1 broiler/fryer chicken (3 pounds), cut up
1/8 teaspoon salt
1/8 teaspoon pepper
1 can (29 ounces) sliced peaches
1/2 cup chicken broth
2 tablespoons butter, melted
1 tablespoon dried minced onion
2 teaspoons curry powder
2 garlic cloves, minced
1/4 teaspoon ground ginger
3 tablespoons cornstarch
3 tablespoons cold water
1/4 cup raisins
Toasted sweetened shredded coconut, optional

Steps:

  • Place chicken in a 5-qt. slow cooker; sprinkle with salt and pepper. Drain peaches, reserving 1/2 cup juice; set peaches aside. In a small bowl, combine broth, butter, onion, curry, garlic, ginger and reserved juice; pour over chicken. Cook, covered, on low 3-4 hours or until chicken is tender., Remove chicken to a serving platter; keep warm. Mix cornstarch and water until smooth; stir into cooking juices. Add raisins. Cook, covered, on high 15 minutes or until thickened. Stir in peaches and heat through. Serve with chicken. If desired, sprinkle with coconut.

1 cup uncooked basmati rice
1 pound boneless, skinless chicken breast halves
2 tablespoons Gold Medal™ all-purpose flour
2 teaspoons curry powder
1/2 teaspoon salt
1 medium red bell pepper, cut into 1/2-inch pieces
3/4 cup white grape-peach or apple juice
6 green onions, cut into 1/2-inch pieces (1/2 cup)
2 tablespoons peach preserves
1 medium peach, peeled, sliced and cut crosswise in half

Steps:

  • Cook rice as directed on package.
  • While rice is cooking, cut chicken into 3/4-inch pieces. Mix flour, curry powder and salt in medium bowl. Add chicken; toss to coat. Spray 12-inch nonstick skillet with cooking spray; heat over medium heat. Add chicken; stir-fry 4 to 6 minutes or until brown.
  • Stir in bell pepper and juice. Cover and cook over medium-low heat 5 minutes, stirring occasionally. Add onions; cook and stir 1 minute.
  • Stir in preserves until melted. Stir in peach. Divide rice among bowls. Top with chicken mixture.

1 tablespoon canola oil
4 skinless, boneless chicken breasts, about 1 1/4 pounds
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons brown sugar
2 tablespoons low-sodium soy sauce
2 tablespoons rice vinegar
1/4 cup orange juice
1 teaspoon freshly grated ginger
2 cloves garlic, minced
1/2 cup low-sodium chicken broth
4 large firm-ripe peaches, cut into 1/4-inch slices, or 2 (10-ounce) packages frozen peaches, (about 4 1/2 cups)
2 tablespoons sliced almonds

Steps:

  • Heat the oil in a large skillet over a medium-high heat. Season the chicken on both sides with salt and pepper, add to the skillet and cook until browned, about 2 minutes per side. Meanwhile combine the brown sugar, soy sauce, rice vinegar and orange juice in a small bowl and set aside. When the chicken is browned, transfer to a plate and set aside.
  • Add the ginger and garlic to the pan and cook, stirring, for 30 seconds. Add the chicken broth, the soy sauce mixture, and the peaches to the pan. Turn the heat up to high and cook, uncovered, for about 6 minutes, stirring occasionally until the sauce is nicely thickened and the peaches soften. Add the chicken back to the pan with the sauce, turn the heat down to moderate-low, cover and cook for about 5 minutes, or until chicken is cooked through.
  • In the meantime, toast the almonds in a dry skillet over a medium-high heat stirring frequently, until golden brown and fragrant, about 2 minutes.
  • Serve the chicken topped with the sauce and sprinkled with the toasted almonds.

1/2 lemon, juiced
1 1/2 tablespoons extra-virgin olive oil

1 shallot, chopped
1 (2-inch) piece ginger, grated or minced
3/4 cup chicken stock
2/3 cup peach preserves

Steps:

  • Heat a medium skillet with the butter over medium heat. Add the peaches and the juice of 1/2 lemon, and cook until tender and lightly golden, 10 minutes. Turn off the heat.

Tip: For a delicious sauce to serve over the chicken and peaches, mix 1/2 tablespoon cornstarch with 1/2 cup cold water and pour mixture into cooking juices. This mixture will thicken and become a sauce to pour over the chicken and peaches.

2 lbs chicken breasts
2 fresh peaches, skinned and sliced (reserve 8 slices for garnish)
2 tablespoons lemon juice
2 shallots, thinly sliced

1 teaspoon curry powder
2 teaspoons cumin
1/2 teaspoon whole cloves
3/4 cup chicken stock
1 tablespoon cider vinegar
1 teaspoon cayenne pepper

Steps:

  • Heat the olive oil in a skillet, add chicken and lightly brown (about 3 minutes a side).
  • Transfer chicken to Crock-Pot and top with peaches and shallots.
  • Toss the remaining 8 peach slices with lemon juice and refrigerate.
  • Combine remaining ingredients in a bowl, whisk to combine and pour over chicken.
  • Cook on High for 3 - 3 1/2 hours.
  • When finished garnish the chicken with the reserved peaches.

Steps:

  • Gather the ingredients.
  • Using a sharp knife, cut the chicken breast meat into 3/4-inch cubes. Set aside.
  • Heat oil in a wok or frying pan over high heat (if using a frying pan, use 2 tablespoons of oil instead of 1).
  • Add the onion and stir-fry for 2 minutes until translucent.

1 tomato diced
1/4 cup coconut milk
1 cup water
Sprinkle with ground cumin

Steps:

  • Mix curry, garlic and onion with water. Add to pot with hot oil. Fry for about 2 minutes, then add meat. Fry for a little while. Then add pepper, chives and 1 tomato diced. Fry for a little while again and then add coconut milk. Simmer for about 20 minutes. Keep turning. Have a kettle of boiling water, and add some to pot to make gravy. Sprinkle with ground cumin.
  • This meal is usually served with white rice or roti skins.

1 medium onion, chopped fine

  • When brown on all sides, remove from pan and keep warm.

  • Sprinkle in flour and cook 1 minute.
  • Remove from heat and pour in stock.
  • Add garlic and bring to a boil.
  • Simmer 20 minutes.
  • Return chicken to pan.
  • Cover and cook for 45 minutes or until tender.
  • Transfer chicken to a casserole dish.
  • Strain sauce into a pan.
  • Add coconut milk and red currant jelly and simmer 3 minutes.
  • Stir in heavy cream into curry sauce and thicken if needed with arrowroot made into a paste with 1 Tbsp stock.
  • Add peaches and heat.
  • Pour over chicken.
  • Serve with rice.

¾ cup all-purpose flour
2 teaspoons salt

1 (10.75 ounce) can beef consomme
2 tablespoons ketchup
1 cup reduced fat sour cream

Steps:

  • Combine the flour, salt, pepper, and paprika in a shallow dish. Dredge chicken pieces. Set flour mixture aside.

¼ cup brown sugar
1 tablespoon ground cumin
½ teaspoon ground cardamom
½ teaspoon ground coriander
1 teaspoon ground ginger

½ cup balsamic vinegar
¼ cup peach preserves
½ cup reduced-sodium chicken broth
½ cup orange juice

  • Preheat oven to 450 degrees F (230 degrees C). Grease rimmed baking sheet with non-stick cooking spray.

1 1/2 cups herb-seasoned stuffing cubes
2 whole skinless chicken breasts, each cut in half
1/2 cup plain yogurt
2 large peaches, peeled and halved
to taste cinnamon sugar

Steps:

  • Preheat oven to 375 degrees.
  • In a food processor or blender, reduce the stuffing mix to coarse crumbs. Pour them onto a sheet of wax paper.
  • Coat one piece of chicken breast with yogurt as thickly as possible (admittedly, this is a messy step), then dip it into the crumbs to coat.
  • Lay the chicken in an oiled baking dish large enough to hold chicken and peaches in one layer. Repeat with the remaining chicken.
  • Surround the chicken with the peach halves, cut side down. Sprinkle the peaches (not the chicken) with cinnamon sugar.
  • Bake for 20 minutes, or until the breasts are just cooked through but not dry.

This was a recipe of my mom's that I manipulated in true Byrdhouse form. Everyone loves this one, even the kids if you take it easy with the red pepper. I always serve this on broad, flat noodles.

1 (15 ounce) can peaches, drained and chopped
4 cloves garlic, pressed
1 ½ cups orange juice
2 tablespoons distilled white vinegar
2 tablespoons brown sugar
1 ½ teaspoons nutmeg
½ teaspoon red pepper flakes
2 teaspoons dried basil
salt and pepper to taste
4 (6 ounce) skinless, boneless chicken breast halves - cut into bite-size pieces
2 tablespoons flour
3 tablespoons butter

Steps:

  • Bring peaches, garlic, orange juice, vinegar, sugar, nutmeg, red pepper flakes, and basil to a boil in a saucepan over high heat. Reduce heat to medium-low, and simmer for 15 minutes, stirring occasionally.
  • Meanwhile, season the chicken to taste with salt and pepper, then dust with flour and shake off the excess. Melt the butter in a large skillet over medium-high heat. Add the chicken, and cook until lightly brown on both sides, but still pink in the center.
  • Season peach sauce with salt and pepper, and pour over browned chicken. Return the chicken to a simmer, then reduce heat to medium-low, cover, and simmer 15 minutes more until the chicken is no longer pink in the center.

I first tried this delicious dish at my sister's house and was delighted when she shared the recipe with me. Peaches give ordinary chicken a sweet taste and pretty golden color.

1 broiler/fryer chicken (3-1/2 to 4 pounds) , cut up
Salt and pepper to taste
1/4 cup molasses
3 tablespoons lemon juice
2 tablespoons butter
2 tablespoons finely chopped onion
3/4 teaspoon ground ginger
1 can (28 ounces) peach slices, drained

Steps:

  • Place chicken in a greased 13-in. x 9-in. baking dish. Broil 6 minutes on each side or until lightly browned. Season with salt and pepper. In a small bowl, combine the molasses, lemon juice, butter, onion and ginger; pour over chicken. , Bake, uncovered, at 375° for 30 minutes. Add peaches; baste chicken. Return to the oven for 10 minutes or until chicken juices run clear and peaches are heated through.

½ teaspoon garam masala
¼ teaspoon ground cardamom
¼ teaspoon cayenne pepper
½ teaspoon black mustard seed
½ teaspoon salt

2 (4 ounce) chicken thighs, cut into bite size pieces
2 medium potatoes, diced
2 roma (plum) tomatoes, diced
½ bunch Swiss chard, chopped
1 (8 ounce) container plain yogurt

Steps:

  • In a large skillet, heat oil over medium heat. In hot oil, cook cumin seeds, garam masala, cardamom, cayenne pepper, mustard seeds, salt, and garlic. When seeds start to pop, stir in chicken and potatoes. Cook for 15 minutes, or until chicken is nearly done.
  • Stir in tomatoes, chard, and yogurt. Cover, and cook 15 minutes more, or until potatoes are tender and chicken is cooked through.

2 cups cubed and cooked chicken
3 cups sliced and peeled peaches

  • Combine the first 8 ingredients.

  • Place 4 lettuce leaves on a plate then spoon 2 cups of salad mixture on it, and top with 1/2 tbsp of pine nuts sprinkled.
