1/2 cup finely chopped onion
2 teaspoons butter
1/4 teaspoon curry powder
1 tablespoon all-purpose flour
1 tablespoon tomato paste
1/4 cup water
1/2 cup heavy whipping cream
1/4 teaspoon salt
Dash pepper
Dash hot pepper sauce
3/4 pound uncooked medium shrimp, peeled and deveined
Hot cooked pasta or rice
1 tablespoon minced fresh parsley

Steps:

  • In a large skillet, saute onion in butter until tender. Sprinkle with curry powder; cook for 1 minute. Sprinkle with flour; stir until blended. Stir in tomato paste. Gradually stir in water; then cream. , Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Add the salt, pepper and hot pepper sauce. Add shrimp; cook until shrimp turn pink, about 3 minutes. Serve with pasta. Sprinkle with parsley.

This is from a magazine dated September 1977 with a bit of adaption from us. If you don't want to peel prawns about 500 grams cooked prawn flesh will do (DO NOT use shrimp or small cocktail prawns). Have not included chill time. Can take about 45 minutes to peel prawns (that's what I've allowed in preparation time). Originally suggested that you accompany the prawns with rice, pappadoms, sliced pineapple and cucumber, coconut and chutney. We usually have rice and steam vegetables. SUGGESTION if your curry should turn out with a gritty taste then put about 1/2 to teaspoon sugar with your curry powder and cut it through or use a mortar and pestel (blenders/food processors are too big for such a small amount).

1 kg prawns (cooked)
1 cup cream
1/4 teaspoon salt
1 onion
2 garlic cloves
20 g butter
1 -2 tablespoon curry powder
2 tablespoons plain flour
2 cups hot chicken stock

Steps:

  • Shell and devein prawns.
  • Place prawns in a bowl and pour cream over, cover and chill for 1 hour.
  • Chop onion.
  • Crush garlic and add salt.
  • Melt butter in a heavy pan and saute onion and garlic over a low heat until onion is soft but not coloured.
  • Add curry power, still over low heat and cook for about 3 minutes to release aroma.
  • Sprinkle plain flour and continue cooking for 1 to 2 minutes.
  • Remove pan from heat and add chicken stock, whisking until smooth.
  • Return to a higher heat and cook until it boils and thickens.
  • Reduce heat and add prawns with the cream, stirring to mix well together and until prawns are heated through.

500 g tiger shrimp
1 1/2 tablespoons lemon juice
3 tablespoons oil
1/2 onion, finely chopped
1/2 teaspoon ground turmeric
1 cinnamon stick (5 cm piece)
4 cloves
7 cardamom pods
5 indian bay leaves
2 cm gingerroot, grated
3 garlic cloves, chopped
1 teaspoon chili powder
50 g creamed coconut, mixed with
2/3 cup water or 2/3 cup coconut milk

Steps:

  • Peel and devein the prawns, leaving the tails intact.
  • Put them in a bowl, add the lemon juice, then toss together and leave the for 10 minutes.
  • Rinse the prawns under running cold water and pad dry with paper towels.
  • Heat the oil in a heavy based frying pan and fry the onion until lightly browned.
  • Add the turmeric, cinnamon, cloves cardamom, bay leaves, ginger and garlic, and fry for 1 minute.
  • Add the chili powder, creamed coconut or coconut milk, and salt, to taste, and simmer for 2 minutes.
  • Add the prawns, return to the boil, then reduce the heat and simmer for 5 minutes, or until the prawns are cooked through and the sauce is thick.

4 tablespoons extra virgin olive oil
2 tablespoons curry powder
1 tablespoon minced fresh gingerroot
1 medium onion, finely chopped (about 1 cup)
1 large celery rib, finely chopped (about 1 cup)
4 cloves garlic, minced
1 1/2 teaspoons sambal oelek (hot pepper sauce)
1 lb medium-sized shrimp, shelled and deveined
1/2 cup sour cream
1/2 cup coconut cream
2 teaspoons tapioca starch or 2 teaspoons cornstarch
3 tablespoons cold water

Steps:

  • In a large frying pan on medium-high heat, add olive oil, stir in curry powder and cook stirring for about 2 minutes.
  • Add minced ginger and cook for another 2 minutes.
  • Add onion, celery and garlic; cook and stir until onion is translucent, about 3 minutes.
  • Add shrimp or prawns and cook for 2 to 3 minutes or until prawns have just turned pink, (DO NOT OVERCOOK SHRIMP OR PRAWNS).
  • Add sour cream and coconut cream and bring to boil, stirring continuously until smooth.
  • In a small bowl, mix together tapioca starch and cold water until smooth.
  • While sauce is boiling, add tapioca starch mixture in small amounts, stirring continuously until sauce thickens to the consistency of gravy.
  • Serve over cooked rice, pasta of your choice, crisp pappadams or freshly cooked naans.
  • Adjust Sambal Oelek to suit your taste.
  • You can substitute and use whipping cream instead of coconut cream.

3 tablespoons chili powder
1 cup coconut milk or 1 cup coconut cream
5 -6 curry leaves
salt
lemon juice
2 tablespoons curry powder
1/4 teaspoon fenugreek seeds
3 cloves garlic, chopped
1/4 teaspoon ginger, minced
2 lbs green shrimp
1 teaspoon rice flour or 1 teaspoon gravox, to thicken curry (These ingredients are mostly available from any Asian grocery outlet.)

Steps:

  • Method.
  • Clean prawns (shell and de-vein).
  • Gently fry fenugreek and curry leaves in heated oil.
  • Add the onion, garlic, ginger and fry till onions turn golden, continually stirring evenly.
  • Add curry powder, chilli powder and fry for a minute, then turn in coconut milk and ground rice (the ground rice must be blended with a bit of coconut milk), cinnamon, lemon juice and salt, and simmer for 15 minutes, adding the extra coconut milk if needed.
  • Add the prawns, cover and allow to simmer for around twenty minutes.
  • For a'Black Curry' the Curry powder and Chilli powder must be lightly roasted, separately.
  • Add salt and lemon juice to taste.

This recipe is "to die for". Prawns sautéed in fresh garlic and coriander cream sauce. Simple to make. Remember to use lite cream and only half the salt content for a healthier alternative. You can also add extra cream if you like lots of sauce!

500 g green prawns
1 tablespoon butter
1 tablespoon lemon juice
1/2 cup cream
4 garlic cloves
1 tablespoon fresh coriander
1/2 teaspoon salt
1 teaspoon black pepper
2 teaspoons olive oil

Steps:

  • Peel and devein prawns leaving tails on.
  • In a small bowl combine lemon juice, crushed garlic, salt and pepper.
  • In a heavy based skillet, melt butter and olive oil on a medium heat.
  • Once butter has melted add prawns and garlic mixture and increase heat to ensure prawns are cooked quickly.
  • Toss prawns and mixture for 1-2 minutes or until prawns turn pink.
  • Add coriander and toss for a further 30 seconds.
  • Reduce heat. Add cream and stir through.
  • Serve with jasmine rice.

1 kg green prawns
2 ounces butter
1 large onion
1 garlic clove
1 tablespoon curry powder
3 tablespoons plain flour
3 cups water
3 chicken stock cubes
1/2 green apple
1 small banana
salt & pepper
1 tablespoon vinegar
1/4 cup sour cream
2 cups fresh white breadcrumbs
2 ounces butter, extra
2 tablespoons tomato sauce

Steps:

  • Remove back vein & tails from prawns.
  • Heat butter in a pan & add peeled & finely chopped onion, & crushed garlic.
  • Sautégently until onion is golden brown.
  • Add flour & curry powder. Stir 2 minutes; remove pan from heat.
  • Add water, stir until combined.
  • Return pan to heat; stir until sauce boils & thickens.
  • Add crumbled stock cubes, peeled & finely chopped apple & banana, salt & pepper, tomato sauce and vinegar.
  • Reduce heat; simmer covered 30 minutes.
  • Remove lid from pan; simmer further 15 minutes, or until sauce is thick.
  • Press mixture through sieve, return to pan.
  • Add prawns and sour cream.
  • Simmer for 3 minutes.
  • Pour into ovenproof dish.
  • Melt extra butter in pan; add breadcrumbs, stir until combined.
  • Sprinkle over prawns.
  • Bake in hot oven 5 minutes, or until crumbs are golden.
