RED POTATO SALAD
This pretty red potato salad has great flavor. Goes well with a summer barbeque, or anytime! For a tangy twist, try using plain fat-free yogurt in place of some or all of the sour cream. Garnish with additional sliced hard-boiled eggs, if desired.

- Place the potatoes in a pot with enough water to cover. Bring to a boil, and cook for about 10 minutes, or until easily pierced with a fork. Drain, and transfer to a large bowl to cool.
- In a medium bowl, mix the sour cream, mayonnaise, mustard, vinegar, eggs, pickle, celery, green onions, and hot sauce. Season with dill, garlic powder, onion salt, salt, and pepper. Pour over the potatoes, and gently toss to coat. Chill at least 3 hours in the refrigerator before serving.

RED POTATO SALAD

- Slice the potatoes 1/3-inch thick and put in a saucepan with 1 teaspoon of the salt, the water, and the wine. Tie the parsley stems, peppercorns, and thyme in a piece of cheesecloth and add to the pot. Bring to a boil over high heat and immediately lower the heat to maintain a gentle simmer. Cook until the potatoes are tender but not mushy, about 12 minutes. Drain; discard the herb bundle and transfer the potatoes to a bowl.
- While the potatoes are cooking make the dressing. In a small bowl, whisk together the vinegar, parsley, shallots, the remaining 2 teaspoons of the salt and pepper. Gradually whisk in the oil to make a dressing. Toss the warm potatoes with the dressing gently so as not to break up the potatoes. Allow the salad to sit at room temperature for 1 hour to marinate, tossing several times to coat the potatoes. Season with salt and pepper, to taste. Serve at room temperature.

DADDY'S RED POTATO SALAD
Much lighter than mayonnaise based potato salad

Steps:
- 1. Boil potatoes till soft but not too soft. Put them in ice water to stop the cooking process. With skin on cut them into chunks. Add olives and tomatoes and onion.
- 2. In another bowl whisk olive oil, vinegar and spices. Taste for your preference and adjust.
- 3. Pour over potato mixture and mix well. Best if served at room temp.
BIG DADDY POTATO SALAD

- Add the potatoes to a large pot of cold water. Bring it to a boil over medium heat and add salt, to taste. Cook until tender, about 10 minutes. Drain and let cool.
- In a large serving bowl, whisk the mayonnaise and mustard with the shallots, jalapenos, parsley and salt and pepper. Add the potatoes and toss them with the mayonnaise mixture.

- Bring a large pot of water to a boil. Add the potatoes and cook until tender, about 15 minutes. Drain the potatoes and spread out on a sheet pan to cool. Meanwhile, bring a separate pot of water to a boil. Carefully add the eggs; cook for 12 minutes, then remove to a bowl of ice water to cool completely. Peel the eggs under cold running water, then roughly chop.
- In a large bowl, combine the onion, celery, relish, Worcestershire sauce, hot sauce, 1 1/2 teaspoons salt, 1 teaspoon pepper and the mayonnaise. Fold in the potatoes, eggs and scallions. Adjust the seasoning to taste.

- 1. BOIL POTATOES IN A LARGE POT OF WATER TILL TENDER. DRAIN AND LET COOL. BOIL 6 EGGS IN A COOKING PAN FOR 10 MINUTES. WHEN DONE, QUICKLY POUR OFF WATER AND RUN UNDER REALLY COLD WATER. PEEL AND SET ASIDE.
- 2. WHILE POTATOES ARE COOLING, SLICE CELERY AND CHOP ONIONS. CUT EGGS INTO MEDIUM SIZE PIECES. CUT COOLED POTATOES AND ADD TO A LARGE BOWL WITH EGG, CELERY, ONION & SALT/PEPPER.
- 3. COMBINE IN A MASON JAR MIRACLE WHIP, MUSTARD, VINEGAR AND SUGAR. SHAKE IT UP AND TASTE. IT SHOULD HAVE A SWEET VINEGAR TASTE. POUR OVER POTATO MIXTURE. BLEND WELL. REFRIGERATE TILL READY TO SERVE.
