HOT MILK CAKE

Steps:
- Preparation: Heat oven to 350 F. Generously butter a 9 x 3 inch round cake pan. Set aside.
- In a large bowl sift together flour, baking powder, and salt. Set aside.
- In a stand mixer fitted with a whisk attachment, beat eggs, egg yolk and sugar until mixture is thick and batter falls from whisk in a thick ribbon about 4-5 minutes. Beat in vanilla.
- In the meantime, heat milk and butter until just scalding and little bubbles appear around the edge of the pan. Remove from heat and set aside to cool slightly.
- With the mixer off, pour all the flour mixture into the egg mixture. Gently fold until no flour streaks are visible (do not over mix). Add in milk mixture and fold just until combined. Pour batter into prepared pan.
- Bake for 50-60 minutes or until inserted cake tester is free of wet batter. Remove cake from oven and transfer to a wire rack to cool for 25 minutes before turning over to remove cake from pan. Sprinkle with confectioner's sugar or serve with a fruit compote.
DAD'S POUND CAKE
My father-in-law used to make this pound cake for the holidays every year. It is so moist and one you can't put down. He used to make this in the bakery loaf pans that are like 2 loaves long.

- 2. Mix all ingredients well, till smooth, pour into pan. Bake for 1 hour and ten minutes, let cool on rack in pan for 5 minutes then turn out on rack and let cool 20 minutes, wrap in foil to hold moisture in. Serve warm or cold.

- 1. Pre-heat oven to 350 degrees.
- 2. Grease and flour a 10 inch tube pan.
- 3. Measure butter, sugar, eggs, and vanilla extract into a large mixing bowl. Blend for 5 minutes on high speed with an electric mixer.
- 4. Mix flour with baking powder and salt. With the mixer on low speed, blend flour mixture with butter mixture, alternating with evaporated milk.
- 5. Pour into prepared pan, and bake for 1 hour and 10 minutes, or until a tester comes out clean.
- 6. When cake is done, let it cool in pan for 20 minutes before removing. Sprinkle with powdered sugar and enjoy!
POUND CAKE

- Preheat the oven to 350 degrees F. Grease and flour a tube pan.
- Cream the butter and shortening together in a standing mixer fitted with a paddle attachment, starting at the slowest setting and increasing to a medium speed after 3 or 4 minutes. Cream on this setting until done.
- Add the sugar a little at a time. Add the eggs, 1 egg at a time, mixing after each addition, until well incorporated.
- In a mixing bowl combine the flour, baking powder and salt, and mix with a wire whisk until thoroughly combined.
- Reduce the stand mixer setting to the lowest speed. Start adding a little of the dry ingredient mix followed by some milk. Alternate the dry ingredients and the milk ending with dry ingredients. Then add the vanilla extract.
- Pour the batter into the prepared tube pan and bake until a toothpick inserted into the center of the pound cake comes out clean, 1 hour to 1 hour 30 minutes.
- Remove the pound cake from the oven and let it cool down for 3 to 5 minutes.
- Gently flip tube pan over to remove the cake, and cool the pound cake on a wire rack. If the pound cake cools too long while still in the tube pan, it might break or not come out.
- Cool the cake for 30 minutes before dusting with confectioners' sugar. Serve the same day or lightly toasted the following day.
MOM'S FAMOUS POUND CAKE
This is my dad's all time favorite cake-he wants it for his birthday, Father's day--any excuse will do! Another cake my relatives ask my mom to make for them in lieu of Christmas gifts! It is a family favorite!!

CLASSIC POUND CAKE

- Place a rack in the lower third of the oven and preheat to 350 degrees F. Butter and flour the pan of your choice.
- Sift the flour and salt into a medium bowl and set aside. Whisk the whole eggs, yolks, milk, and the vanilla together in a 4-cup measuring cup or bowl, and set aside. In a heavy duty mixer fitted with the paddle attachment, beat the butter at a medium speed until smooth, about 1 minute. Gradually pour in the sugar, 1/4 cup at a time, to cream and lighten the butter. (This should take about 3 minutes.) Once all the sugar is added, turn the machine off and scrape down the sides of the bowl and paddle with a rubber spatula. Continue to beat the butter mixture until light and fluffy, about 4 minutes. Add the lemon zest and beat for 30 seconds more.
- Turn the machine off and scrape the sides of the bowl again to assure even incorporation of the ingredients. Turn the mixer to its lowest setting. Gradually pour in the flour, 1/4 cup at a time, and beat the batter for 30 seconds. Gradually add the egg mixture. (It should take about a minute to pour all of it into the batter.) Remove the bowl from the mixer, scrape any batter off the paddle, and finish stirring the egg mixture into the batter with a rubber spatula. Take care not to over mix the batter, but make sure that you scrape the bottom of the bowl to evenly incorporate all of the ingredients.
- Spoon the batter into the prepared pan and smooth over the top with a spatula. Put the cake in the oven and reduce the temperature to 325 degrees F. Bake until a toothpick inserted into the center comes out clean, and the top springs back when lightly pressed, about 1 hour and 30 minutes, for the tube or Bundt pans; and 50 minutes to 1 hour for loaf pans.
- Cool the cake, in the pan, on a rack, for 10 to 15 minutes. Invert the cake onto a flat plate or cardboard. Re-invert the cake and set it right side up on the rack to cool completely. If not serving the same day, wrap in plastic wrap and store at room temperature, for 4 to 5 days or freeze for 1 month.
MOOSEWOOD POUND CAKE
This is a rich and delicious pound cake from the Moosewood Cookbook. I have made this in a bundt pan or in two loaf pans.

- Preheat oven to 350.
- Cream together butter and sugar with an electric mixer at high speed till light and fluffy.
- Add eggs, one at a time, beating well after each.
- Sift together dry ingredients.
- Mix together milk and vanilla extract.
- Add dry and wet to butter mixture alternately, beginning and ending with dry. Mix by hand, using a rubber spatula or wooden spoon, after each addition.
- Mix thoroughly, just enough to blend.
- Pour into buttered and floured tube or bundt pan (or two loaf pans). Bake 1 hour, or till toothpick inserted into center comes out dry.
- After the cake cools ten minutes, turn out onto a plate.
- Cool completely before you slice it.

- Cake:Preheat oven to 325 degrees. Spray a 12-cup nonstick bundt pan with cooking spray. In a medium bowl, whisk boiling water into cocoa powder until smooth; whisk in sour cream. In a large bowl, whisk together flour, salt, baking powder, and baking soda. Using an electric mixer, beat butter and sugar until light and fluffy. Beat in eggs, one at a time, until incorporated. Then beat in vanilla. Add flour mixture in three additions, alternating with 2 additions of cocoa mixture and beat until combined. Stir in chocolate chips.
- Scrape batter into prepared pan and bake until tops springs back when lightly touched, 1 hour to 1 hour 15 minutes. Transfer to a wire rack set over a parchment paper lined baking sheet. Let cool 15 minutes, then turn our onto rack and let cool completely.
- Glaze:Bring cream to a boil in a medium pot. Add chocolate and let stand 5 minutes. Add salt and stir until smooth. Let stand 10 minutes, then pour over cake allowing the glaze to drip down sides and cover cake. Let set 3 hours at room temperature or 1 hour in refrigerator.
