Chewy Dark Chocolate Pistachio Cookies made from scratch.

115 grams (1/2 cup or 1 stick) unsalted butter, room temperature
90 grams (1/2 cup) brown sugar
100 grams (1/2 cup) caster sugar*
1 teaspoon vanilla extract
1 large egg
210 grams (1 and 1/2 cup) plain flour or all purpose flour
1/2 teaspoon baking soda
75 grams (1/2 cup) pistachio nuts
110 grams (3/4 cup) dark chocolate, roughly chopped
Sea salt

Steps:

  • Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Line two baking trays with baking or parchment paper.
  • In a large mixing bowl, beat the butter and sugars using an electric beater until pale and creamy - approximately 1-2 minutes. Add vanilla and egg and beat briefly until combined.
  • Add flour and baking soda and mix until a soft cookie dough starts to form. Add pistachio nuts and chunks of chocolate and mix briefly on low speed.
  • Use a cookie scoop or your hands to roll cookies into balls, approximately 1 tablespoon of cookie dough each, and place on your prepared trays. Leave room for the cookies to spread out.
  • Bake your cookies for approximately 10-12 minutes or until golden brown on the edges. While they are still warm, sprinkle with sea salt.
  • Once the cookies have cooled slightly, gently remove from the tray and transfer onto a wire rack to cool completely.

I wanted to make this with white chocolate but my boyfriend is not a fan of white chocolate. So I used dark chocolate (both of us love dark chocolate.) If you love sweet and salty treats, this is for you.

¼ cup crushed pistachios
2 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup unsalted butter, melted
¾ cup brown sugar
¾ cup white sugar
2 large eggs
2 teaspoons vanilla extract
1 cup crushed pistachios
½ cup dark chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper or silicone baking mats (such as Silpat®).
  • Place 1/4 cup crushed pistachios in a food processor and process to a powder.
  • Transfer pistachio powder to a bowl and stir in flour, baking soda, and salt.
  • Combine butter and both sugars in a large bowl; beat with an electric mixer until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Gradually stir in flour mixture until just combined. Fold in remaining 1 cup crushed pistachios and dark chocolate chips.
  • Drop tablespoonfuls of dough 3/4 inch apart onto the prepared baking sheets.
  • Bake in the preheated oven until edges begin to crisp, 10 to 12 minutes. Cool on the baking sheet for 2 to 3 minutes before removing to a wire rack to cool completely, 8 to 10 minutes more.

  • Place 1 stick of butter in a small saucepan, set over medium heat. Heat butter until it melts, then bubbles and eventually begins to smell nutty. Whisk and swirl every few seconds until you start to see browned bits (or flecks) at the bottom, remove immediately.
  • In a large mixing bowl or the bowl of a stand mixer, add the remaining butter, pour the hot browned butter over top. Add the pistachio butter and sugars, beat for 2-3 minutes until light and smooth. With mixing speed on low, add the eggs one at a time until incorporated, then the vanilla.
  • In a large mixing bowl, whisk together flour, baking soda and salt. Turn mixing speed to low and gradually add in the dry ingredients. Beat until just combined or until a soft dough forms. Fold in the pistachios and chocolate chunks with a spatula. Now you can either bake the dough straight away, chill for 3 hours and bake, store in the refrigerator for up to 5 days or freeze it.

  • Drain the pistachios well and place them on a paper towel to air dry while you assemble the cookie dough.
  • In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl using a handheld electric mixer, combine the butter and sugar and beat on medium-high speed until pale and fluffy. Add in the egg and beat until combined. Add in the flour and pistachios and beat until combined. Your dough should be stiff.
  • Sprinkle 2 Tablespoons of flour over a clean work surface. Scrape the cookie dough onto the surface and gently knead it for 30 seconds. Divide the dough in half, then roll each portion of cookie dough into a log that's roughly 2" in diameter. Wrap each log tightly in plastic wrap and refrigerate for at least 2 hours (or up to 5 days).
