1 ½ cups water
1 ½ cups raisins
¾ cup dates, pitted and chopped
1 teaspoon baking soda
½ cup butter
¾ cup white sugar
2 eggs
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
¼ teaspoon salt
4 tablespoons butter
½ cup brown sugar
2 tablespoons heavy cream
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch square pan. In a saucepan, combine water and raisins. Bring to a boil and cook for 5 minutes. Remove from heat and stir in chopped dates and baking soda. Set aside.
  • In a large bowl, cream together 1/2 cup butter and 3/4 cup white sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour, salt and date mixture. Pour batter into prepared pan.
  • Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Remove cake from oven, and set oven to Broil.
  • Make Topping: In a saucepan, melt 4 tablespoons of butter. Stir in brown sugar, cream and chopped nuts. Spread mixture over warm cake and place under broiler until lightly browned, about 3 minutes. Watch carefully - it burns easily under the broiler. Cool before serving.

This recipe came off the package of dates from Francies Dates, Phoenix, AZ. Flavor is enhanced if cake is aged for a day or so. A nice moist date which can be served with whipped cream sprinkled with chopped nut, or dusted with powdered sugar or with ice cream or cake au lait. Enjoy!

2 cups boiling water

Steps:

  • Preheat oven to 350 degF.
  • Prepare a 13 x 9 x 2 inch cake pan.
  • Mix tog chopped dates, soda and boiling water and let stand.
  • Mix tog butter, sugar and vanilla, then add the date mixture.
  • Add the flour and chopped nuts.
  • Pour into prepared cake pan and bake at 350 degF for approximately 35 minutes. Test cake with toothpick to see if done.Cool in pan.

Nonstick cooking spray, for the muffin tin
4 cups pitted medjool dates
1 teaspoon baking soda
3/4 pound (3 sticks) unsalted butter, at room temperature
2 cups brown sugar
4 large eggs
2 tablespoons vanilla extract
3 1/2 cups all-purpose flour
2 tablespoons allspice
1 tablespoon baking powder
1 teaspoon kosher salt
4 cups heavy cream
4 cups brown sugar
Whipped Cream:
1 cup cold heavy cream
1 teaspoon vanilla extract
1/8 teaspoon ground allspice
1/8 teaspoon ground cardamom
1/8 teaspoon ground cinnamon
1/8 teaspoon ground ginger

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Spray a 24-cup mini muffin tin with cooking spray.
  • Add the dates, baking soda and 2 cups water to a pot and bring to a simmer. Cook until greatly reduced, about 15 minutes. Turn off the heat. Mash the dates into a paste. Set aside.
  • Add the butter and brown sugar to a stand mixer fitted with the whisk attachment and whip until soft. Add the eggs and vanilla and mix until combined.
  • In a separate bowl, mix the flour, allspice, baking powder and salt. Add to the stand mixer large spoonfuls of the flour mixture and date paste, alternating between each. Beat until combined. Evenly scoop the cake batter into the mini muffin tins, to the top of each cup.
  • Bake, rotating the pan halfway through, for 20 to 25 minutes. Poke with a wooden skewer to make sure it's done.
  • For the toffee sauce: Mix the heavy cream and brown sugar together in a pot. Bring to a simmer, then remove from the heat and cool for 5 minutes.
  • For the whipped cream: Add the heavy cream, vanilla, allspice, cardamom, cinnamon and ginger to the cleaned bowl of the stand mixer fitted with the whisk attachment. Whip until stiff peaks are formed.
  • Invert the cakes onto a serving platter or plate. Poke the now tops of the cakes with a wooden skewer. Pour about 1/2 cup toffee sauce over the top of each cake. Dollop the whipped cream over the top of each cake.

8 ounces butter, softened
3/4 cup granulated sugar
4 eggs

1 cup brown sugar (8 ounces)
1/2 cup heavy cream
1 teaspoon vanilla extract
Vanilla ice cream or whipped cream, for serving

Steps:

  • Preheat the oven to 350 degrees F. Butter and flour two 9-inch-round cake pans or 20 muffin tins.
  • Place the dates in large saucepan with 3 1/2 cups cold water. Bring to boil, stirring a little to break up the dates. Then leave to simmer for 1 minute before removing from the heat. Stir in the baking soda (which will cause the mixture to bubble up).
  • Cream the butter and sugar together in a food mixer until pale and creamy. Add the eggs, one at a time, occasionally scraping down mixing bowl. Add the vanilla extract and then the flour and salt and mix briefly to give a lumpy dough.
  • Next, add the warm date mixture in two batches. Scrape down the sides of bowl in between mixing. The dough will now be quite watery but don't worry! Finally add the baking powder (this will bubble up also).
  • Pour the batter evenly into the two pans or muffin tins. Bake for about 30 to 40 minutes for cake pans and about 20 minutes for muffin tins. Test if they are cooked with a small knife or toothpick, it should come out clean when cakes are done.
  • Meanwhile, to make the sauce, combine the butter, brown sugar, heavy cream and vanilla extract in a medium saucepan. Bring to boil and then reduce to simmer gently for a minute or two until thickened and well blended.
  • When the cakes are done, poke little holes all over with toothpick, this will enable the sauce to be absorbed more easily. Pour the caramel sauce over cakes while both are still warm and leave to soak for about 10 minutes. Turn the cakes out upside-down onto serving plates (the bottom is the most sticky bit!).
  • Serve with vanilla ice cream or whipped cream.

Steps:

  • Preheat the oven to 170C/340F/gas 3. Grease and line 20cm/8inch cake tin
  • Place the raisins, dates, sultanas,and currents into a pan together with the butter, water and condensed milk. Slowly bring to the boil, stirring frequently to prevent the mixture from burning. Reduce the heat and simmer for 3-4 minutes
  • Transfer the mixture to a heatproof bowl and set aside to cool
  • Mix together the wholemeal flour, plain flour, salt and bicarbonate of soda in a separate bowl
  • When the fruit mixture has cooled, fold it into the flour along with the marmalade until smooth and well combined. Spoon the mixture into the prepared tin
  • Cover the tin with a double layer of baking parchmonet, then bake the cake in the oven for 13/4 hour, or until the cake is springy to touch and a skewer inserted into the middle comes out clean
  • To serve, allow the cake to coll for 10 minutes in the tin before turning out onto a cooling rack

500 ml flour
400 ml sugar
1 egg
2 ml baking powder
375 ml butter
1 1/2 cups pitted dates, chopped
250 ml boiling water
5 ml baking soda
1 pinch salt
45 ml butter
45 ml milk
45 ml sugar

Steps:

  • Put dates in boiling water with baking soda and leave to cool.
  • Cream sugar, butter and vanilla extract.
  • Add egg and dates and mix in well.
  • Add all dry ingredients.
  • Place in prepared baking pan and ake at 180C for 45 minutes.
  • 5 minutes before cake comes out of oven, boil topping ingredients together for 3 minutes.
  • Stab cake with knife and pour topping over as it comes out of the oven.
  • Serve warm or cool.

6 Tbsp. unsalted butter, room temperature, plus more for pan
6 oz. pitted dried red dates, coarsely chopped (about 2 cups)
½ tsp. baking soda
1¼ cups (156 g) all-purpose flour
2 tsp. baking powder
1 tsp. kosher salt
¾ cup (150 g) granulated sugar
½ tsp. vanilla extract
2 large eggs
4 whole pitted dried red dates
¼ cup heavy cream
4 Tbsp. unsalted butter
¼ cup (packed; 50 g) dark brown sugar
½ tsp. kosher salt

Steps:

  • A 9"-diameter springform pan
  • Preheat oven to 350°F. Butter pan; set aside. Bring dates, baking soda, and ¾ cup water to a boil in a small saucepan, stirring constantly. Reduce heat and simmer, stirring occasionally, until water is almost completely evaporated, about 3 minutes. Let cool.
  • Sift flour into a medium bowl; mix in baking powder and salt. Using an electric mixer on medium-high speed, beat granulated sugar, vanilla, and remaining 6 Tbsp. butter in a large bowl until light and fluffy, about 3 minutes. Add eggs one at a time, beating to blend after each addition; beat until mixture is very light and airy, about 3 minutes. Reduce mixer speed to low; add half of dry ingredients and beat just until incorporated. Mix in cooled date mixture, then add remaining dry ingredients and beat until just combined. Scrape batter into prepared pan and smooth surface to make an even layer.
  • Bake cake until a tester inserted into the center comes out clean, 25-30 minutes.
  • While the cake bakes, make the glaze. Slice each date in half lengthwise, then thinly slice each half into strips. Place in a small bowl and pour in ½ cup boiling water to cover; let soak.
  • Cook cream, butter, brown sugar, and salt in a small saucepan over low heat, stirring occasionally and breaking up sugar as needed, until butter is melted, about 5 minutes. Bring just to a simmer and cook, stirring, until glaze thickens slightly, about 5 minutes. Let cool until glaze thickens further but is still pourable, about 15 minutes.
  • Remove cake from springform pan and slide onto a platter or large plate. Arrange drained date strips along edge of cake so they look like spokes on a wheel. Carefully drizzle warm glaze over cake, so it drips over the edges. Let cool completely before serving.

Despite being very low in fat it has a lovely light, moist texture, thanks to the dried dates, and makes a pleasant alternative to a conventional fruited cake. It's delightfully easy to make, and keeps well too.

  • Place the dates in a bowl with the butter and bicarbonate of soda. Pour over the boiling water and stir until the butter has melted. Set aside to cool.
  • Preheat the oven to 180ºC (350ºF, gas mark 4). Lightly grease an 18 cm (7 in) round deep cake tin and line the bottom with baking parchment.
  • Place the sugar and eggs in a large bowl and beat well to combine. Add the cooled date mixture, then sift in the flour, baking powder, mixed spice and salt. Add the walnuts and stir together until thoroughly mixed.
  • Pour the mixture into the prepared tin and level the top. Bake for 1-1 1/4 hours or until the cake is risen and nicely browned and a skewer inserted in the centre comes out clean.
  • Turn out onto a wire rack and leave to cool. The cake can be kept, wrapped in foil or stored in an airtight container, for up to 5 days.

  • In a large mixing bowl, mix together 1 cup sugar, 2 1/2 cups flour and 1 cup chopped walnuts. Add egg, 1 teaspoon vanilla, pinch of salt and tablespoon butter. Mix to combine. Finally, stir in chopped dates with liquid. Mix well. Pour batter into prepared pans.
  • Bake for 25 to 30 minutes. Cake will pull away from sides of pans and be golden brown.
  • In a medium saucepan, combine buttermilk, 1 cup sugar, pinch of salt and 4 tablespoons flour. Cook on medium heat until thickened. Stir in 1 teaspoon vanilla and remaining cup of walnuts.
  • Spread mixture between layers and on top of cake. Let filling run down the sides of cake.
