1 bunch dandelion greens, washed, drained and trimmed
3 green onions, chopped (white and green parts)
fresh dill (or 2 teaspoons dried)
1/4 cup extra virgin olive oil
1/2 lemon, juice of
salt & fresh ground pepper, to taste

Steps:

  • Place all the ingredients, up to olive oil, in a large bowl and toss together.
  • In another little bowl stir together oil, lemon juice and salt and pepper. Pour over salad. Enjoy!

Dandelions' sawtooth leaves bring a pleasant bitterness to the table. They're best picked when tender, before the plant blooms, and they can be served raw or cooked.

1 tablespoon finely chopped garlic scapes or wild (spring) garlic
1 tablespoon fresh lemon juice
1/2 teaspoon coarse sea salt
1/4 teaspoon granulated sugar
1/4 cup extra-virgin olive oil
8 cups (4 ounces) dandelion greens, large leaves torn in half

Steps:

  • Combine garlic scapes, lemon juice, salt, and sugar in a bowl. Whisk until well combined. Drizzle in oil in a slow, steady stream, whisking until emulsified.
  • Place dandelion greens in a salad bowl. Drizzle dressing over greens, and toss to coat. Serve immediately.

Fresh red currants add a punch to this simple yet delicious salad. Make sure to soak the dandelion greens well in a large bowl of cold water and then lift them out to remove the grit. Dandelion greens are available at most supermarkets from early spring until winter. If you can't find them, substitute a mixture of greens including watercress, arugula, and frisée.

1 small garlic clove, minced
1 ½ Tbsp balsamic vinegar
3 Tbsp olive oil
¼ cup fresh red currants
coarse salt
freshly cracked black pepper
large bunch young dandelion, greens trimmed and washed
snipped chives

Steps:

  • In a small non-reactive bowl, whisk together the garlic and vinegar and slowly add the oil until emulsified.
  • Whisk in half the red currants and season to taste with salt and pepper.
  • Toss the dandelion greens with some coarse salt and pepper and then toss it with the vinaigrette.
  • Pile the greens onto plates and sprinkle with snipped chives and remaining currants.

1 pound tender, young dandelion greens (about 10 loosely packed cups)
6 tablespoons extra-virgin olive oil
1/4 cup sliced almonds, toasted
2 tablespoons red-wine vinegar
1 teaspoon honey
Salt
Freshly ground black pepper
1/4 pound ricotta salata, cut into shards with a vegetable peeler

Steps:

  • Cut any tough stems from the greens and trim any wilted, yellow, or tough leaves. Wash and dry them according to directions on page 67. The greens can be prepared up to several hours in advance and kept, loosely covered with a clean towel, in the refrigerator.
  • To make the dressing, combine the olive oil, 2 tablespoons of the toasted almonds, vinegar, and honey in a blender and blend until smooth. Add salt and pepper to taste. Place the greens in a large bowl, season them with salt and pepper, and pour the dressing over them. Toss well and divide the dressed greens among six plates, mounding them in the center of the plate. Sprinkle with the remaining 2 tablespoons of toasted almonds and top with shavings of ricotta salata. Serve immediately.

2 bacon strips, diced
2 hard-boiled large eggs, chopped
DRESSING:
2 eggs
2 tablespoons white vinegar
1 tablespoon sugar

Steps:

  • Wash dandelion greens thoroughly; drain and place in a large salad bowl. Chill. , Meanwhile, in a skillet, fry bacon until crisp. Remove and drain on paper towels. Discard all but 2 tablespoons of drippings. , For dressing, combine eggs, vinegar, sugar and enough water to make 1 cup. Beat well; pour into the skillet. Cook over medium heat, stirring constantly, until mixture thickens and coats the back of a spoon. Pour over greens and toss well. Sprinkle with chopped eggs and crumbles bacon; toss lightly. Serve immediately.

IMPORTANT NOTES: While I can buy tender arugula at Trader Joe's, I find that the supermarket dandelion leaves are all pretty tough, even the organic ones. So it would be better to pick some fresh young dandelion leaves from a lawn that is not chemically treated. Regarding amounts of ingredients for this salad: Normally I am pretty flexible when giving amounts for salads, but I will say this: when using bitter greens such as dandelion, or peppery/pungent greens such as arugula, make sure you have enough milder veggies (such as tomato, avocado, cuke, etc.) to counter the sharpness of those greens.

Collect and wash dandelion roots. Chop or food process the roots and dry in a food dehydrator or the oven at 250 degrees Fahrenheit until thoroughly dry. Once dry, roast them in the oven at 350 F until they turn brown (but not burnt). Put roots and water in a pan and bring to boil (2 Tbs root to 16 oz water), then simmer for 20 minutes.
