BEEF LIVER & ONIONS CURRIED
This is an old Italian recipe that I got from a dear friend of mine, Martin San, and I slightly modified. I guarantee that this will be the BEST liver you've ever tasted! Even people who don't like liver will like this recipe.

Steps:
- Cover bottom of very large skillet with olive oil.
- Slice the onions 1/8 of an inch thick & place into skillet.
- Add 1/4 tsp salt, 1 tsp pepper, 1 tsp paprika & 1 tsp curry.
- Sauté on low heat & covered about 2 1/2 to 3 hours.
- Cut liver into 1 1/2 to 2 inch cubes.
- Place the cubed liver into a plastic bag with 4 tbsp flour, 1/2 tsp salt & 1/2 tsp pepper.
- Shake the bag to fully coat all of the liver.
- In a clean skillet, cover bottom with olive oil & on high heat get the oil VERY HOT!
- Place the liver into the extremely hot oil & sear the liver on both sides.
- Add a little more salt, pepper & curry if needed.
- Add the liver & onions together & fold & serve.
- This could be served, if desired, over either rice, coos coos, polenta or pasta.
- Potatoes are only recommended as a side dish.

Steps:
- In a large resealable bag, combine the flour, salt and pepper; add beef. Seal bag and shake to coat. In a large skillet, brown beef in 2 tablespoons oil; drain. , Add the onions and remaining oil; saute until onions are golden brown. Add garlic; cook 1 minute longer. Sprinkle with curry. Dissolve bouillon in boiling water; pour over beef and onions. Bring to a boil. Reduce heat; cover and simmer for 1 hour or until meat is tender. , Add tomato juice and paste; cook for 5 minutes or until heated through. Serve with noodles or rice.

CURRIED GROUND BEEF
This is a spicy dish that is even better the next day, use only Granny Smith apples or other firm apples or they will get mushy while cooking, Serve this over cooked rice or couscous. Adjust all seasonings to taste.

Steps:
- In a Dutch oven or large skillet heat oil.
- Add in the onions; saute for about 7-8 minutes or until soft, adding in the garlic and ginger the last 2 minutes of cooking.
- Add in the ground beef and cook until browned.
- Add in all remaining ingredients except the apples and water; stir with a wooden spoon; cover and simmer for about 20 minutes.
- Add in the chopped apples and cook uncovered for another 25-30 minutes (or until apples are soft.
- If the mixture is too thick add in some water.
- Season with salt and pepper to taste.
CHINESE CURRIED BEEF & POTATOES
This came from a Chinese friend who was teaching Chinese cooking classes at the time. If you like curry then more curry powder can be used. I prefer it milder as is.

Steps:
- Slice steak thinly across the grain.
- Peel potatoes and cut into 1/2 inch cubes.
- Peel onions, cut into quarters and separate each layer.
- Heat oil in pan or wok, add potatoes, cook 5mins or until just tender but still crisp, tossing occasionally.
- Add onions and curry powder, cook further 2 minutes, remove from pan.
- Heat extra oil in pan, add steak, cook until golden brown on both sides and cooked through.
- Add potatoes, onion and extra curry powder; toss for 2 minutes.
- Add combined sate sauce, chilie sauce, soy sauce, water, stock cube, cornflour and sherry.
- Toss until sauce boils and thickens.
- Reduce heat, simmer 30 minutes or until potatoes are cooked.
- Serve with boiled rice.
CURRIED BEEF WITH POTATOES AND PEAS
Adapted from Cooking Light. My sister made this and brought over for me to taste. I thought it was very good, filling, and healthy. She asked me to post it so here it is. Per serving (1 cup): 310 calories, 9.4 g fat, 25.7 g carb, 4.7 g fiber, 70 mg cholesterol.

Steps:
- Add ground beef and onion to a heated large non-stick skillet over medium-high heat; stir/saute until meat is browned and crumbled.
- Add in peas; stir to combine.
- While the meat is cooking: in another large nonstick skillet, heat the oil over medium-high heat.
- Add in potato; stir/saute for 8 minutes or until lightly browned.
- Add in broth and curry to the potatoes; cook 2 minutes.
- Add potato mixture, chutney, salt, and pepper to meat mixture.
- Simmer for 1 minute.
- Sprinkle fresh chopped cilantro on top if desired.

- Preheat oven to 350 degrees F (175 degrees C). Line a roasting pan with aluminum foil.
- Place the beef into a pan with enough water to cover. Bring to a boil, reduce heat and simmer for 30 minutes.
- Meanwhile, heat the olive oil in a deep pot over medium-high heat. Stir in the ginger, garlic, onions, and celery, and cook until vegetables soften, about 5 minutes. Mix in the curry powder, coriander powder, five-spice powder, and turmeric, and toss to evenly coat the onion mixture. Cook about 5 minutes more, and stir in the carrots, parsnips, potatoes, zucchini, and apples. Stir in the beef with its cooking liquid, raisins, and cashews, and toss to evenly blend the spices.
