DARK CHOCOLATE OATMEAL
Steps:
- Bring 3 cups water to a boil in a large saucepan over medium heat. Add the oats, cocoa powder, vanilla and salt and cook, stirring regularly, until thickened, 5 to 7 minutes. Turn off the heat and stir in the honey. Cover and let stand for 2 minutes.
- Top each serving with 2 tablespoons chopped walnuts, half of a sliced banana and 2 tablespoons cherries. Serve immediately.

Steps:
- Add the topping ingredients (except for the cocoa powder) to a small saucepan.
- Cook the cherries for 10 minutes on medium heat or until broken down and into a thick jam consistency. Set aside,
- Preheat the oven to 375F.
- Spray a small baking dish or casserole with cooking spray. I used an 8.5" x 11" 2.5qt casserole dish for this.
- Add the bananas to the bottom of a mixing bowl, and mash them with a fork.
- Add the applesauce, sugar, cocoa powder, baking powder, salt, and vanilla extract, and stir to combine.
- Add the milk. Whisk together.
- Add the oats. Fold in.
- Pour the mixture evenly into the baking dish.
- Pour the cooked cherry topping on top of the oatmeal. Spread in an even layer.
- Sprinkle with the 1/4 tsp cocoa powder.
- Bake at 375 for 35 minutes.

- Heat oven to 375°F. In medium bowl, mix oat flour, baking soda and salt; set aside.
- In large bowl, beat softened butter and sugars with electric mixer on medium speed 3 to 5 minutes or until fluffy, scraping side of bowl occasionally.

- Preheat oven to 350°. In a large bowl, cream butter and brown sugar until light and fluffy. Beat in eggs and vanilla. In another bowl, whisk flour, cinnamon, baking powder, baking soda and salt; gradually beat into creamed mixture. Stir in oats, cherries and chocolate chips., Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake 9-11 minutes or until edges are golden brown. Cool on pans 1 minute. - In medium bowl, whisk together flour, cinnamon, baking soda and salt. Set aside.
- In large bowl, use electric mixer to cream the butter and sugars (about 3-4 minutes on medium). Add the maple syrup and mix to combine. Add the eggs and vanilla and beat until well combined, about 1 minute.
- With mixer on low, add flour mixture in two batches. Mix until just combined. Add oats, chocolate and cherries and mix until combined.
- Refrigerate dough for 30 minutes.
- Preheat oven to 350°F.
- Using ice cream scoop or your hands, form dough into 1 1/2 inch balls. Place each ball on cookie sheet, spacing dough 2 inches apart.
- Place one sheet on upper rack and one on lower. Bake for 20 minutes, rotating cookie sheets and switching racks halfway through.
