SPINACH AND TOMATO DAL (INDIAN LENTIL SOUP)



Spinach and Tomato Dal (Indian Lentil Soup) image

This is a basic dal (Indian lentil soup) recipe that my mom always makes. You can substitute different vegetables and greens and follow similar procedure. This is a hearty and healthy dish that leaves you satisfied without overfilling you. You can substitute spinach for other dark greens like mustard greens, kale, or swiss chard. The cook time will vary. Serve with steamed rice.

1 cup red lentils
4 cups water
1 teaspoon salt, plus more for seasoning
3 tablespoons vegetable oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 onion, chopped
2 cloves garlic, minced
1 pinch ground turmeric
1 bunch spinach, chopped
1 large plum tomato, chopped
½ teaspoon cayenne pepper
¼ cup chopped fresh cilantro
water, as needed

Steps:

  • Bring lentils and 4 cups water to a boil in a saucepan. Stir in salt. Reduce heat to medium-low and cook at a simmer 10 minutes. Skim off any scum that forms and continue to simmer until the lentils are tender, about 1 hour.
  • Heat the oil in a separate saucepan. Cook mustard seeds and cumin seeds in hot oil until they start to splatter, 2 to 3 minutes. Add onion, garlic, and turmeric to the seeds; cook and stir until the onion is soft, about 5 minutes. Stir spinach, tomato, and cayenne pepper into the onion mixture; cook until the spinach wilts and the tomato is tender, about 5 minutes.
  • Stir the cooked lentils and cilantro into the spinach mixture; bring to a simmer and cook for 5 minutes. Adjust salt and water to taste and texture preferences.

Pyaz Diye Masoor Dal is a simple Bengali Lentil soup prepared with Red Lentil aka Masoor Dal with Onion.

50g Masoor Dal/ Red Lentil
2 Onion
1 Tomato
3 Green Chili
2 cloves Garlic (Crushed)
1 Tsp. Turmeric Powder
1 Tsp. Salt or to taste
2 Tbsp. Mustard Oil
2 Dry Red Chili
1/2 Tsp. Kalojire/ Kalonji/ Onion Seed

Steps:

  • Wash Masoor Dal two-three times under running water.
  • Take Dal along with half of the turmeric powder and 1/2 Tsp. salt in a Pressure Cooker.
  • Add three cups of water.
  • Attach the lid and put the weight.
  • Pressure cook on medium flame until pressure releases two times (Two whistles).
  • Switch the flame off.
  • Open the lid once the pressure dropped completely.
  • Meanwhile, chop onion and tomato.
  • Heat Oil in a pan.
  • Temper the oil with Onion seed and also dry red chili.
  • Add chopped onion and fry until the onion turns translucent in color.
  • Add chopped Tomato and crushed garlic and cook until tomato soften.
  • Now add Turmeric powder and green chili and also salt.
  • Cook until oil leaves the edge.
  • Now add Boiled dal to it.
  • If required add little water.
  • Cook for five minutes and switch the flame off.
  • Serve Pyaz Diye Masoor Dal hot with steamed rice and a side.

Here is my recipe for dhal based on my many experiences cooking with my friends over the years. We love this served over freshly made basmati rice. Don't skimp on the caramelized onions and garlic - it totally makes this recipe amazing!

1 cup red lentils
3 cups water
1 cup onion, thinly sliced, divided
4 cloves garlic, coarsely chopped, divided
½ teaspoon ground turmeric
1 bay leaf
¾ cup cherry tomatoes
½ teaspoon salt
2 (2 inch) whole serrano chile peppers
1 tablespoon vegetable oil
2 tablespoons chopped cilantro

Steps:

  • Wash the lentils in a strainer. Combine the lentils and water in a saucepan over medium-high heat. Add half of the sliced onions and garlic, reserving the rest for later. Stir in the turmeric, bay leaf, tomatoes, and salt. Add the chiles, leaving them whole to add flavor or cut in half to add heat. When the mixture begins to boil, reduce the heat to a simmer. Cook until the lentils break apart and thicken slightly, about 20 minutes.
  • Meanwhile, in a skillet, heat the vegetable oil over medium heat until the oil shimmers. Add the reserved sliced onions; cook and stir until the onion has softened and turned translucent, about 5 minutes. Reduce heat to medium-low, and continue cooking and stirring until the onion is very tender and dark brown, 15 to 20 minutes more. Stir in the rest of the chopped garlic and cook, stirring constantly, until the garlic is fragrant and tender, about 2 minutes.
  • Pour the contents of the skillet into the cooked lentils and stir. Garnish with chopped cilantro.

1 tablespoon sesame oil (or olive oil)
1 cup onion (white; finely chopped)
2 cloves garlic (finely chopped)
1 tablespoon fresh ginger (finely chopped)
4 cups water (or vegetable broth)
1 cup dried red lentils ( rinsed and picked over )
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground turmeric
1/4 teaspoon ground cardamom
1/4 teaspoon ground cinnamon
1/4 teaspoon cayenne pepper
1 teaspoon salt (or to taste)
2 tablespoons tomato paste
Garnish: dairy-free soy yogurt

Steps:

  • Gather the ingredients.
  • In a 3-quart stockpot or other medium-sized soup pot, heat the sesame oil over medium heat. Once the oil is hot, add the onion, garlic, and ginger. Cook, stirring often, until the chopped onion is translucent, about 6 minutes.
  • Stirring constantly, add the water or broth, lentils, cumin, coriander, turmeric, cardamom, cinnamon, cayenne pepper, and salt. Bring to a low boil, then turn down the heat to low, cover and let the soup simmer for about 20 minutes, or until lentils are very tender.
  • Stir in the tomato paste until well combined. Cook several minutes more, or until the soup is at the desired temperature and consistency, adding more water to the dahl if needed.
  • Garnish with a dollop of dairy-free soy yogurt if desired. Serve hot and enjoy.

2 cups moong lentils (orange colored)
6 cups water
1 tablespoon , 5 spice blend (indian version)
1/2 teaspoon cumin powder
1/2 teaspoon turmeric powder
1/2 teaspoon crushed red pepper flakes
1 teaspoon salt, adjust to desired taste
1 medium onion
3 garlic cloves, chopped
3 tablespoons canola oil
1/2 cup fresh cilantro (optional)

Steps:

  • wash and rinse lentils under running water several times, dumping out gritty water after each rinse.
  • in medium pot boil lentils in 6 cups water for 20 minutes under medium heat, watch for foam that develops and may overflow out of the pot.
  • in frying pan saute onions for 10 minutes or until translucent
  • add garlic and spices to frying pan and sautee for 5 minutes more, careful not to burn garlic.
  • add salt to lentil pot.
  • transfer fried ingredients into lentil pot and let cook together for 5-10 more minutes.
  • add fresh chopped cilantro at the end for an extra fresh taste.

ONE-PAN COCONUT DHAL



One-pan coconut dhal image

Rustle up a versatile coconut dhal. It's the most comforting vegan meal, all made in one pan, and it can also be used as a base to make other curries.

300g red lentils
2 tbsp sunflower oil, plus extra for drizzling
2 onions, finely sliced
4 garlic cloves, crushed or finely chopped
thumb-sized piece of ginger, finely chopped
5 curry leaves (optional)
1 tsp mustard seeds
1 tsp cumin seeds
1 tsp coriander powder
1 tsp turmeric
1 dried red chilli, left whole
1 tbsp tomato purée
400g can coconut milk
coriander leaves, sliced ginger and sliced green chilli, to serve

Steps:

  • Rinse the lentils until the water runs clear, then drain. Heat the oil in a large, shallow pan and cook the onions over a low heat for 10 mins until starting to brown, adding more oil if the pan looks dry. Add the garlic and ginger, and cook for another 30 seconds. Scatter in the curry leaves, if using, and all the spices and cook for a few minutes more, then stir in the tomato purée and cook for a minute longer.
  • Stir in the lentils, ensuring they're well coated in the spices, then pour over the coconut milk and 850ml water. Bring to the boil, stirring occasionally, then simmer for about 30 mins until the lentils are soft and soupy. Scoop out the whole chilli and discard, then season generously with salt. The dhal can now be left to cool, then frozen in portions, or as one batch in a large plastic container. Defrost completely before reheating in a pan over a low heat, adding more water to loosen if needed.
  • Serve with a sprinkling of the coriander, sliced ginger and chilli, and drizzle with a bit more oil.
