OATMEAL DATE BREAD (1-LB BREAD MACHINE)



Oatmeal Date Bread (1-Lb Bread Machine) image

I created this for my bread machine, which makes two 1-lb loaves simultaneously (recipe is per each loaf). This is a delicious but not too sweet yeast bread. Excellent served fresh or toasted, with butter or cream cheese. ENJOY!

3/4 cup water
4 teaspoons olive oil
2 tablespoons sugar
1 tablespoon molasses
1 teaspoon salt
1/2 cup oatmeal
2 cups bread flour
1 teaspoon bread machine yeast
1/2 cup chopped dates

Steps:

  • Place all ingredients except dates into bread machine pan in the order listed. (Two tbsps of packed dark brown sugar may be substituted for the sugar and molasses.).
  • Start machine on "sweet" cycle.
  • Add dates when machine's fruit/nut signal beeps. (If your machine has no fruit/nut signal, add dates about 20 minutes after starting machine.).
  • Note: Dough may appear too moist, even wet as the baking cycle begins, but this is normal; bread should come out fine.

2 1/2 tablespoons butter or 2 1/2 tablespoons margarine
1/4 cup sugar

2/3 cup oat bran
2/3 cup oats
3 cups bread flour
2 tablespoons vital wheat gluten (optional)
2 1/2 teaspoons yeast

Steps:

  • Add ingredients to bread machine pan in order given, or according to your machine instructions.
  • Set on whole wheat cycle.

1/3 cup honey
1 egg
3 tablespoons margarine or 3 tablespoons butter, softened
1 teaspoon salt
1 1/2 cups bread flour
1 1/2 cups whole wheat flour
1 cup cranberries, halved
3/4 teaspoon ground mace
3 teaspoons fast-rising active dry yeast
1 (8 ounce) package cream cheese
2 tablespoons sugar
1/4 teaspoon orange zest
1 dash mace

Steps:

  • Select loaf size recommended by the manufacturer of your machine.
  • Measure all ingredients except Cream Cheese Spread into bread machine pan in the order that the machine manufacturer suggests.
  • Select the lightest crust setting.
  • Process on basic bake cycle.
  • Remove baked bread from pan and cool on wire rack.
  • Serve with Cream Cheese Spread.
  • Cream Cheese Spread: Beat cream cheese, softened, sugar, grated orange peel and dash of ground mace with electric mixer on low speed or with spoon.
  • Refrigerate any remaining spread.
