Mutter Paneer -- Indian Cheese Curry image

A fabulous vegetarian curry, which I got off a blog, www.route79.com -- taste and fall in love! You can add a finely chopped hot chilli if you want to spice it up.

Provided by Sackville

Categories     Curries

Time 35m

Yield 2-3 serving(s)

Number Of Ingredients 14

250 g paneer cheese, cubed
1 medium onion, chopped finely
1 (400 g) can chopped tomatoes
1 cup frozen peas
2 garlic cloves, minced
1/2 teaspoon ground ginger
1 teaspoon ground coriander
1 1/2 teaspoons garam masala
1 teaspoon turmeric
1 teaspoon ground cumin
1 teaspoon ground black pepper
1 teaspoon salt
oil, for frying
cilantro, chopped (to garnish)

Steps:

  • Put a little bit of oil in a deep, heavy bottomed frying pan and brown the cheese, turning frequently so no sides burn. When it is browned, set aside on a plate.
  • Add more oil, if needed, to the pan and throw in the onions.
  • Let them fry until golden, then add the garlic and spices.
  • Fry some more for a couple minutes, then add the tin of tomatoes and about 1/2 cup of water.
  • Let simmer for about five minutes, then put in the fried cheese and peas and simmer covered over a low heat for about 20 minutes.
  • Check the consistency and simmer some more if needed to bring it down to a thickness you like.
  • Serve with rice and other Indian curries of your choice.

MANGO CURRY CHEESE SPREAD

Mango Curry Cheese Spread image

Easy, delicious, this cheese spread recipe has a touch of curry powder and is topped with mango chutney, dressed up with raisins, dried cranberries, nuts and green onion.

Provided by Jennifer

Categories     Appetizer

Time 15m

Number Of Ingredients 9

8 oz cream cheese ((250g) at room temperature)
4 oz sharp cheddar cheese (shredded or MacLaren's Imperial Sharp Cold Pack Cheddar Cheese)
1/2 tsp mild curry powder (or *see Note 3 below)
3/4 cup mango chutney (or *see Note 2 below)
1/4 green onion (green part only, diced)
1/4 cup currants and/or raisins
1/4 cup dried cranberries
1/4 cup pecans and/or walnuts (chopped)
Shredded coconut (optional, to taste)

Steps:

  • In a bowl with an electric mixer, or the bowl of a stand mixer fitted with the paddle attachment, beat together the cream cheese and cheddar cheese until well combined and fluffy. Add the curry powder and mix in well.
  • Spoon cheese mixture into a 6-inch springform pan or a similar sized dish or bowl. (*You can use any dish that will make the mixture about 1-inch thick). Alternately, you can shape into a 6-inch disc by hand. Cover with plastic wrap and refrigerate at least 2 hours or up to 24 hours, until chilled and firm.
  • Meanwhile, make the topping by combining the topping ingredients and stirring together the ingredients. (*You can use any or all of the topping ingredients you like or have on hand. If you are skipping some, add a bit more of the ones you are using, until you have a thick topping mixture). You can cover and refrigerate separately until ready to serve or use right away.
  • To serve, remove from springform pan, if using. Spoon topping overtop and serve with crackers, apple slices or Naan chips or crisps.

THAI RED CURRY MAC 'N' CHEESE

Thai Red Curry Mac 'n' Cheese image

Provided by Aarti Sequeira

Time 35m

Yield 6 to 8 servings

Number Of Ingredients 12

Kosher salt
1 pound elbow macaroni
5 tablespoons butter
5 tablespoons all-purpose flour
1 (4-ounce) jar Thai red curry paste
2 cups whole milk
2 cups cream (alternatively, use 5 cups whole milk instead of both milk and cream)
8 ounces Monterey Jack cheese, grated
8 ounces Cheddar cheese, grated
3/4 cup panko bread crumbs
2 tablespoons butter, melted
Kosher salt and freshly ground black pepper

Steps:

  • For the mac 'n' cheese: Bring 4 quarts of water to a boil in a large pot. Salt generously, and then add the pasta and cook to box instructions, usually 6 to 7 minutes. Drain.
  • In another large pot, melt the butter over medium-high heat. Whisk in the flour and continue whisking until it deepens in color and releases a light toasted aroma, about 1 minute.
  • Whisk in the Thai red curry paste, and when fully combined, pour in the milk and cream (or all milk, if using). Bring to a boil, whisking constantly, and then turn down to a simmer. Simmer until the mixture thickens, whisking occasionally, about 5 minutes.
  • Off heat, whisk in the cheeses and stir until melted. Add the pasta and toss to combine.
  • Turn your broiler on.
  • For the crumb topping: Toss the panko with the melted butter and season with salt and pepper.
  • To assemble: Pour the mac 'n' cheese into a broiler-safe casserole dish, sprinkle with the bread crumb mixture, and broil until browned, about 1 minute.

CHIP SHOP CURRY SAUCE

Chip shop curry sauce image

A homemade chip shop curry sauce will rival that of any takeaway - and it's not just for chips. You could use it to make katsu curry

Provided by Tom Kerridge

Categories     Condiment

Time 1h20m

Yield Serves 6-8

Number Of Ingredients 12

50g butter
2 large onions, sliced
4 garlic cloves, sliced
thumb-sized piece ginger, peeled and sliced
3 tbsp mild curry powder
1 tsp turmeric
50g raisins
3 tbsp malt vinegar
1 star anise
500ml chicken stock or vegetable stock for vegetarians
2 tbsp cornflour
lemon juice, to taste

Steps:

  • Heat the butter in a large saucepan over a medium-low heat and tip in the onions, garlic and ginger and fry for 12-15 mins until soft but not coloured. Stir in the curry powder, turmeric, raisins, vinegar and star anise, and fry for 1 min more, then pour in the chicken stock, bring to the boil and simmer very gently for 30 mins, stirring so it doesn't catch on the bottom.
  • Lift out the star anise, mix the cornflour with 2 tbsp water and stir into the sauce. Simmer for 5 mins, stirring constantly until you have a thickened silky sauce. Pour into a blender and blitz until smooth, or use a hand blender. Squeeze in lemon juice to taste. Use this sauce to make a curry for your Christmas leftovers whether its sprouts, turkey, or simple roast potatoes. If freezing the sauce, leave to cool, pour into a container and freeze, then defrost and reheat when you're ready to eat.

BASIC CURRY SAUCE

Basic Curry Sauce image

This is a very versatile Indian curry sauce that can be served as a main course with meats and/or vegetables or as a sauce for dipping or to spice up veggie side dishes. It's great over baked potatoes.

Provided by Lom

Categories     Side Dish     Sauces and Condiments Recipes     Sauce Recipes

Time 45m

Yield 32

Number Of Ingredients 16

2 tablespoons peanut oil
1 tablespoon margarine
1 large onion, chopped
1 tablespoon minced fresh ginger root
2 tablespoons minced garlic
1 teaspoon ground cinnamon
1 teaspoon ground black pepper
2 tablespoons ground coriander
2 tablespoons ground cumin
¼ teaspoon ground turmeric
1 teaspoon cayenne pepper
2 tomatoes
2 serrano chile peppers, seeded
½ cup fresh cilantro
½ cup yogurt, whisked until smooth
3 cups water

Steps:

  • Heat oil and margarine in a small skillet or wok over medium high heat. Add onion and saute until very brown, 10 to 15 minutes. (Note: This is an important step; if onion is not cooked well, sauce will taste funny.)
  • Add ginger and garlic to onion and saute for an additional 2 minutes. Process onion/ginger/garlic mixture in food processor until smooth. Do not rinse food processor.
  • Place onion mixture in a large saucepan. Stir in the cinnamon, black pepper, coriander, cumin, turmeric and cayenne pepper and cook over low heat until mixture is thick and has the consistency of a paste.
  • Puree tomatoes, chile peppers and cilantro in food processor until smooth. Add to onion mixture and stir well over low heat, cooking off moisture from tomatoes and cilantro. Add yogurt a little bit at a time, stirring constantly to avoid curdling.
  • Blend the whole mixture in food processor to puree it (for a very smooth sauce). Return to saucepan, add water and increase heat to high; bring sauce to a rolling boil. Cover saucepan and boil for 3 to 5 minutes. Reduce heat and simmer until desired consistency is reached.
  • To serve with meat, cook the meat first separately, then simmer for 5 to 10 minutes in the sauce before serving over rice or with bread. To serve with vegetables, steam raw veggies first 4 to 5 minutes, then simmer for 5 to 10 minutes in the sauce before serving.
