ITALIAN MEATBALL SUBS
This is one of those recipes you always come back to. A flavorful tomato sauce and mildly spiced meatballs make a hearty sandwich filling, or they can be served over pasta. I broil the meatballs first to quickly brown them. -Jean Glacken, Elkton, Maryland

Steps:
- Mix the beef mince with the breadcrumbs, lemon zest, egg, half of the garlic, the fennel seeds, herbs, plenty of freshly ground black pepper and ½ tsp salt in a bowl. Knead well to combine, then roll into 12 evenly-sized balls (weighing around 60g each). Press your thumb deep into each ball to make a pocket, then fill each one with a piece of mozzarella and seal inside by rolling the meatball into shape again.
- Fry the meatballs over a medium-high heat in half the olive oil for 5-10 mins, turning regularly until well-browned with a good crust. Meanwhile, heat the remaining olive oil in a saucepan over a medium heat and cook the remaining garlic for 2 mins until fragrant. Tip in the passata or tomatoes, season well and cook for 10 mins until thickened.
- Add the meatballs to the sauce and gently simmer for 3-5mins, basting the meatballs in the sauce. Remove from the heat, then leave to rest for 5 mins.
- To serve, cut along the length of the baguette but not all the way through, then open it up and scoop in the meatballs and sauce. Sprinkle over the parmesan, press the baguette shut and cut into four pieces to serve.

ITALIAN MEATBALL SUBS
I got this from a crock pot cookbook several years ago and have made it many times. We all love it. Get a crusty sub roll, spread it with butter, garlic salt and pop in under the broiler for a few minutes and then make your sandwich. It is yummy and easy.

Steps:
- Instructions-
- Start simmering 1/2 of one large can of your favorite spaghetti sauce in a 3-4 qt pot. (You'll need the extra room for the meatballs). In a large mixing bowl combine all of the meatball ingredients. Mix thoroughly. Wet hands and roll meatballs in about 1.5-inch diameter balls. Bake them on a baking sheet with edges at 350 deg. for 15 minutes, or fry them in cooking oil until browned on all sides, careful not to burn them. Should take about 15 minutes as well. Drain fat, and then place them in the simmering sauce, where they will finish cooking. Continue to simmer while you prepare the rest of the meal. About 15 minutes. Of course if you want to do this step earlier, and simmer the meatballs longer, that would be even better.
- Set the oven to BROIL, top rack should be about 7" from the top. Slice, lengthwise, each hoagie roll without cutting completely through. Lightly butter each half, and sprinkle just a ½ pinch of garlic powder, and a pinch of Parmesan, over each buttered side. On a baking sheet, place face open hoagie rolls in oven. Watch carefully and remove just as the bread starts to toast (just a minute or two). Leave oven on. Cut open one meatball to make sure it is done, otherwise, let simmer a bit longer. Now spoon meatballs and sauce into the center of the open hoagies, top with plenty of mozzarella cheese, then return to oven and heat until the mozzarella cheese is melted and slightly starting to brown (again, should only take a minute or two, so watch carefully). Remove from oven, and enjoy!
