My dad would stop at our local store's deli each holiday just to purchase the dried beef cheese ball he loved. One year after tasting a similar style, I decided to mix the two together and came up with this dip. It is in honor of my dad who 'had to have' his cheese ball every year! This version is now a staple at all our family gatherings! Serve with crackers or bagel chips. You can use low-fat or fat-free versions of the cream cheese, sour cream, and cheddar cheese to lower calories and fat. I would not recommend fat-free cheddar cheese though.

1 (16 ounce) container sour cream and chive dip
1 (16 ounce) container sour cream
2 (8 ounce) packages cream cheese, softened
¼ cup chopped green onion, or more to taste
1 (2 ounce) package dried beef, cut into squares
1 (8 ounce) package shredded mild Cheddar cheese

Steps:

  • Mix the sour cream and chive dip, sour cream, and cream cheese together in a large bowl.
  • Fold the green onion, dried beef, and Cheddar cheese into the cream cheese mixture.
  • Cover dip with plastic wrap and refrigerate until set, at least 1 hour.

This was made on Giada DeLaurentiis small bite show in 2009 and it wasn't on Food.com so posting it for safe keeping and for easy access to make it for this year's Super Bowl Game. Best if the dip/sauce is made a day or 2 in advance to allow the flavors to blend. I added garlic and onion powders to the dip and also add more bacon then her original recipe.

4 whole wheat pita bread, halved (pita bread of your liking)
2 tablespoons olive oil
1 teaspoon dried oregano
1/2 teaspoon kosher salt, plus extra for seasoning
1/2 teaspoon fresh ground black pepper, plus extra for seasoning
6 slices bacon, cooked until crisp, finely chopped
8 ounces mascarpone cheese, at room temperature (1 cup)
3/4 cup sour cream
1/4 cup fresh chives, chopped
1/2 teaspoon garlic salt
1/2 teaspoon onion powder

Steps:

  • Place an oven rack in the center of the oven and preheat to 450 degrees F.
  • Cut each pita half into 4 wedges. Arrange the pita wedges in a single layer on a baking sheet. Brush with the oil, then sprinkle with the oregano, salt and pepper. Bake for 5 to 8 minutes until crisp and golden.
  • In a medium bowl, combine the bacon, mascarpone cheese, sour cream, and chives. Season with salt and pepper, to taste. Transfer the dip to a serving bowl.
  • Arrange the pita chips and dip on a platter and serve.

I love dried beef dip, and came up with this one after trying several different ones. I think I have come up with a list of ingredients that compliment each other, and don't overpower. I hope you enjoy.

8 ounces cream cheese
3 ounces dried beef
1 ounce black olives
2 ounces red onions
1 teaspoon soy sauce
1 teaspoon lemon juice

Steps:

  • Soften the cream cheese in the microwave 1 minute at a time on low setting, until it can be stirred.
  • Finely chop the beef.
  • Finely chop the olives and onion. (I use a hand chopper).
  • Mix all ingredients in a medium bowl.
  • Cover and let stand a few hours or overnight.
  • Serve chilled, or at room temperature, with your favorite dip crackers.

125 ml tomato sauce
2 garlic cloves, crushed
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 tablespoon olive oil
1 -2 drop red Tabasco sauce (optional)
8 about 900g small chicken drumsticks
65 g sour cream
65 g whole-egg mayonnaise
2 tablespoons coarsely chopped fresh chives

Steps:

  • Combine the tomato sauce, garlic, sugar, Worcestershire sauce and oil in a small bowl. Stir in the Tabasco, if desired. Place the drumsticks and tomato-sauce mixture in a large glass or ceramic bowl and toss to coat. Cover with plastic wrap and place in the fridge for 30 minutes to develop the flavours.
  • Preheat oven to 200°C Line a large baking tray with foil. Place a wire rack on the prepared tray. Remove the drumsticks from the marinade and reserve marinade. Arrange drumsticks, in a single layer, on the wire rack.
  • Get a grown-up to: Bake in oven, brushing with the reserved marinade halfway through cooking, for 40 minutes or until brown and cooked through.
  • Meanwhile, combine the sour cream, mayonnaise and chives in a small serving bowl. Cover with plastic wrap and place in the fridge until required.
  • Divide drumsticks among serving bowls and serve with the chive dip.

  • Chop bacon in food processor.
  • Then cook in sauté pan until fully cooked, drain on paper towels and cool.
  • De-stem and chop parsley in food processor, reserve.
