1 box (16 oz) Betty Crocker™ Supreme original brownie mix
Water, vegetable oil and egg called for on brownie mix box
2 tablespoons butter, softened
3 oz cream cheese, softened
2 tablespoons heavy whipping cream
3 cups powdered sugar
1/4 teaspoon mint extract
Betty Crocker™ green gel food color
1/3 cup heavy whipping cream
1 1/3 cups semisweet chocolate chips
1/3 cup butter

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Line 9-inch square pan with foil, allowing some to hang over edges of pan. Grease bottom and sides of foil with shortening or cooking spray. Make and bake brownies as directed on box. Cool completely on cooling rack, about 1 1/2 hours.
  • In large bowl, beat softened butter and cream cheese with electric mixer on medium speed until smooth. Add 2 tablespoons whipping cream; beat until blended. Slowly add powdered sugar; beat until fluffy. Beat in mint extract. Beat in food color until desired color. Spread over cooled brownies. Refrigerate about 1 hour or until set.
  • In 2-quart saucepan, heat Topping ingredients over medium-low heat, stirring constantly, until melted and smooth. Remove from heat; let stand 15 minutes.
  • Pour topping over filling; spread to cover. Refrigerate uncovered about 2 hours or until set. Using foil to lift, remove brownies from pan, and peel foil away. Before cutting, let stand 20 minutes at room temperature. Cut into 4 rows by 4 rows. Store covered in refrigerator.

1 cup white sugar
½ cup butter, softened
4 eggs
1 ½ cups chocolate syrup
1 cup all-purpose flour
2 cups confectioners' sugar
½ cup butter, softened
2 tablespoons creme de menthe liqueur
6 tablespoons butter
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • In a large bowl, cream together 1 cup sugar and 1/2 cup of softened butter until smooth. Beat in eggs one at a time, then stir in the chocolate syrup. Stir in the flour until just blended. Spread the batter evenly into the prepared pan.
  • Bake for 25 to 30 minutes in the preheated oven, or until top springs back when lightly touched. Cool completely in the pan.
  • In a small bowl, beat the confectioners' sugar, 1/2 cup butter or margarine and creme de menthe until smooth. Spread evenly over the cooled brownies, then chill until set.
  • In a small bowl over simmering water, or in the microwave, melt the remaining 6 tablespoons of butter and the chocolate chips, stirring occasionally until smooth. Allow to cool slightly, then spread over the top of the mint layer. Cover, and chill for at least 1 hour before cutting into squares.

This is one of the things we made and sold at the specialty grocery/cafe' that I worked at. These brownies are rich and moist and a great treat for mint lovers. They have to be pretty good to sell for two dollars a brownie! (prep time includes refrigeration)

1 teaspoon vanilla
1 cup butter
4 ounces baking chocolate
1 cup flour
8 tablespoons butter

1 (6 ounce) package chocolate chips

Steps:

  • Beat eggs until fluffy.
  • Add sugar and vanilla; beat well.

  • Add flour and stir until smooth.
  • Pour into pan.
  • Bake at 375*F for 25 min (if using 9x12 pan) or for 20 min (if using 15x10 pan).
  • Topping: Mix 4 tablespoons butter, confectioners' sugar, mint, and cream.
  • Add green food coloring.
  • Frost brownies and refrigerate.
  • Chill 1 hour.
  • Top with remaining butter and melted chocolate chips.

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in syrup and vanilla. Add flour and salt; mix well. , Pour into a greased 13x9-in. baking pan. Bake 30 minutes (top of brownies will still appear wet). 50 whole Andes Mints
1 stick 1/2 Cup Butter, Softened
1 c. Sugar
2 oz. weight Unsweetened Chocolate
2 whole Eggs
3/4 c. All-purpose Flour
1/4 tsp. Mint Extract
1 tbsp. Butter
1 oz. weight Bittersweet Chocolate, Chopped Fine

Steps:

  • Preheat oven to 325 degrees. Spray mini muffin pan generously with baking spray.Melt unsweetened chocolate in a bowl in the microwave. Remove from microwave and stir in 8 Andes mints until all melted. Let cool slightly.In a mixer with the paddle attachment, cream 1 stick of butter and sugar. Beat in eggs one at a time. With the mixer on low, drizzle in the cooled chocolate mixture slowly, mixing until it's combined. Add flour and mix thoroughly. Scrape the sides of the bowl with a rubber spatula, add mint extract, then mix again. Using a tablespoon or cookie scoop, scoop batter into mini muffin tins. Bake until done, about 13 to 15 minutes. Turn upside down out of pan and allow to cool.Combine 25 unwrapped Andes mints in a bowl with the tablespoon of butter and chopped bittersweet chocolate. Microwave and stir until melted and smooth. Dip the brownie bites in the chocolate, concentrating on the top "cone" part. Allow to set for a few minutes. Chop the remaining Andes mints and sprinkle them on the top. Set in the freezer for 10 minutes if you need them to set right away. Yum!

1 cup (230g) unsalted butter
8 ounces semi-sweet chocolate, coarsely chopped
1 and 1/2 cups (300g) granulated sugar
1/2 cup (100g) packed light brown sugar
4 large eggs, at room temperature
2 teaspoons pure vanilla extract
1/2 teaspoon salt
1/2 cup + 3 Tablespoons (86g) all-purpose flour (spoon & leveled)
1/4 cup (21g) natural unsweetened cocoa powder
1/2 cup (115g) unsalted butter, softened to room temperature
2 cups (240g) confectioners' sugar
2 Tablespoons (30ml) milk
1 and 1/4 teaspoons peppermint extract*
optional: 1 drop liquid or gel green food coloring
1/2 cup (115g) unsalted butter
1 heaping cup (around 200g) semi-sweet chocolate chips

Steps:

  • Melt the butter and chopped chocolate in a medium saucepan on medium heat, stirring constantly, about 5 minutes. Or melt in a medium microwave safe bowl in 20 second increments, stirring after each, in the microwave. Remove from the heat, pour into a large mixing bowl, and allow to slightly cool for 10 minutes.
  • Adjust the oven rack to the lower third position and preheat oven to 350°F (177°C). Line the bottom and sides of a 9×13 baking pan* with aluminum foil or parchment paper, leaving an overhang on all sides. Set aside.
  • Whisk the granulated and brown sugars into the cooled chocolate/butter mixture. Add the eggs, one at a time, whisking until smooth after each addition. Whisk in the vanilla. Gently fold in the salt, flour, and cocoa powder. Pour batter into the prepared baking pan and bake for 35-36 minutes or until the brownies begin to pull away from the edges of the pan. A toothpick inserted in the center should come out with only a few moist crumbs when the brownies are done. All ovens are different, so keep an eye on them after 30 minutes and use the toothpick test to see when yours are finished. Allow the brownies to cool completely in the pan set on a wire rack. Once completely cooled, lift the foil out of the pan using the overhang on the sides. Place the whole thing on a baking sheet as you make the frosting. Do not cut into squares yet.
  • In a medium bowl using a handheld or stand mixer fitted with a paddle attachment, beat the butter on medium speed until smooth and creamy, about 2 minutes. Add the confectioners' sugar and milk. Beat for 2 minutes on low speed, then increase to high speed and beat for 1 additional minute. Add the peppermint extract and food coloring (if using) and beat on high for 1 full minute. Taste and add a drop or two more peppermint extract if desired. Frost cooled brownies, that you placed on the baking sheet, and place the baking sheet in the refrigerator. This allows the frosting to "set" on top of the brownies which makes spreading the chocolate layer easy. Keep in the refrigerator for at least 1 hour and up to 4 hours.
  • Melt the butter and chocolate chips in a medium saucepan on medium heat, stirring constantly, about 5 minutes. Or melt in a medium microwave safe bowl in 20 second increments, stirring after each, in the microwave. Once melted and smooth, pour over mint layer. Gently spread with a knife or offset spatula. Place the brownies, that are still on the baking sheet, in the refrigerator and chill for 1 hour (and up to 4 hours or even overnight) to set the chocolate.
  • Once chilled, remove from the refrigerator and cut into squares. For neat cutting, make very quick cuts, using a very sharp large knife, and wiping the knife off with a paper towel between each cut. Brownies are OK at room temperature for a few hours. Cover tightly and keep leftovers in the refrigerator for up to 5 days.

Steps:

  • Preheat oven to 350 degrees. In a medium-large saucepan, melt the butter with the unsweetened chocolate over low heat, whisking occasionally until smooth and melted. Sprinkle in cocoa powder and whisk to combine. Remove the pan from heat and allow to cool for about 5 minutes.Stir in sugar and vanilla until just combined.One at a time, stir in the eggs. Gently stir in the flour until halfway incorporated. Add the chocolate chips and stir just until combined. Pour batter (it will be very thick!) into a greased 8 x 8 or 9 x 13 baking pan. (Square pan will result in thicker brownies.) Spread to even out the top and place in the oven. Bake for 40 minutes, then check the brownies with a toothpick. If it is overly gooey/messy, return to the oven for 5 to 10 more minutes. (Just be careful not to burn the edges.) 6 Tbsp unsalted butter
6 oz dark chocolate
1/4 c unsweetened cocoa powder
1 c sugar
2 large eggs (preferably at room temperature)
2 tsp vanilla extract
3/4 c all-purpose flour
1/4 tsp baking powder
1/4 tsp coarse salt
12 andes mints, unwrapped

Steps:

  • 1. Preheat the oven to 350F. Thoroughly coat an 8"x8" baking pan with nonstick spray and set aside.
  • 2. Put butter, chocolate and cocoa powder into a heatproof bowl set over a saucepan of simmering water (about an inch of water). This is a makeshift double boiler, which will ensure the chocolate melts without burning or changing consistency. Stir constantly until butter and chocolate have melted and the mixture is smooth and uniform in color and consistency. Remove from heat and set aside to cool slightly.
  • 3. Meanwhile, beat the eggs together with the sugar and vanilla until pale, using an electric mixer, or a sturdy whisk. This should take several minutes. Slowly add chocolate mixture in a thin stream, whisking continuously to incorporate. Don't dump it all in at once because any residual heat in the chocolate could start to cook the eggs.
  • 4. Now add the dry ingredients (flour, baking powder, and salt) all at once and beat until just combined. Do not overbeat, but use a rubber spatula to scrape the sides of the bowl and turn the batter over a few times to make sure everything is incorporated.
  • 5. Pour half of the batter into prepared pan. Evenly space Andes mints on top of the layer, in three rows of four mints. Then cover with the remaining half of the batter and carefully smooth with a rubber spatula to evenly distribute and flatten the batter. No Andes should be showing.
  • 6. Bake for 25 minutes, or until a knife inserted into the center comes out clean-ish (no wet batter, but some crumbs may stick to it). Remove pan from oven and allow to cool completely before cutting. Makes 16 brownies. Store in an airtight container for up to 5 days, or in the freezer for 3 months.
