- Preheat oven to 350°. In a large bowl, cream butter, shortening and sugars until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Combine flour, salt and baking soda; gradually add to creamed mixture and mix well. Stir in chocolate chips and nuts. , Form dough into 1-1/2-inch balls and place on ungreased baking sheets. Bake until golden brown, 10-13 minutes. Remove from pans to wire racks to cool.

DAD'S FAVORITE OATMEAL CHOCOLATE CHIP COOKIES
Part crunchy, part chewy, all mouth watering. It is hard to keep these from disappearing. I use organic flaked coconut for a different texture but regular shredded coconut works well too.

Steps:
- Preheat oven to 350°F.
- Cream butter and sugars together.
- Beat in egg.
- In a separate bowl, mix baking powder, baking soda, coconut, oats and flour.
- Add creamed ingredients to dry and mix well.
- Add chocolate chips.
- Drop by the tablespoon full onto ungreased cookie sheet.
- Bake for 10-15 minutes until golden brown.
- Cool on cookie sheet for a few minutes before removing to wire rack.
- Dip in cold milk for full effect and enjoy!

DEATH BY CHOCOLATE COOKIES

- Prepare a grill for indirect heat. If using a charcoal grill, build the hot coals on one side only. If using a gas grill, heat one side only to medium-high heat.
- Whisk together the butter, both sugars, vanilla and salt in a large bowl. Whisk in the baking powder, baking soda and chocolate pudding. Add the eggs, one at a time, using a wooden spoon to mix well after each addition. Stir in the flour, chocolate chips and pretzels.
- Lightly spray a 1/2-cup measuring cup with cooking spray. Fill the measuring cup with dough, pressing it in until the dough takes on a biscuit shape. Unmold the biscuit into a cast-iron pan and repeat with the remaining dough until you have 8 cookies.
- Place the skillet over indirect heat, close the grill and bake, about 30 minutes (see Cook's Note).
- Remove the pan from the grill and sprinkle the cookies with flaky sea salt. Serve with scoops of frozen whipped topping.
- (Alternatively, you can bake these in a 350 degrees F oven for 25 to 30 minutes.)

- Grease cookie tins.
- Preheat oven to 375°F (190°C).
- Beat butter, eggs, sugar and vanilla together until they are light and fluffy.
- Sift flour with baking powder, soda and salt and stir them into the first mixture. Blend well.
- Stir in coconut and rolled oats.
- Drop by heaping teaspoonfuls onto cookie sheets and bake for 10 minutes.
- Cool on wire racks and store in tightly covered cookie tins.

TOLL HOUSE CHOCOLATE CHIP COOKIES
In the 1930s, Ruth Wakefield, the inventor of the chocolate chip cookie, ran the Toll House Inn, a popular restaurant in eastern Massachusetts, with her husband. Using an ice pick, Wakefield broke a semisweet chocolate bar into little bits, mixed them into brown-sugar dough, and the chocolate chip cookie was born. In 1939, she sold Nestlé the rights to reproduce her recipe on its packages (reportedly for only $1) and was hired to write recipes for the company, which supposedly supplied her with free chocolate for life. This recipe is very close to Mrs. Wakefield's original (hers called for a teaspoon of hot water and 1/2-teaspoon-sized cookies), and the one you'll still find on the back of every yellow bag of Nestlé chocolate chips.

One of Grandma Dorothy's much sought after recipes. These oatmeal cookies are wonderfully chewy and are made with oil instead of butter or margarine so they appeal to the heath conscious. One is never enough!

- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a large bowl, stir together the flour, baking soda, salt, white sugar, brown sugar, oats and coconut. Make a well in the center and pour in the oil, eggs and vanilla. Mix well using your hands or a wooden spoon. Roll the dough into walnut sized balls and place 2 inches apart onto the prepared cookie sheets. Flatten slightly with a fork.
- Bake for 10 to 12 minutes in the preheated oven, cookies should be a very light brown and chewy - not crisp. Cool for a couple of minutes on the baking sheets before removing to wire racks to cool completely.
