DANISH APPLE PUDDING

An economical dessert to make, using up applesauce and stale bread crumbs. A Danish version of the trifle, and my version of the Danish original.

1/2 pint whipping cream
2 tablespoons icing sugar
1 teaspoon vanilla extract
1/2 cup butter
1/2 cup brown sugar
2 cups stale breadcrumbs
1 1/2 teaspoons cinnamon
2 cups sweetened applesauce
1 teaspoon fresh lemon juice
1/4 cup sliced almonds, toasted

Steps:

  • Whip cream, 2 tbsp icing sugar and vanilla extract until soft peaks form (approximately 3 minutes - but it depends on the cream).
  • Place butter in a skillet and melt over medium heat. Add brown sugar, bread crumbs, and cinnamon. Mix well and cook, stirring constantly, to toast the crumbs, 3-5 minutes. Let cool completely (you may need to break up some of the crumbs if they've clumped together - this is easily down in the processor). Set aside 1 tbsp of crumb mixture.
  • Spread 1 cup of crumbs in a large bowl. Mix the lemon juice into the applesauce. Spread 1 cup of applesauce over crumbs. Next 1/2 of the whipped cream; then the last of the crumbs. Finally, another cup of applesauce and the balance of the whipped cream. Sprinkle with the toasted almonds and reserved bread crumbs. Chill for at least 3 hours.
  • Serve spooned into sherbet glasses or sauce dishes.

This is an interesting variation on bread pudding I found on the internet. You can used store bought chunky applesauce instead of making your own.

4 tablespoons unsalted butter
2 tablespoons apple juice
12 slices French bread (about 2 1/2 cups) or 12 slices Italian bread, ground fine in a food processor (about 2 1/2 cups)
1 cup lingonberry preserves or 1 cup raspberry preserves
1 cup whipped cream (optional)
cooking spray
3 lbs mcintosh apples (about 8 large) or 3 lbs rome apples (about 8 large)
2/3 cup water
1/3 cup sugar

Steps:

  • Preheat oven to 325 degrees.
  • To make applesauce: Peel and core apples and cut into 1 inch. In a large saucepan bring water, apples, and sugar to a boil and simmer, stirring occasionally, until apples are soft and starting to fall apart, about 25 minutes. Don't cook or mash the sauce until smooth. Applesauce may be made 3 days in advance and kept chilled until you are ready to make the pudding.
  • In a large heavy skillet melt butter over moderate heat. Once melted, stir in apple juice and bread crumbs. Stir bread crumbs continuously until they are well toasted and golden in color, about 5 minutes.
  • Lightly spritz a 1 1/2-quart casserole dish with cooking spray. Place 1 cup of bread crumbs in the bottom, top with 2 cups of applesauce, followed by 1/2 cup of preserves. Repeat layers, finishing with the remaining 1/2 cup of crumbs. Bake pudding 25 minutes, or until top is golden brown.
  • Serve pudding warm with optional garnish of whipped cream and additional preserves.

3/4 stick (6 tablespoons) unsalted butter
12 slices homemade-type white bread, ground fine in a food processor (about 2 1/2 cups)
4 cups homemade chunky applesauce (recipe follows) or bottled chunky applesauce
For applesauce:
3 pounds McIntosh apples (about 8 large)
2/3 cup water
1/2 cup sugar
1 cup lingonberry preserves* or raspberry preserves plus additional for garnish
lightly sweetened whipped cream for garnish and as an accompaniment
*available at specialty foods shops, and some supermarkets

Steps:

  • Preheat oven to 325°F.
  • In a large heavy skillet melt butter over moderate heat and stir in bread crumbs. Cook bread crumbs, stirring constantly and breaking up lumps, until golden, about 5 minutes.
  • In a 1 1/2-quart soufflé dish layer 1 cup crumbs, 2 cups applesauce, and 1/2 cup preserves and repeat. Sprinkle remaining 1/2 cup crumbs on top and bake pudding in middle of oven 25 minutes, or until top is golden brown. Pudding may be made 1 day in advance and kept covered and chilled. Reheat pudding in a 325°F. oven before serving. Garnish pudding with whipped cream and additional preserves.
  • Serve pudding warm with whipped cream.
  • To make chunky applesauce:

In a large heavy saucepan bring water, apples, and sugar to a boil and simmer, stirring occasionally, until apples are soft and starting to fall apart, about 25 minutes. VERY SIMPLE. Used some leftover/dry sourdough bread and just started throwing things together. Eventually I created this. Its not TOO sweet and very filling. I used fat free milk and light butter but you can use anything.

4 cups bread, cubed
2 cups milk
3 tablespoons butter
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup raisins
2 egg whites
1 egg
2/3 cup applesauce
1/4 cup maple syrup (optional)
3/4 cup brown sugar

Steps:

  • Cut bread into 1-2 inch cubes and spread a layer on the bottom of a large glass baking dish. (Using HALF the bread cubes).
  • In a saucepan, warm the milk and butter together long enough to melt butter. (Make sure you do not let the milk boil!).
  • Once butter is melted, remove from heat. Add brown sugar.
  • In a separate bowl whisk together eggs and vanilla untill well mixed and a little foamy/frothy.
  • Whisk egg mixture into milk mixture.
  • Pour mixture over the first layer of bread cubes, making sure to soak them through.
  • Spread applesauce over the soaked bread cubes evenly and sprinkle cinnamon, nutmeg, and raisins.
  • Add the rest of the bread cubes and pour remaining mixture over them. Sprinkle more cinnamon and raisins.
  • Sprinkle with brown sugar (optional) and/or drizzle with a little maple syrup.
  • Bake on 350 degrees for about 20-35 minutes or until the center is set.

This is to be found as the Sunday dinner dessert in almost every Danish home during the apple season. The recipe is from my childhood home. You can use store bought apple sauce, but I prefer and always use homemade.

4 c homemade unsweetened, chunky applesauce
8-10 sweet macro hearts
1 c sweet bread crumbs
1 pt heavy cream for wipping
1/2 c sugar
3 slices of dry toast
1 tsp butter

Steps:

  • 1. First make the sweet bread crumbs. Take 3 slices very dry toast, crush it in a plastic bag. Pour ½ cup sugar in a skillet and 1 teaspoon butter and heat to melt. As soon as the sugar is melted reduce heat and pour the crumbs into the skillet and mix quickly then pour onto a baking sheet to cool.
  • 2. Wip the heavy cream and put in the fridge. in a half gallon bowl cover the bottom with 1 cup applesauce, then crush 4 of the macros and add some of the crumbs, repeat layering and top with cold wipcream...mmmmmmmm
  • 3. Serve cold..
