DAIRY FREE BERRY TRIFLE
Its always an issue when we entertain to make sure that the dessert meets the needs of the guests and that my dairy allergic child does not feel he is missing out. This recipe meets all needs. Delicious and looks great. I get frustrated when I'm left with egg whites or egg yolks, so I decided to add meringue to this recipe. Nice and crunchy.

- Meringues:.
- Preheat oven to 150ºC.
- Line a baking tray with baking paper.
- Beat egg whites until stiff.
- Gradually add 1/2 cup sugar.
- Beat until thick and glossy.
- Fold in 1/3 cup sugar.
- Spread evenly in baking tray.
- Bake for 1-1½ hours or until dry, then cool.
- Custard:.
- Warm rice milk and water, but do not boil.
- Beat the egg yolks in a large bowl and slowly add the sugar.
- Mix in cornstarch.
- Gradually add warm milk mixture.
- Return to pan and stir over low heat until custard thickens. Do not allow to boil.
- Remove from heat, cool and add vanilla essence.
- Cool for 30 minutes.
- Trifle:.
- Spread jam over ladyfingers.
- Arrange in a layer in trifle bowl.
- Spoon one third of the fruit on top.
- Crumble meringue over fruit.
- Spoon half of the custard over this.
- Repeat with a layer of ladyfingers, meringue, fruit and custard.
- Top with ladyfingers.
- Whip dairy free cream until stiff and spread over this.
- Garnish with fruit.

- At least 4-6 hours (or preferably the night before you make the trifle) chill the 500ml coconut cream in its carton or tin in the fridge.
- To make the trifle sponges, preheat the oven to 200°C, fan 180°C, gas 6, and grease and line 2 baking trays. Whisk the egg whites using an electric whisk, adding half of the sugar a little at a time, and whisk after each addition until you have stiff peaks.
- Use the electric whisk to beat the egg yolks, the vanilla extract and the remaining sugar together until pale and creamy – this will take about 5 minutes, so keep going until you get the desired consistency. Gently fold the whisked whites into the yolk mixture using a large metal spoon, then gently fold in the flour just until combined. Fill a piping bag, fitted with a plain 2-cm nozzle, or a disposable bag with the end snipped off to the right width, with the mixture, then pipe 7cm-long biscuits onto the baking trays, spacing them well apart. Bake for 10-15 minutes until lightly golden. Leave to cool – they will harden as they cool – then dust with icing sugar.
- For the custard, whisk the egg yolks in a bowl with the sugar and cornflour. Pour the coconut milk and cream into a saucepan and stir in the vanilla seeds and the vanilla extract. Heat until simmering over a low-medium heat, removing it just when it starts to bubble around the edges of the pan; don't let it boil. Pour onto the egg and sugar mixture in a slow, steady stream, whisking constantly with a balloon whisk. Once smooth, return it to a clean pan and cook over a very low heat, stirring with a wooden spoon, until it is quite thick (when it coats the back of a spoon) – be patient and don't turn the heat up; it will thicken. Leave to cool.

- To make the jelly, add cool water and gelatin powder to a large bowl, stirring until well combined. The mixture should thicken up. Then add hot water, stirring to mix. The mixture should then thin out. Add the juice and mix well. Pour the jelly mixture into a bowl, cover and place in the refrigerator until it is set, approximately 3 hours.
- To make the sponge layer, add the coconut flour and baking powder to a large mixing bowl, combine well. Add eggs, coconut milk, honey, coconut oil and vanilla extract to another large mixing bowl, whisking well to combine. Add the wet mixture to the dry mixture, mixing thoroughly to combine. Spoon the batter into lined spring form pan and bake in the oven for 30-35 minutes or until golden and a toothpick inserted into the center comes out clean. Leave to cool in the pan for 5 minutes before transferring to a wire cooling rack to cool completely. Slice into small squares.
- To make the custard, add coconut milk, coconut cream and vanilla to a small saucepan over medium heat; stirring constantly for 5 minutes or until hot. Remove the saucepan from the heat. In a heat proof mixing bowl, add egg yolks, arrowroot and coconut sugar, whisking until well combined. Slowly add the hot mixture to the egg mixture, whisking constantly.
