This is an excellant snack mix for the holidays. We cook up several batches of this every year, package it up, and deliver it to friends and family. It's always a great hit. When cooking more than 2 batches at once I increase the bake time to 60 minutes to compensate for the loss of heat from opening the oven door repeatedly

2 cups Quaker Oatmeal Squares Cereal (Cinnamon or Brown Sugar)
2 cups Corn Chex
2 cups small pretzels
1 cup whole almond
2/3 cup dried cranberries
1/4 cup butter, melted
1/3 cup orange juice concentrate, thawed
3 tablespoons brown sugar (packed)
1 teaspoon ginger
1/4 teaspoon nutmeg
1/8 teaspoon ground cloves

Steps:

  • Preheat Oven to 250 degrees.
  • In a large bowl, combine cereals, pretzels, and almonds.
  • In a small bowl, combine brown sugar and spices. Stir in melted butter and orange concentrate.
  • Pour sugar/butter mixture over cereal mixture and stir to coat evenly.
  • Pour mixture into a greased 13" x 9" baking pan and spread into an even layer.
  • Cook for 50 minutes, stirring every 10 minutes.
  • Remove from oven and stir in dried Cranberries.
  • Cool completely.
  • Store in an airtight conatiner.

6 cups Corn Chex
3 cups Rice Chex
1 can (6 ounces) French-fried onions
2 cups miniature pretzels
1-1/2 cups honey-roasted peanuts
1/3 cup butter, cubed
3 tablespoons honey
2 tablespoons honey mustard
1-1/2 teaspoons curry powder
1 teaspoon garlic powder
1-1/2 cups dried cranberries, divided

Steps:

  • In a large bowl, combine the first five ingredients. Place the butter, honey, honey mustard, curry powder and garlic powder in a small microwave-safe bowl. Microwave, uncovered, on high for 1 to 1-1/2 minutes, stirring every 30 seconds or until mixture is smooth. Pour over cereal mixture and toss to coat., Place half of the mixture in a large microwave-safe bowl. Microwave, uncovered, on high for 2-3 minutes, stirring after each minute. Stir in 3/4 cup cranberries. Immediately spread onto waxed paper; cool completely. Repeat with remaining cereal and cranberries. Store in an airtight container.

This cranberry-orange curd is not only easy to make, it makes the perfect accompaniment to baked goods and pastries over the holidays. If your prefer a smoother texture, press the cranberry mixture through a fine mesh sieve after blending in the food processor. This makes enough to fill a pint jar.

1 medium orange, zested and juiced, divided
⅓ cup water, or as needed
1 (12 ounce) bag fresh cranberries
½ cup white sugar
3 egg yolks
2 tablespoons butter

Steps:

  • Pour orange juice into a measuring cup and add enough water to make 3/4 cup liquid. Pour into a medium saucepan.
  • Add orange zest, cranberries, and sugar and bring to a boil over medium-high heat. Reduce heat to medium-low and cook, stirring occasionally, until cranberries have burst, 8 to 10 minutes.
  • Pour cranberry mixture into a food processor or blender; blend until smooth, 10 to 20 seconds. Reserve 1/3 cup and return remaining cranberry mixture to saucepan over low heat.
  • Whisk egg yolks together in a small bowl. Slowly add reserved cranberry mixture, whisking constantly. Slowly whisk egg-cranberry mixture back into the saucepan and continue whisking for 5 minutes, or until mixture is thickened and the curd coats the back of a metal spoon. Add butter and whisk until melted and fully incorporated.
  • Pour into a sterile jar and allow to cool. Curd keeps in the refrigerator for up to 1 week.

Number Of Ingredients 12

2 cups all-purpose flour, plus extra for loaf pan
3/4 cup sugar
1/2 cup brown sugar
1/2 teaspoon salt
1/2 teaspoon baking soda
1 stick cold butter, cut into pea size pieces, plus extra for loaf pan
1 orange, zested
3/4 cup fresh orange juice
1 orange, peeled, sections removed and diced
1 egg
1 cup dried cranberries
Special Equipment: 9 by 5-inch loaf pan

Steps:

  • Preheat the oven to 350 degrees F.
  • In a food processor combine the flour, sugars, salt, baking soda and butter. Pulse, pulse, pulse until the mixture resembles finely grated cheese. Add the orange zest, juice and the egg. Pulse, pulse, pulse until the mixture is just combined. Remove to a bowl and stir in the diced orange and cranberries.
  • Grease and flour the loaf pan and add the batter. Bake in the preheated oven for 1 hour and 15 minutes. Rotate the pan halfway through the cooking time to insure even cooking.
  • When done let cool for about 20 minutes and remove from loaf pan. Let cool completely before cutting.
  • Yummy!

Use a can of leftover cranberry sauce from Thanksgiving to make the jam swirl topping of this simple cake. It's perfect for breakfast or as an afternoon snack.

½ cup (1 stick) unsalted butter, cut into 2-inch pieces
1 14-oz. can cranberry sauce, jellied or whole berry
3 Tbsp. orange juice
1 Tbsp. orange zest
1 Tbsp. lemon juice
1¼ cup (250 g) granulated sugar
2½ cups (320 g) all-purpose flour
1 tsp. kosher salt
½ tsp. baking powder
¾ tsp. baking soda
½ tsp. ground cardamom
3 large eggs
1½ cups (320 g) plain whole-milk Greek yogurt
1 tsp. vanilla extract

Steps:

  • Place an oven rack in the center of the oven and preheat to 350°F. Line a 13x9-inch baking dish with parchment paper, leaving an overhang on 2 long sides.
  • Cook butter in a small saucepan over medium heat, stirring often, until it foams, then browns, 5-8 minutes. Remove from heat (it will continue to darken). Set aside to cool slightly.
  • Add cranberry sauce to a separate saucepan and smush and stir to break apart. Add orange and lemon juice. Cook over medium heat, stirring frequently (or whisking well if using jellied), until smooth, 2-3 minutes. Set aside to cool slightly.
  • In a medium bowl, combine sugar and orange zest; use your fingers to rub the zest into the sugar until fragrant and the sugar is tinted orange. Add flour, salt, baking powder, baking soda, and cardamom to the bowl; whisk to combine.
  • In a large bowl, whisk together eggs, yogurt, and vanilla until smooth. Add dry ingredients to the wet and stir to just combine; the mixture will be quite thick, like cobbler batter. Add browned butter, scraping in any browned bits from the bottom of the pot; stir to combine.
  • Transfer the batter to the prepared baking dish and spread into a fairly even layer to fill the dish from corner to corner. The batter will be very stiff and not look like enough-this is ok, it will rise big time! Dollop cranberry mixture over the top in big spoonfuls and use a knife to swirl it into the batter. Even if it looks like cranberry is covering most of the top of the cake, it will rise to reveal space between the swirls.
  • Bake until risen and golden brown and a cake tester inserted into the center comes out clean, 45 to 50 minutes. Let cool before using parchment overhang to remove from the pan.

This is so different from any other Chex mix I've tried and so simple to prepare. A co-worker shared this recipe with us after bringing it to a get-together. We all agreed that it made a great holiday munchie. The dried cranberries gives it a festive touch while the orange juice provides a refreshing citrus flavor. Be sure to use concentrate....not juice!

1/2 cup dried cranberries

Steps:

  • Preheat oven to 300 degrees.
  • Mix cereals and almonds in a large bowl; set aside.
  • Microwave butter, brown sugar and orange juice*concentrate* in a 1 cup microwaveable measuring cup, uncovered, on high for 30 seconds; stir.
  • Pour butter mixture over cereal mixture; stirring until well coated.
  • Pour into a large roasting pan.
  • Bake uncovered for 30 minutes; stirring after 15 minutes.
  • Stir in cranberries; cool.
  • Store in an air-tight container or zip-lock bag.

2 cups wheat Chex cereal
1 1/2 cups Corn Chex
1 cup chow mein noodles
1/3 cup shelled pistachios
2 tablespoons butter, melted
2 tablespoons orange juice
2 teaspoons curry powder, however spicy you want
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon dried basil
1 teaspoon orange zest
1/4 teaspoon black pepper
3/4 cup dried cranberries

Steps:

  • Combine cereals, chow mein noodles and pistachios in a large ziptop bag.
  • Combine melted butter, orange juice, curry powder, salt, garlic powder, dried basil, orange zest and pepper in a small bowl.
  • Drizzle butter mixture over cereal mixture in the large bag.
  • Zip the bag closed and toss gently to coat the cereal with the butter mix.
  • Coat a large baking sheet (with sides) with nonstick cooking spray.
  • Spread the cereal mix on the sheet.
  • Bake at 275 for 40 minutes or until golden brown, stirring every 10 minutes or so.
  • Stir in dried cranberries.
  • Cool completely on wire rack and store in an airtight container.
