CHOCOLATE CHIP CHEESECAKE MUFFINS

Chocolate Chip Cheesecake Muffins image

Got this from the Dannon website. Resist the temptation to devour these the first day.. they get better with age (tightly sealed, of course). Topping is a bit tangy, can definitely tell it is yogurt and not cheesecake... I am open to suggestions on how to doctor it up! More sugar maybe, or some vanilla yogurt?

Categories     Quick Breads

Time 12h25m

Yield 12 muffins, 12 serving(s)

Number Of Ingredients 11

2 1/4 cups plain yogurt
1/2 cup confectioners' sugar
2 eggs
1/4 cup mini chocolate chip
3/4 cup granulated sugar
1/3 cup unsweetened cocoa powder
1 1/4 cups self-rising flour
2 teaspoons instant espresso powder
1/4 cup oil
1 teaspoon vanilla extract
nonstick cooking spray

Steps:

  • Prepare yogurt cheese: Spoon 1 1/2 cups yogurt into a strainer or sieve lined with cheesecloth or coffee filter. Place a bowl under strainer to catch liquid (whey). Cover and refrigerate 12 hours. Discard liquid.
  • Preheat oven 350°F.
  • Prepare topping: In medium bowl, whisk together yogurt cheese, confectioner's sugar and 1 egg until well blended. Stir in chocolate chips. Set aside.
  • In large bowl, combine flour, granulated sugar, cocoa and coffee granules. In a separate medium bowl, combine remaining 3/4 cup yogurt, oil, remaining egg and vanilla. Mix well. Pour over dry ingredients and mix on low speed in electric mixer until just combined or ingredients are moistened.
  • Spray 12-cup muffin tin with non-stick cooking spray or line with foil muffin cups. Spoon batter evenly into muffin cups. Make a slight indentation in each. Spoon yogurt mixture over batter, dividing evenly (It makes a tad too much topping -- I just divided it as well as I could and licked/pitched the rest :)).
  • Bake 20-25 minutes or until toothpick inserted in center comes out clean. Cool on rack for 5 minutes, then remove from tins to completely cool.

Time 1h10m

Yield 12 muffins

Number Of Ingredients 13

1 1/4 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
2 large eggs
4 tablespoons unsalted butter, melted
1/2 cup dark brown sugar
3/4 cup milk
1 tablespoon vegetable oil
2 teaspoons pure vanilla extract
1 cup semisweet chocolate chips
Serving suggestions: strawberry jam

Steps:

  • Preheat the oven to 350 degrees F.
  • Line the muffin tin with paper liners and lightly coat with cooking spray. (This may seem like overkill, but otherwise the muffins will stick.)
  • Whisk the flour, cocoa, baking powder, baking soda and salt in a medium bowl. In another medium bowl, lightly whisk the eggs, then whisk in the butter, brown sugar, milk, oil and vanilla.
  • Quickly fold the wet ingredients into the dry with a rubber spatula. Just before the batter comes together, fold in the chocolate chips¿don¿t mix the batter too much or the muffins will be tough. Divide the batter among the muffin cups (1/4 cup of batter per muffin). Bake until a tester inserted in the center comes out clean, about 25 minutes. Turn the muffins out of the tins, cool on a rack. Serve slightly warm with jam.

1 cup milk
1/3 cup plus 2 teaspoons vegetable oil
1 egg
1 teaspoon pure vanilla extract

  • Put the flour, baking powder, baking soda, cocoa, sugar, and 3/4 cup of the chocolate chips into a large bowl. Pour all the liquid ingredients into a measuring jug. CHOCOLATE CHIP MUFFINS

Make these easy chocolate chip muffins with kids over the weekend or school holidays. They take just 15 minutes prep and are a guaranteed family favourite

Provided by Lulu Grimes

Categories     Afternoon tea, Dessert, Treat

Time 40m

Number Of Ingredients 7

250g self-raising flour
1 tsp bicarbonate of soda
150g chocolate chips, milk, white, dark or a mix of all three
100g golden caster sugar
2 eggs, lightly beaten
150ml natural yogurt
100g unsalted butter, melted

Steps:

  • Heat oven to 200C/180C fan/gas 6 and line a 12-hole muffin tin with paper cases. Sift the flour and bicarbonate of soda into a large bowl, then stir in the chocolate chips and sugar. Add the beaten eggs, yogurt and butter, and stir to combine. It doesn't matter if the mixture looks a bit lumpy, it's more important not to overmix or the muffins will turn out tough.
  • Fill the paper cases and bake for 20-25 mins until risen and golden brown. Transfer to a rack to cool - or eat slightly warm. Will keep for three days in an airtight container.
