1 pound baby carrots
2 tablespoons butter
2 tablespoons honey
1 tablespoon lemon juice
Freshly ground black pepper
1/4 cup chopped flat-leaf parsley

Steps:

  • In a medium saucepan, bring water to a boil. Add salt and then carrots and cook until tender, 5 to 6 minutes. Drain the carrots and add back to pan with butter, honey and lemon juice. Cook until a glaze coats the carrots, 5 minutes. Season with salt and pepper and garnish with parsley.

Number Of Ingredients 6

1 pound carrots, approximately 7 medium, peeled and cut on the bias 1/4-inch thick
1 ounce (2 tablespoons) unsalted butter
Heavy pinch kosher salt
1 cup good-quality ginger ale
1/2 teaspoon chili powder
1 tablespoon chopped fresh parsley leaves

Steps:

  • In a 12-inch saute pan over medium heat, combine the carrots, butter, salt and ginger ale. Cover and bring to a simmer. Once simmering, remove the lid, stir, and reduce the heat to low. Cover again and cook for 5 minutes. Remove the lid, add the chili powder and increase the heat to high. Cook, tossing occasionally, until the ginger ale is reduced to a glaze, approximately 4 to 5 minutes. Pour into a serving dish and sprinkle with the parsley. Serve immediately.

10 carrots (1-1/4 lb.), peeled, quartered lengthwise
1/4 cup KRAFT Balsamic Vinaigrette Dressing
3 Tbsp. brown sugar
1 Tbsp. butter
1 Tbsp. finely chopped fresh parsley

Steps:

  • Cook carrots in boiling water in large saucepan on medium heat 4 to 6 min. or until crisp-tender. Meanwhile, cook dressing, sugar and butter in small saucepan on low heat 3 to 5 min. or until thickened, stirring occasionally.
  • Drain carrots; return to saucepan. Add sauce; stir. Cook 2 to 3 min. or until carrots are heated through and evenly coated with sauce.
  • Sprinkle with parsley.

1/2 cup chicken broth
1/2 cup water
1 tablespoon unsalted butter
1 tablespoon packed light brown sugar
1/2 teaspoon ground cumin
1/2 teaspoon salt, plus more for seasoning
3/4 pound carrots, cut on the bias into coins
1 teaspoon freshly squeezed lemon juice
2 teaspoons minced fresh parsley leaves
Freshly ground black pepper

Steps:

  • In a small skillet, combine the broth, water, butter, brown sugar, cumin, and 1/2 teaspoon salt and bring to a boil over medium heat. Stir until the sugar is dissolved. Add the carrots, reduce the heat and simmer, covered, until just tender, about 4 to 5 minutes.
  • Uncover the pan and let the liquid cook down until it reduces to a glaze, about 2 to 3 minutes. Toss the carrots to generously coat them with the glaze. Stir in the lemon juice and parsley and season with salt and pepper to taste. Transfer to a serving bowl and serve.

5 medium carrots, peeled
1/4 cup coconut oil
2 teaspoons honey
1/4 teaspoon togarashi or cayenne if desired (See Cook's Note)
Kosher salt and freshly ground black pepper
1/8 cup chopped parsley

Steps:

  • Cut the carrots in thirds crosswise. Then cut each piece lengthwise into halves or fourths, depending on the width of the carrots. This should create spears that have at least one flat side.
  • Add the oil to a cast-iron skillet and heat over medium heat. When the oil is hot, place the carrots in the oil cut-sides down and cook without turning until tender, about 6 minutes. The cut sides will be very, very dark. Some may even call it burnt. Don't worry, it'll taste great!
  • Add the honey, togarashi and 1/4 cup of water to the skillet and stir up all the carrots. Cook, stirring constantly, until most of the water has cooked off and the carrots are coated. Season with salt and pepper. Top with the chopped parsley. (This will add a fresh flavor and it looks really pretty.)
  • Serve right away to your impressed and amazed friends!

GLAZED GRILLED CARROTS

These glazed carrots, from Karen and Quinn Hatfield of the Los Angeles restaurant Odys and Penelope, are caramelized and sweetened from a quick hot turn on the grill, then tossed in a salty dressing of soy sauce, balsamic vinegar, garlic and ginger. Turning the carrots often and moving them around on the grill keeps them from burning. And if your carrots are burning but aren't yet cooked through, transfer them to a baking sheet and finish cooking in a 400-degree oven.

1 tablespoon soy sauce
1 tablespoon dark brown sugar
1/2 teaspoon finely chopped fresh rosemary
1/2 clove garlic, cut into paper-thin slices
1 teaspoon freshly grated ginger
2 tablespoons vegetable oil, plus more for the carrots
10 medium carrots, peeled, trimmed and cut in half lengthwise
Salt
1 green onion, thinly sliced

Steps:

  • In a large bowl, whisk together vinegar, soy sauce, sugar, rosemary, garlic and ginger until combined. Whisk in 2 tablespoons oil so dressing emulsifies; set aside.
  • Heat grill to low. Coat carrots with oil and season with salt. Grill carrots, covered, turning as needed to prevent burning, until nicely charred and fork tender, 20 to 25 minutes.
  • When carrots come off the grill, toss them immediately in the prepared dressing. Once they're coated, use tongs to transfer the carrots to a serving platter and garnish with green onion. Drizzle a few spoonfuls of the remaining dressing over the top.

I had to get this recipe from my mother in law as it was the only way my husband would eat carrots. It was then that I discovered why and now it's the only way either of us will eat them!

1/2 lb carrot (baby carrots are the best!)
2 tablespoons butter
3 tablespoons brown sugar

Steps:

  • Place carrots in a saucepan and pour in just enough water to cover.
  • Bring to a boil and simmer until carrots are tender (about 10 minutes).
  • Drain water from pan.
  • Add butter and brown sugar to the carrots and stir to dissolve.
  • Simmer for approximately another ten minutes over medium-high heat until the carrots look glazed (keep up the occasional stirring).
  • I like to sprinkle with a little salt when serving.

  • Heat the oven to 190C/170C fan/gas 5. Tip the carrots into a roasting tin and toss with the sunflower oil and some salt and pepper. Roast for 30 mins.
  • Drizzle the vinegar and honey over the carrots, toss well and return to the oven for a further 20 mins.

3 tablespoons honey
2 tablespoons butter
½ teaspoon vanilla extract
¼ teaspoon white vinegar

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add baby carrots, cover, and steam until tender, 3 to 6 minutes. Transfer to a serving dish.
  • Place honey, butter, vanilla extract, and vinegar in a small microwave-safe bowl and heat on high for 30 seconds in microwave oven; stir until combined. Pour glaze over carrots; season with salt and black pepper.

This is from Jan Karon's Mitford cookbook. I love the walnuts with the carrots. This recipe is easily doubled or halved.

6 cups carrots, sliced 1/4inch
1 1/2 teaspoons salt
1/4 cup brown sugar, plus
2 tablespoons brown sugar
1/2 cup chicken stock
2 teaspoons lemon juice
1 teaspoon lemon zest
fresh ground black pepper, to taste
1/2 cup walnut pieces
1/4 cup unsalted butter, plus
1 tablespoon unsalted butter

Steps:

  • In a nonstick skillet, combine the chicken stock, carrots, salt, and 1/4 cup brown sugar. Bring to a boil. Cover and simmer for about 5 minutes.
  • Uncover and simmer for another 2 minutes. Then stir in 1/4 cup butter and the remaining sugar. Cook on low heat, stirring occasionally for 3 minutes.
  • Remove from heat and add the lemon zest and juice, salt and pepper.
  • Meanwhilce, in a seperate skillet over low heat, melt 1 tbsp of butter and pour in the walnuts. Saute 8-10 minutes until toasted.
  • Combine the carrots and walnuts in a serving dish. Serve immediately.
