Alfredo sauce goes dairy-free! We blended cashews with sauteed aromatics, nutritional yeast and almond milk to make your favorite rich and thick pasta topper -- without the cream.

Yield about 2 1/2 cups (enough sauce for 24 ounces pasta/8 servings)

Number Of Ingredients 10

1 cup raw cashews
2 tablespoons olive oil
1 large yellow onion, diced (about 2 cups)
4 cloves garlic, minced
3/4 cup vegetable broth
1/2 cup unsweetened almond milk
1/4 cup nutritional yeast
1 tablespoon fresh lemon juice
Pinch freshly grated nutmeg
Kosher salt and freshly ground black pepper

Steps:

  • Add the cashews to a medium bowl and cover with water. Cover with plastic wrap and let soak, refrigerated, overnight.
  • Drain the cashews and set aside.
  • Heat the oil in a large nonstick skillet over medium heat. Add the onion and cook, stirring occasionally, until light golden, about 10 minutes. Add the garlic and cook until fragrant, about 1 minute.
  • Transfer the mixture to a high-powered blender. Add the cashews, vegetable broth, almond milk, nutritional yeast, lemon juice, nutmeg, 1 1/2 teaspoons salt and 1/4 teaspoon pepper. Blend until smooth and combined.
  • To serve, heat the Alfredo sauce in a large skillet and toss with your favorite pasta and a splash of pasta water.

This is a pretty simple recipe. It's a pretty small batch, so you may want to double it. The recipe needs no dairy-free cheese, but feel free to add some or sprinkle on top.

1 -2 garlic clove, minced
3/4 cup plain soymilk
2 teaspoons all-purpose flour
3 -4 tablespoons nutritional yeast
oregano
salt
black pepper
1 pinch nutmeg

Steps:

  • Heat oil over medium heat in a large skillet. Add minced garlic and lightly saute just until fragrant.
  • Stir in the flour and stir for about one minute. This will be thick.
  • Slowly pour in the milk.
  • Add salt, pepper, oregano and nutmeg.Stir until creamy and thick.
  • Turn off the heat and stir in nutritional yeast.
  • Serve over your choice of pasta.

I've been craving alfredo sauce lately, and this is the best non-dairy substitute I've found! Don't tell your family it contains tofu, I bet they'll never guess! The recipe is from www.veganchef.com. You can reduce the soy parmesan to make it healthier, although I wouldn't go below 1/2 cup because it does add a lot of the flavor.

1 (12 1/3 ounce) package mori-nu firm silken tofu (I use light) or 1 (12 1/3 ounce) package extra-firm silken tofu (I use light)
2 cups soymilk (or other non-dairy milk of choice) or 2 cups rice milk (or other non-dairy milk of choice)
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
1 pinch cayenne pepper (optional)
1 pinch ground nutmeg
1 cup vegan parmesan cheese

Steps:

  • In a food processor or blender, place all of the ingredients, except the soy parmesan cheese, and blend for 2 minutes to form a smooth puree.
  • Transfer the mixture to a small saucepan and cook over low heat while stirring constantly until warmed through (I turned it up to medium and it was fine).
  • Remove the saucepan from the heat and stir in the soy parmesan cheese.
  • Taste and adjust the seasonings, as needed.
  • Use as a sauce for pasta, vegetables, or grains.

This Dairy-Free Fettuccine Alfredo is rich, creamy, and oh-so-satisfying!

8 ounces fettuccine pasta
4 tablespoons vegan butter
3-4 cloves garlic, minced (use less or more, depending on how much you like garlic! )
2 tablespoons all-purpose flour
1 14.5-ounce can coconut milk
⅓ cup vegetable stock or broth
2 tablespoons reserve hot pasta water (use more if your sauce needs it)
1 teaspoon freshly cracked black pepper
1 teaspoon Dijon mustard
¼ cup nutritional yeast
1 tablespoon parsley (freshly chopped)
salt and pepper (to taste)

Steps:

  • Cook pasta according to package directions. Meanwhile, make the sauce.
  • In a large saucepan, add vegan butter and garlic over medium heat. Sauté garlic for 1-2 minutes, until butter is just melted.
  • Sprinkle flour into the pan and stir just until the flour is incorporated into the butter. Slowly add in the coconut milk and vegetable stock; use a whisk to stir away clumps and combine ingredients.
  • Whisk until the mixture comes to a low boil then starts to thicken a bit. Add two tablespoons of hot starchy pasta water (the water from the pot in which you cooked the pasta) and continue to stir continuously for another minute. The sauce will continue to thicken, so it shouldn't be super thick yet at this point, but it should be thicker than when you started stirring the liquid.
  • Remove from heat and immediately stir in Dijon mustard, 1 teaspoon of black pepper, and nutritional yeast flakes. Stir until the flakes have melted. Add the cooked pasta to the pan and gently toss together with the sauce, coating all of the pasta evenly.
  • Salt and pepper to taste. Garnish with freshly chopped parsley.
