Number Of Ingredients 6

1 tbsp olive oil
2 onions, chopped
2 garlic cloves, crushed
1 tbsp tomato purée
2 x 400g cans chopped tomatoes
1 tsp dried oregano

Steps:

  • Heat the olive oil in a large saucepan, add the onions and cook on a low heat until soft. Add the garlic and tomato purée. Cook for a few minutes then add the chopped tomatoes and oregano. Season generously and simmer for 20 mins, then allow to cool.
  • Store in sterilised jars in the fridge for up to 1 week, or transfer to a container and freeze for up to 2 months.

Extra-virgin olive oil
1 onion, finely diced
2 garlic cloves, minced
2 bay leaves
2 red bell peppers, cored, seeded, and finely diced
2 tomatoes, halved, seeded, and finely diced
1/4 cup chopped fresh flat-leaf parsley
1 (12-ounce) bottle ketchup
1 tablespoon Worcestershire sauce
Sea salt and freshly ground black pepper
3 slices white bread, crusts removed, torn into chunks by hand
1/4 cup whole milk
1 1/2 pounds ground beef
1 pound ground pork
2 eggs
Leaves from 2 fresh thyme sprigs
Salt and freshly ground black pepper
3 to 4 bacon slices

Steps:

  • Preheat the oven to 350 degrees F.
  • Coat a skillet with a 2-count of oil and place over medium heat. Saute the onion, garlic, and bay leaves for a few minutes to create a base flavor. Throw in the red peppers and cook them for a couple of minutes to soften. Now add the tomatoes; adding them at this point lets them hold their shape and prevents them from disintegrating. Stir in the parsley, ketchup, and Worcestershire; season with salt and pepper. Simmer the relish for 5 minutes to pull all the flavors together. Remove it from the heat; you should have about 4 cups of relish.
  • Place the torn white bread in a bowl and add the milk to just barely cover, swish the bread around in the milk and let it sit while you get the rest of the ingredients for the meat loaf together.
  • This is where you get your hands dirty! In a large mixing bowl, combine the ground beef and pork with 1 1/2 cups of the tomato relish, the eggs, and thyme; season with salt and pepper. Squeeze the excess milk from the bread and add the soaked bread to the meat mixture. To test, fry a small "hamburger" patty of the meatloaf until cooked; the patty should hold together but still have a soft consistency. Taste the patty for seasoning.
  • Lightly oil a cookie sheet. Transfer the meat mixture to the center of the cookie sheet and form into a log about 9 inches long and about 4 inches wide. Coat the top of the meatloaf with another 1/2 cup of the tomato relish. Lay the bacon across the top lengthwise.
  • Bake the meatloaf for 1 to 1 1/2 hours until the bacon is crisp and the meatloaf is firm. Rotate the meat loaf while it's baking every now and then to insure that the bacon browns evenly. Remove the meatloaf from the oven and let it cool a bit before slicing. Serve with the remaining tomato relish on the side. Unbelievably moist!

1 bushel of sweet bell peppers
salad oil to cook peppers with
1 gal hunts tomato sauce
2 clove garlic, minced
1 tsp sweet basil
2 bay leaves
1/2 tsp ground cloves

Steps:

  • 1. Remove seed and veins from peppers and cut into strips.
  • 2. Fry peppers in batches in oil until about half cooked.
  • 3. Drain peppers from oil and set aside.
  • 4. Combine ingredients and bring to a boil.
  • 5. Add peppers and cook until tender (about 2 hours on low simmer).
  • 6. After it has simmered, fill clean sterilized jars to within 1 inch of top of jar. Put on cap, screw the band 'fingertip' tight. If too tight, then air cannot escape the jars while boiling or canning process.
  • 7. Process in water bath: Add filled and sealed jars in simmering water inside canner, and then bring up water temperature to a steady rolling boil. Make sure the water level is at least one inch over top of jars too. Also, add lid over canner while processing. Process 35 minutes for pints. Process 45 minutes for quarts. Remove from canner. Let cool in draft-free area (cover with towels to be sure). Let sit for 24 hours to cool down before storing. Check lids to be sure they are sealed. (Press center of lid with your finger. If it moves and makes a "click", the jar is not sealed.)

1 onion, minced
1 (6 ounce) can tomato paste
2 (10.75 ounce) cans condensed tomato soup
2 ½ cups water

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a large skillet over medium heat, cook ground beef with onion until meat is brown. Drain. Return meat mixture to pan with tomato paste, tomato soup and water. Cook, stirring, until heated through and thickened, 5 to 15 minutes. Serve over cooked pasta.

3 tablespoons extra virgin olive oil
4 cloves garlic, slivered
2 large onions, sliced
1 large green bell pepper, sliced
2 tablespoons extra-virgin olive oil
1 ½ pounds extra lean ground beef
2 (4 ounce) cans button mushrooms, drained
1 (16 ounce) jar spaghetti sauce with garlic
3 (8 ounce) cans tomato sauce
1 (6 ounce) can tomato paste, or to taste
1 tablespoon instant coffee granules
1 cup hot water

Steps:

  • Place 3 tablespoons of olive oil into a saucepan over medium heat, and cook the garlic in the oil for 1 minute. Stir in the onions, and cook until translucent, about 5 more minutes. Stir in the green bell pepper, and cook until the pepper begins to become tender, about 5 more minutes. Set the vegetables aside.
  • Place 2 tablespoons of olive oil into a large saucepan over medium heat, and cook and stir the ground beef until the meat is no longer pink, about 10 minutes. Break the meat up into crumbles as it cooks. Mix in the mushrooms, spaghetti sauce, tomato sauce, tomato paste (if you prefer a thicker sauce), and vegetables. Bring the sauce to a boil, and reduce heat to a simmer. Cook, stirring occasionally, until the flavors have blended, about 30 minutes.
  • Mix the coffee granules into the hot water, and pour into the sauce; simmer for 30 more minutes.

2 (28 ounce) cans tomato sauce
1 1/2 lbs meatballs (precooked) or 1 1/2 lbs ground beef (cooked & drained)
1/2 cup onion, diced
2 garlic cloves, minced
1 tablespoon italian seasoning
1 teaspoon salt
1/2 teaspoon ground black pepper
1/4 cup grated parmesan cheese
1 tablespoon sugar
1 tablespoon extra virgin olive oil (optional)

Steps:

  • Combine all ingredients in crock pot.
  • Cook on high for 3-5 hours or low for 6-8 hours.

MY DAD'S TOMATO SAUCE (OR RED SAUCE A LA DAD)

3 tablespoons of good olive oil (do not substitute for lesser quality oil)
1 medium onion, chopped fine
2 large (but not institutionally large) cans of whole tomatoes (cut the woody ends off if you see any)
1 lb whole chicken parts (thighs are good)
2 fat cloves of chopped garlic (cloves, NOT whole garlic bulbs)
2 cans of premium tomato paste (6oz cans)
Fresh Italian basil, oregano and mint to taste
salt and pepper to taste

Steps:

  • In a large heavy thick bottomed pan; take a bit of olive oil and heat it up, but don't burn it. Add some chopped onion. When the onion is sort of clear and fragrant add whole canned tomatoes. Add raw chicken parts and cook and cook and cook until the chicken completely cooked through, but not falling apart. Remove the chicken from pan, mash the tomatoes with a hand held manual potato masher, then keep on cooking until tomatoes are sort of dry and dark in color. This will take a long time. Don't get impatient. You'll need to stir a lot to keep from burning near the end, because it will have reduced to a cup or so of solids. The amount of time it takes to get to this stage depends on how many cans of tomatoes you used. But the idea is to go slow and long. Once you have reduced it to almost DRY without burning, add water to approximately the same level as where you started out with the tomatoes. Gently stir smooth and add one can of tomato paste per can of whole tomatoes. Bring slowly up to simmer again and add cooked chicken back just to reheat it. Then add chopped garlic, cook for just a few minutes (overcooking here will mush the chicken and take the flavor from the garlic, so just cook until the garlic bits are tender ). Remove from heat add fresh Italian basil and either fresh or dried oregano and mint, to taste. Salt and pepper is optional (if the canned tomatoes had salt added, don't put more in) La Voila

1 lb ground beef

16 ounces tomato sauce
1 cup sour cream
8 ounces cream cheese, softened
6 green onions, minced
1 cup cheddar cheese, grated

Steps:

  • Heat oven to 350°F.
  • Spray 2-3 quart casserole with non-stick cooking spray.
  • Cook noodles as directed on package.
  • Brown beef with garlic until cooked through.
  • Drain.
  • Add salt, sugar and tomato sauce and simmer for 5 minutes.
  • Combine sour cream, cream cheese and onion.
  • Layer 1/2 of the noodles then 1/2 of the meat mixture in casserole dish.
  • Spread with sour cream mixture.
  • Top with remaining noodles and the tomato sauce.
  • Bake for 30 minutes.
  • Sprinkle grated cheese on top and bake for another 5 minutes.
  • ENJOY!
