1 1/2 cups couscous
1 tablespoon unsalted butter
1 1/2 cups boiling water
1/4 cup plain yogurt
1/4 cup good olive oil
1 teaspoon white wine vinegar
1 teaspoon curry powder
1/4 teaspoon ground turmeric
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1/2 cup small-diced carrots
1/2 cup minced fresh flat-leaf parsley
1/2 cup dried currants or raisins
1/4 cup blanched, sliced almonds
2 scallions, thinly sliced (white and green parts)
1/4 cup small-diced red onion

Steps:

  • Place the couscous in a medium bowl. Melt the butter in the boiling water and pour over the couscous. Cover tightly and allow the couscous to soak for 5 minutes. Fluff with a fork.
  • Whisk together the yogurt, olive oil, vinegar, curry, turmeric, salt, and pepper. Pour over the fluffed couscous, and mix well with a fork. Add the carrots, parsley, currants, almonds, scallions, and red onions, mix well, and season to taste. Serve at room temperature.

Curried Couscous With Chickpeas image

This makes a great lunch or snack and is low-fat. Great for bringing to work or school and can be eaten hot or cold. I like it with Braggs sprinkled on top (but I'm known to add braggs to any rice or couscous dish for extra flavour!). Could also add some cooked chicken to make a main dish, maybe with a side green salad or additional steamed veggies.

1 tablespoon olive oil
1 medium onion, chopped
1/2 red sweet bell pepper, chopped
2 garlic cloves, minced
1 cup diced tomatoes with juice
1 cup canned chick-peas (rinsed and drained)
1 cup frozen peas
1 cup frozen corn
1 teaspoon curry powder
1/2 teaspoon cumin
1/4 teaspoon salt
1/4 teaspoon pepper
1 dash red pepper flakes (optional)
1 cup beef broth or 1 cup vegetable broth
1 cup couscous (uncooked)

Steps:

  • In a large pot, cook onion, red pepper and garlic in the olive oil over medium low heat until soft, about 7 minutes.
  • Add tomatoes, chickpeas, peas, corn and spices and continue to cook, stirring occasionally for 5 minutes.
  • Add broth, increase heat and bring to a boil. Stir in couscous, cover, remove from heat and let sit for 6 minutes.
  • Fluff with a fork and serve immediately or pack for tomorrow's lunch!

1 1/2 cups couscous
1 tablespoon unsalted butter
1 1/2 cups boiling water
1/4 cup plain yogurt
1/4 cup olive oil
1 teaspoon white wine vinegar
1 teaspoon curry powder
1/4 teaspoon ground turmeric
1 1/2 teaspoons kosher salt
1 teaspoon fresh ground pepper
1/2 cup grated carrot
1/2 cup minced parsley
1/2 cup dried currant
1/4 cup sliced blanched almond
2 scallions, thinly sliced
1/4 cup diced red onion

Steps:

  • Pour couscous in a large bowl, melt butter in the boiling water and pour over couscous.
  • Cover tightly and set aside for 5 minutes.
  • In a medium bowl, whisk together the yogurt, olive oil, vinegar, curry powder, turmeric, salt and pepper.
  • Fluff the couscous with a fork and pour the curry mixture on top, mixing well.
  • Add the carrots, parsley, currants, almonds, scallions, and red onions.
  • Mix well and adjust seasonings.
  • Serve at room temperature.

Steps:

  • Ina large saucepan, combine chicken broth, raisins, curry powder, and salt and bring to a boil.
  • Remove from heat, and stir in couscous. Cover and let stand for 5 minutes.
  • Fluff with fork and cook uncovered.
  • Combine oil, lemon juice, sugar, and almonds and toss with couscous.
  • Sprinkle green onion over top and serve.

1/4 cup extra-virgin olive oil
3/4 cup finely chopped onion
Kosher salt
1 tablespoon mild curry powder, or more to taste
3 ounces golden raisins (generous 1/2 cup)
12 ounces cooked, skinless turkey, cut into 1/2-inch pieces (2 1/2 cups)
1 1/2 cups cooked or canned, no-salt-added chickpeas
1 1/4 cups homemade or no-salt-added chicken broth
1 cup dried plain couscous
2 tablespoons fresh lemon juice
3 tablespoons finely chopped cilantro
Freshly ground black pepper

Steps:

  • Heat half of the oil in a large nonstick skillet or saute pan over medium-high heat. Once the oil shimmers, add the onion and a pinch of salt; stir to coat, then reduce the heat to medium. Cook, stirring occasionally, for about 4 minutes, so the onion softens. Stir in the curry powder and cook for 2 to 3 minutes, then add the raisins, turkey, chickpeas and 1/4 cup of the broth; mix well and cook for 5 to 8 minutes, until heated through. Transfer to a large mixing bowl. Meanwhile, prepare the couscous according to the package directions, except you'll use the remaining cup of broth instead of water. When the couscous is ready, fluff with a fork as directed, then add to the onion-turkey mixture, along with lemon juice, cilantro and the remaining 2 tablespoons of oil. Taste, and season with salt and pepper; start with 1/8 teaspoon of each and incorporate, adding in the same increment and tasting as you go. The dish is well seasoned when the flavors become bright. Serve warm or at room temperature.
