This is a very tasty soup that keeps up to 3 days in the fridge, and freezes well. When you ladle this soup into individual bowls, swirl a dollop of sour cream or yogurt into the soup.

4 Macintosh apples - peeled, cored and chopped
1 tablespoon butter
1 onion, finely chopped
2 cloves garlic, crushed
1 tablespoon curry powder
1 teaspoon ground cumin
1 (15 ounce) can pumpkin puree
4 cups chicken broth
1 cup water
1 teaspoon white sugar

Steps:

  • Melt butter in a large saucepan over medium heat. Add onion, garlic, curry, and cumin; saute, stirring often, until onion is soft and fragrant.
  • Stir in apples, pumpkin, broth, water, and sugar. Bring to a boil, stirring often. Cover, and reduce heat to low. Simmer for 25 minutes, stirring occasionally.
  • Puree soup in a food processor or a blender.
  • Return soup to saucepan; reheat, covered, over low heat.

1/2 cup chopped onion
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons all-purpose flour
1/2-1 teaspoon curry powder
3 cups vegetable broth
1 (15 ounce) can pumpkin
1 (12 ounce) can evaporated milk
1 tablespoon honey
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon ground nutmeg

Steps:

  • In a large Dutch oven, saute mushrooms and onion in butter until tender.
  • Add in flour and curry powder and mix until blended.
  • Gradually add the broth.
  • Bring to a boil; cook, stirring constantly, for 2 minutes or until thickened.
  • Add the pumpkin, milk, honey, salt, pepper, and nutmeg; cook until heated through.

This is an excellent winter soup. Serve with a hearty bread. The first time we made this my father misread the original recipe and we added 2 cans of pumpkin instead of 2 cups. The result was a much thicker soup which we all liked. So for a thinner soup reduce the amount of canned pumpkin.

Steps:

  • Heat olive oil and add mushrooms, and onions. Cook until tender.

2 tablespoons unsalted butter
2 large garlic cloves, minced
1 1/2 tablespoons minced peeled fresh ginger
2 teaspoons ground cumin
1 teaspoon ground coriander
1/8 teaspoon ground cardamom
1 1/2 teaspoons salt
3/4 teaspoon hot red pepper flakes
2 (15 ounce) cans solid-pack pumpkin (3 1/2 cups, not pie filling)
7 cups water
1 1/2 cups reduced-sodium chicken broth (12 fl oz)
1 (14 ounce) can unsweetened coconut milk (not low-fat)
1/4 cup olive oil
2 teaspoons brown mustard seeds
8 fresh curry leaves

Steps:

  • Cook onions in butter in a wide 6-quart heavy pot over moderately low heat, stirring occasionally, until softened, 3 to 5 minutes.
  • Add garlic and ginger and cook, stirring, 1 minute.
  • Add cumin, coriander, and cardamom and cook, stirring, 1 minute.
  • Stir in salt, red pepper flakes, pumpkin, water, broth, and coconut milk and simmer, uncovered, stirring occasionally, 30 minutes.
  • Purée soup in batches in a blender until smooth (use caution when blending hot liquids), transferring to a large bowl, and return soup to pot.
  • Keep soup warm over low heat.
  • Heat oil in a small heavy skillet over moderately high heat until hot but not smoking, then cook mustard seeds until they begin to pop, about 15 seconds.
  • Add curry leaves and cook 5 seconds, then pour mixture into pumpkin soup.
  • Stir until combined well and season soup with salt.
  • Soup can be thinned with additional water.
  • Note: Can be made up to one day in advance. I use the food processor for the chopping of onions, garlic & the immersible blending to puree the soup.

1 can black beans, drained and rinsed
1 cup corn
Optional:

cheddar cheese

Steps:

  • Melt butter in a pot at medium heat. Add onion, cook for 3-5 minutes until softened. Add garlic and ginger and cook for 1 minute. Add curry powder, stir and cook for 1 minute. Add water and bring to a simmer. Add pumpkin, salt and sugar and mix well. Add the remaining ingredients and bring soup to a boil. Reduce heat and simmer for 10 minutes. Serve soup with optional ingredients for more flavor.

CROCK POT SOUTHWESTERN PUMPKIN SOUP (AKA KORMA SOUP)



Crock Pot Southwestern Pumpkin Soup (Aka Korma Soup) image

Almost ridiculously easy to make, this soup is based on a recipe from "S.O.U.P.S. - Seattle's Own Undeniably Perfect Soups" by Michael Congdon and is my absolute favorite soup. Although it is titled as "southwestern," this soup tastes very much like my favorite Indian dish of Chicken Korma, a mild, flavorful, non-spicy curry. I also use the soup as a baking sauce for chicken breasts, thighs, and cubed tofu - very tasty!

1/4 teaspoon whole cloves
2 teaspoons coriander seeds
1/2 teaspoon green peppercorn
1 teaspoon ground cumin
2 teaspoons dried ancho chile powder
1/8 teaspoon dried chipotle powder
1 teaspoon vietnamese ground cinnamon
1 teaspoon garlic powder
1/4 teaspoon fresh ground nutmeg
4 cups vegetable stock
3/4 cup half-and-half
1 (8 fluid ounce) can evaporated milk
1 (29 ounce) can pumpkin puree
1/2 cup pure maple syrup
1 teaspoon kosher salt
grated cheddar cheese, for garnish
toasted cashews, for garnish

Steps:

  • In a hot skillet, toast the cloves, coriander seeds, and peppercorns.
  • Add the ground spices to the whole ones in the skillet- the cumin, chile powders, cinnamon, garlic powder, and nutmeg, and toast the mixture over high heat, stirring occasionally, for about 3 minutes or until the spices begin to smoke.
  • Remove from heat, let cool, and grind together to a powder (an electric coffee grinder works well for this); set aside.
  • Pour the stock, half and half, and evaporated milk into the crock pot; stir well, cover, and turn on high.
  • Put the pureed pumpkin into a large bowl, then add the maple syrup, salt, and the now-powdered spice mixture; use a whisk to incorporate the mixture well.
  • Add the pumpkin mixture to the liquids in the crock pot, whisking it well to make sure there are no lumps.
  • Cover and let simmer on high for 2 to 3 hours.
  • Garnish servings with grated cheddar cheese and toasted cashew pieces.

1 1/4 kg pumpkin, peeled
1 large potato, peeled
400 g tomatoes, pureed or mashed
2 onions, finely chopped
fresh ground black pepper
6 cups chicken stock, hot
1 1/2 teaspoons curry powder
2 teaspoons brown sugar
1/2 cup evaporated low-fat milk or 1/2 cup cream
salt
chopped chives (to garnish)

Steps:

  • Pre-heat the cooker for 20 minutes.
  • Cut pumpkin and potato into small pieces (2-3cm) and place in the cooker.
  • Add tomatoes, onion, pepper and chicken stock.
  • Cover with the lid and cook following the times and settings above in the description.
  • Add the curry powder and brown sugar.
  • Puree in a food processor or blender.
  • Return to the cooker and add the light evaporated milk or cream. Stir well and check seasoning, adding salt if necessary.
  • Reheat but do not boil. Serve sprinkled with chopped chives.

2 cups pumpkin (I prefer the Japanese Kabocha squash) or 2 cups canned pumpkin, no added spice
1 large onion, sliced thin
fresh ginger, There is no need to peel the ginger, Julienne and chop fine 1 ' x 1 ' piece
2 tablespoons olive oil
2 cups pumpkin stock (You may need more. Vegetable juice can be substituted for the pumpkin stock.)
salt
mild curry paste (I think Patak's is best.)
1/4-1/2 cup fresh cream

Steps:

  • Clean pumpkin, then remove thick skin -- I use an electric knife. Cut into large cubes and boil until tender.
  • While pumpkin is cooking, cover and gently saute onion and ginger in oil in a saucepan. If mixture becomes too dry, add a tablespoon or so of juice. Cover, and simmer until onion and ginger are softened.
  • When pumpkin is cooked, drain into a pan and collect the juice.
  • With a potato masher, mash the pumpkin.
  • Add two cups pumpkin to the onion and ginger mixture.
  • Add two cups (or more) of pumpkin juice to this mixture and blend well.
  • Add salt to taste.
  • Add 1 tablespoon of Patak's mild curry paste to the soup and mix well.
  • Stir in the cream.
  • Heat through and serve.
