teaspoons vanilla extract

Steps:

  • Chop pitted dates in food chopper. Place dates into small saucepan and add 1/4 cup sugar, dash of salt, and 1 1/4 cups of water. Cook, stirring constantly until mixture is of a soft consistency. Remove from heat.
  • Add grated lemon rind, lemon juice, and chopped nuts. Mix well and chill.
  • Cream together 3/4 cup butter and gradually add 1/2 cup white sugar and 1cup lightly packed brown sugar. Beat well. Beat 2 eggs until thick and add to creamed mixture part at a time, beating well after each addition. Stir in 1 1/2 teaspoons vanilla.
  • Measure into a sifter 3 1/2 cups flour, 1 1/2 teaspoons baking powder, 1/4 teaspoon baking soda, and 3/4 teaspoon of salt. Sift together twice. Sift dry ingredients into creamed mixture about 1/4 at a time. Combine thoroughly after each addition. Chill until firm.
  • Divide dough into 3 parts. Roll out 1 part at a time into a rectangle. Spread with date filling. Roll up jelly roll fashion in waxed paper. Chill several hours.
  • Preheat oven to 350 degrees F (180 degrees C).
  • With sharp knife, slice 1/4 inch thick slices off of rolls and place on greased cookie sheets. Bake 10 - 13 minutes. Let cool.

I looked through the date recipes; I couldn't believe there were no date turnovers. This is a classic, classic cookie - I adapted this recipe from The Canadian Farm Cookbook, of 1911. A big, not-too-rich cookie - I could eat'em for breakfast.

1 cup water
3 cups rolled oats
2 cups whole wheat flour
2 cups dark brown sugar

2/3 cup buttermilk

Steps:

  • Cook the dates and water together, stirring frequently, until soft and amalgamated.
  • Let cool.
  • Preheat the oven to 325°F.
  • Butter a large cookie sheet.
  • Stir together the dry ingredients.
  • Beat together the cooled melted butter and eggs, then beat in the buttermilk.
  • Mix the beaten butter and egg mixture into the dry ingredients, adding a little more buttermilk if needed to make a soft dough.
  • Drop half the dough by spoonfuls onto the cookie sheet.
  • Space them well apart.
  • Divide the filling evenly over the cookie bases.
  • Spoon the remainder of the dough over the cookies.
  • Bake for 20 minutes.
