From About.com for ZWT #6's trip to Scandinavia. Delicious and satisfying fondue is made with bacon, Havarti and Gouda cheeses, and beer. Turkey bacon may be substituted for traditional pork bacon, if you wish.

1 tablespoon butter
4 slices extra-lean bacon, finely chopped
1 small sweet onion, finely chopped
1 tablespoon all-purpose flour
1 cup lager beer
1 cup grated havarti cheese
1 cup grated gouda cheese
sweet and sour gherkin, rye bread cubes

Steps:

  • Melt butter in a medium-sized heavy saucepan. Saute bacon and onion together until bacon is crisp and onion is golden. Add flour and cook for 2 minutes, stirring often. While continuing to stir, slowly add the beer and cook until sauce is smooth and thickened.
  • Add Havarti and Gouda cheeses to the sauce, stirring until melted. Transfer Danish fondue to a fondue pot and serve with dippers.

4 slices bacon, finely chopped
1 cup Spanish onion, minced
1 tablespoon butter
1 tablespoon all-purpose flour
1 cup cracked canoe lager beer
1 cup havarti cheese, grated
1 cup gouda cheese, grated

Steps:

  • Place a medium saucepot over medium heat and add the chopped bacon.
  • Render the fat from the bacon, crisping it gently.
  • Add onions to sauté and the butter to melt and brown slightly.
  • Now add the flour and stir to combine and make a smooth roux.
  • Add the beer a little at a time, whisking to ensure that no lumps form.
  • Add the grated cheese until melted, transfer to a fondue pot and serve with crusty bread and sweet and sour gherkins - so delicious!
