INDIAN LENTIL SOUP (DAL SHORVA)
An inexpensive, easy-to-make and delicious soup. This slightly modified recipe stems from Mumtaz Khan at Mumtaz Paan House in Bradford, England. Mung beans is the exquisite choice, but red or yellow lentils also make a delicious result (green lentils are not recommended). The chicken stock can be replaced with vegetable stock for a vegetarian variety. This recipe can also be made with less liquid and served as a stew.¨ Improvement, a little off tradition, but works even better: 1) Fry the lentils/beans for a few seconds in ghee before adding the spices and liquid. 2) Add just a little tomato purée (1 tsp) to the soup. 3) Add one diced potato together with the lentils/beans.

Steps:
- Rinse the beans or lentils.
- Bring to a boil with the stock, turmeric, Cayenne, cumin, cardamom and curry/bay leaves.
- Let simmer until the beans or lentils are very soft (ca 30 minutes).
- If using bay leaves, remove them now. Curry leaves can be left in the soup.
- Run the soup quickly in a blender to a not too smooth consistency (or mash the lentils/beans with a ladle).
- Sautee the garlic and mustard seeds lightly in the fat and add to the soup.
- Let simmer for another 5 minutes.
- Add salt, pepper and squeezed lemon to taste.
- Serve hot with pita or paratha bread.

- Bring 1/2 cup broth to a boil in a pot; reduce heat and simmer. Add onion and garlic and simmer until onion is translucent and tender, about 5 minutes. Stir coriander, cinnamon, turmeric, garam masala, and cayenne pepper into onion mixture; simmer for 1 minute.

- Heat a large saucepan and dry-fry 2 tsp cumin seeds and a large pinch of chilli flakes for 1 min, or until they start to jump around the pan and release their aromas.
- Add 1 tbsp olive oil and 1 chopped red onion, and cook for 5 mins.
- Stir in 140g red split lentils, 850ml vegetable stock or water and a 400g can tomatoes, then bring to the boil. Simmer for 15 mins until the lentils have softened.

SPICY VEGAN LENTIL DAHL

- Gather the ingredients.
- In a 3-quart stockpot or other medium-sized soup pot, heat the sesame oil over medium heat. Once the oil is hot, add the onion, garlic, and ginger. Cook, stirring often, until the chopped onion is translucent, about 6 minutes.
- Stirring constantly, add the water or broth, lentils, cumin, coriander, turmeric, cardamom, cinnamon, cayenne pepper, and salt. Bring to a low boil, then turn down the heat to low, cover and let the soup simmer for about 20 minutes, or until lentils are very tender.

- Heat the oil in a large soup pot over medium heat.
- Add the garlic, onion and carrots and cook for 5-6 minutes, stirring often until soft and fragrant.

- Start by putting the lentils in a sieve and rinsing them under cold water to remove some of the excess starch.
- Heat the oil in a pot and add in the onions. Turn the heat down to low and leave the onions to gently cook until soft and translucent, about 5-10 minutes.
- Stir in the tomato purée until all the onions have been coated and cook for about 2 minutes.
- Next, add in the red pepper and mix in with the onions.
- In the meantime, dissolve the two stock cubes in a litre of boiling water.
- Add the red lentils and the ham stock to the pot and stir. Leave the soup to simmer for 10-15 minutes.
- If you would like to purée the soup, do so now. I like to give it a few quick pulses with my stick blender to remove any large chunks of onion or pepper, but don´t purée it until completely smooth.
- Season the soup to taste with chilli flakes (if you like a little spice), salt and pepper.
- Serve hot, with some crusty bread and butter. The soup can also be easily reheated the next day or frozen.

SPICY INDIAN LENTIL AND TOMATO SOUP

- Wash the lentils thoroughly, being sure to remove any small stones or dirt. Place them, along with the water, in the slow cooker insert.
- In an electric coffee mill or a mortar and pestle, grind the cumin seeds, coriander seeds, and peppercorns to a coarse powder.
- In a bowl, combine the ground spices, turmeric, tamarind concentrate, tomatoes, and garlic; add to the lentils.
- Cook, covered, on low for 5 to 6 hours, or until the lentils are quite tender and the flavors have melded.
- Add the corn and salt to taste just before serving so that the corn retains its fresh flavor and texture.
- To make the tempering oil, heat the ghee in a frying pan, then add the mustard seeds and broken chile and sauté until the seeds begin to pop. Quickly remove from the heat and drizzle a tiny bit over each bowl of soup.
- Sprinkle with the fresh cilantro and serve.

- Note : Don't use the coriander powder if you're using Rasam powder. Blanch the tomatoes in 1 cup of boiling water for about 2 to 3 minutes. Donu2019t throw away this water but use it to soak the tamarind. Remove the tomatoes from the water and peel off the skin.
- Cut the tomatoes into quarters, saving the pulp but throwing out the seeds. If all this seems like too much work, you can just cut the raw tomatoes into quarters and proceed from here onwards, but longer way makes for a tastier Rasam.
- Pour the tamarind extract into a pan/ vessel and place on the stove. Add the tomatoes, curry leaves, turmeric powder and the salt and allow the tamarind and tomatoes to come to boil. Simmer for a few minutes till the tomatoes are cooked.
- Add about 3/4 a cup of water to the dal and mix it so it that it becomes a watery dal-water mixture. Add this and the powdered jaggery to the above tamarind-tomato mixture. Once it boils, let it simmer for about 5 minutes. If the Rasam seems too thick in consistency add a little water to adjust to desired thickness. Rasam should have the consistency of a clear soup.
