These delicious little fritters are a great way to use up end-of-summer zucchini and corn! Delicious with raita or plain yogurt with a little chopped mint mixed in.

3 cups shredded zucchini
2 ears fresh corn, kernels cut from cob
¼ cup finely chopped onion
¼ cup all-purpose flour
1 teaspoon curry powder
1 large egg, beaten
salt and ground black pepper to taste
¾ cup olive oil for frying, or as needed

Steps:

  • Squeeze excess moisture from shredded zucchini and combine with corn kernels, onion, flour, and curry powder in a bowl. Stir in egg until thoroughly combined and season with salt and black pepper.
  • Heat olive oil to a depth of about 1/8 inch in a large nonstick skillet over medium-high heat. Drop batter, 1/4 cup at a time, into hot oil and flatten fritters gently with a spatula. Cook until golden brown on both sides, 3 to 4 minutes per side.

Lemon Curry Corn Fritters image

Number Of Ingredients 17

3 tablespoons mild yellow curry powder
1 lemon, zested
1 tablespoon sugar
3 tablespoons olive oil
3 tablespoons water
Pinch salt
1 (16-ounce) bag frozen whole corn kernels, thawed
2 tablespoons olive oil
1 shallot, diced
8 slices pancetta, diced
1/2 cup all-purpose flour
2 tablespoons soy sauce
2 eggs
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
4 scallions, cut into 1/8-inch rounds
Vegetable oil, for shallow frying

Steps:

  • In a small bowl, mix all the ingredients for the curry paste together until smooth and set aside.
  • Cook the whole corn kernels according to bag directions. Drain the water and set aside.
  • Coat a large saute pan with olive oil and heat over a medium-high heat. Add the corn, shallots and pancetta and saute for 4 to 5 minutes, stirring occasionally. Pancetta should be lightly cooked, but not crispy. Remove from the pan and set aside to cool. In a medium bowl, mix the flour, reserved curry paste, soy sauce, eggs and salt and pepper. Stir in the corn mixture and the scallions. If the batter is a little dry, add a touch of water until you get a smooth consistency.
  • In a large frying pan heat enough vegetable oil (about a 1/8-inch) for shallow frying, over medium-high heat. When the oil is hot, (the oil is ready when you drop in a tiny bit of batter and it sizzles immediately) put a large tablespoon or so of the batter carefully into the oil and lightly press flat. Add about 4 more tablespoons, being sure to leave enough space in between each for easy turning. Fry until golden, about 1 1/2 to 2 minutes on each side. Remove the fritters with a slotted spatula to a paper towel lined plate. Pat dry with another paper towel and cover to keep them warm. Repeat until all of the batter is cooked.
  • Arrange the fritters on a serving platter and serve.

1 teaspoon curry powder, or more to taste
1 egg
½ cup soy milk
salt
1 (16 ounce) can whole kernel corn
olive oil for frying, as needed

Steps:

  • Sift flour and curry powder into medium mixing bowl. Form a well in the flour, and carefully mix in egg, milk, and salt. Mixture should be fairly thin, and may require more milk. Whisk until smooth if any lumps exist. Set aside, and let rest for 10 minutes.
  • Coat the bottom of a heavy frying pan with oil, and heat to medium-high. Stir corn into mixture, and drop batter by the spoonful into pan. Fry fritters until golden brown, about 2 minutes per side. Serve hot or cold.

  • Whisk 1/2 cup each pumpkin puree and buttermilk, 1 egg, 1 tablespoon curry powder, 2 teaspoons sugar and 1 1/2 teaspoons kosher salt in a large bowl. Whisk in 1/2 cup each flour and fine cornmeal and 1 1/2 teaspoons baking powder. Stir in 1/2 cup chopped cilantro and 2 chopped scallions. 125 g creamed corn (2-3 tablespoons fresh corn can be substituted)
1/2 small onion, finely diced
1 tablespoon flour
1 egg
1 tablespoon grated cheese

Steps:

  • Mix all the ingredients together in a bowl.
  • Heat up a frying pan.
  • When the pan is hot, spoon the mixture in heaped spoonfuls into the pan.
  • Cook in batches for about 3 minutes each side, or until both sides are golden brown.

400 g creamed corn
1 egg
1/2 onion, finely chopped
1 teaspoon curry powder
1 teaspoon coriander powder
1/2 cup flour

Steps:

  • Preheat oil in a frying pan over a low heat.
  • Mix together the corn, egg, curry powder, coriander, onion. Season to taste with salt and/or pepper.
  • Mix in flour and baking powder.
  • Spoon mixture into frying pan. Flip once bubbles have formed and most of them have popped. Cook other side about the same amount of time.
  • Serve with salad, and salsa or aioli on the side.

2 medium russet potatoes
1 cup cottage cheese
1/2 cup frozen peas, thawed
2 teaspoons curry powder
2 tablespoons all-purpose flour
salt, to taste
1 cup all-purpose flour
3 -4 large eggs
2 cups panko breadcrumbs (Japanese breadcrumbs)
vegetable oil, for frying
mango chutney, for serving

Steps:

  • Prick the potatoes all over with a fork and microwave until tender, 8 to 10 minutes. Peel the potatoes, then transfer to a large bowl and mash with a fork until almost smooth. Mix in the cottage cheese, peas, curry powder, 2 tablespoons flour, and salt. Let cool to room temperature.
  • Meanwhile, whisk the eggs in a shallow bowl. Put 1 cup flour in another bowl and the panko in a third bowl.
  • Form the potato mixture into about 24 golf ball-size portions, then gently flatten into 2-inch patties. Dredge each patty in the flour, shake off any excess, dip in the eggs, then dredge in the panko, turning to coat. Fry the patties in batches in a deep fryer until golden, turning as needed, 1 to 2 minutes. Transfer to a paper towel-lined plate using a slotted spoon. Serve with chutney.
