1 medium dark-orange sweet potato, peeled, cut into 1/2- to 3/4-inch pieces (2 cups)
3/4 cup dried lentils (6 oz), sorted, rinsed
1/2 cup uncooked natural whole-grain brown rice
1/2 cup chopped red bell pepper
1/2 cup raisins
2 1/2 cups water
2 tablespoons soy sauce
2 teaspoons curry powder
2 tablespoons slivered almonds, if desired

Steps:

  • Heat oven to 375°F. In ungreased 2- or 2 1/2-quart casserole, mix all ingredients except almonds.
  • Cover and bake 1 hour to 1 hour 15 minutes or until rice and lentils are tender. Uncover and stir mixture. Let stand 5 minutes before serving. Sprinkle with almonds.

This is a great meal that we eat here often in the winter time. With some dark bread and maybe a salad it is a really hearty meal, though we have been known to eat just this for dinner. The recipe is adapted from Amy Dacyczyn's "The Complete Tightwad Gazette"

3 cups chicken broth or 3 cups vegetable broth
3/4 cup lentils
1/2 cup brown rice
3/4 cup chopped onion
1 teaspoon italian seasoning
1/4 teaspoon garlic powder (I use more)
1 cup grated cheese (cheddar or a blend is preferable)

Steps:

  • Preheat the oven to 300 degrees.
  • Mix all ingredients except the cheese in a baking dish (I use an 11 x 7).
  • Cover with foil and bake for 1 hour 10 minutes.
  • Then remove the foil, add the cheese, and bake for an additional 20 minutes.

This is a recipe I adopted from Zenith's recipe collection when many unloved recipes were put up for adoption. All of her recipes were very good and this is no exception. Here's what Zenith had to say about this dish: A tasty vegetarian one-pot meal. (If you're not a vegetarian, you may wish to make this with chicken broth.)

1 -2 tablespoon vegetable broth (instead of using oil)
1/2 onion, chopped
3 garlic cloves, minced or put through a press
1/4 teaspoon ground ginger
1/2 teaspoon turmeric
2 -3 teaspoons curry powder, to taste
1 cup brown rice, washed
3/4 cup dried lentils
4 cups water
2 vegetable bouillon cubes
salt
1/3 cup raisins or 1/3 cup currants
1 large tart apple, diced (e.g. Granny Smith)

Steps:

  • Heat the 2 T broth (or you can use oil) in a heavy-bottomed soup pot, saucepan, or Dutch oven and saute the onion with 1 clove of the garlic until it begins to turn translucent.
  • Add the ginger, turmeric, and curry powder and saute for a few minutes longer.
  • Add more broth (or water), if necessary, and the rice, and saute for 2 minutes.
  • Add the lentils, 4 cups water, bouillon cubes, remaining garlic, and raisins and bring to a boil.
  • Cover, reduce the heat, and simmer for 25 minutes.
  • Add the apples and simmer, covered, for another 10 to 15 minutes, or until the water is absorbed.
  • Optionally, serve topped with plain yogurt and some more raisins.

1 onion, chopped
1 green bell pepper, chopped
½ cup dry lentils
½ cup uncooked rice
1 ⅔ cups chicken broth

Steps:

  • In a large saucepan over medium heat, brown the sausage until no pink shows. Stir in the onion and green pepper, and saute until the onions are tender. Stir in the lentils, rice and chicken broth. Reduce heat, cover, and simmer for 40 to 60 minutes.

2 tablespoons extra virgin olive oil
1 small onion, chopped
4 cloves garlic, minced
1 carrot, finely chopped
2 teaspoons ground cumin
1 teaspoon ground coriander
1 1/2 cups uncooked brown rice
3/4 cup brown lentils or 3/4 cup green lentil, rinsed
4 cups water
1 teaspoon salt
1 scallion, chopped
1/4 cup chopped fresh cilantro

Steps:

  • In a big skillet, add olive oil and heat over medium-high heat.
  • Add in the onion, garlic, carrot, cumin, and coriander.
  • Saute, stirring frequently, for 3 minutes or until the onion is limp.
  • Add the rice and lentils; saute fo 2 minutes.
  • Add the water and salt; cover and bring to a boil.
  • Lower heat and simmer about 40 minutes or until the rice and lentils are tender.
  • Fluff mixture with a fork.
  • Stir in the scallion and cilantro.
  • Dry the skillet lid; place a crumpled paper towel over the rice, replace the lid and let stand for 5 minutes before serving.

1 carrot, finely chopped

1 1/2-2 lbs sweet potatoes, peeled and cut into 3/4-inch pieces (2 large)
1/2 cup long grain brown rice
1 -2 tablespoon curry powder
1 quart vegetable broth or 1 quart chicken broth
salt, to taste
black pepper, to taste
maple syrup, for serving

Steps:

  • In large pot or Dutch oven, heat oil over medium high heat. Add celery, carrot, and onion, and cook, stirring frequently, until onions are translucent and vegetables are beginning to soften, 3-5 minutes. Add sweet potatoes, rice, and curry powder. Stir to combine. Sprinkle with salt and pepper. Cook, stirring occasionally, until rice grains are translucent, 3-4 minutes. Pour in vegetable broth. Bring to a boil. Cover and reduce to a simmer. Cook until rice is tender and sweet potatoes are softened, 35 to 50 minutes. Season to taste with salt and pepper.
  • If you prefer a chunky soup, serve immediately. You can also partially puree with an immersion blender, or transfer 2 cups of soup to a regular blender, puree until smooth and stir back into soup. Serve hot with maple syrup drizzled on top.
