Ingredients

4 medium potatoes peeled or just.... scrubbed clean
1/4 c butter, melted
1 clove garlic.......minced
1/3 c grated parmesan cheese
2 green onions...cut up

Steps:

1. Pre-heat oven 400 F. If using a potato, apple peeler: It will peel core and slice potatoes to make long spirals Slice "cores" into 1/4 inch rounds.
2. Place in a shallow 2qt. baking dish, or a baking pan. Melt butter with garlic.
3. Drizzel butter and garlic over potatoes. Sprinkle with parmesian cheese and green onions.
4. Bake for 35-40 minutes, or until potatoes are slightly browned and tender. Maybe some catsup on the side... or scrambled eggs and bacon, for breakfast.

Ingredients

4 medium potatoes
1/4 cup butter or 1/4 cup margarine
1 clove garlic, minced
seasoning (optional)

Steps:

Preheat oven to 400.
Using an Apple/Peeler/Corer/Slicer, core and slice potatoes to create long spirals.
Slice “cores” into ¼” rounds.
Place potatoes in a shallow baking dish that has been lightly sprayed.
Melt butter with garlic.
Drizzle mixture over potatoes.
Sprinkle with what ever seasonings you like.
Examples: grated Parmesan cheese, and finely chopped green onions or garlic salt and pepper or even some of Emeril’s essence.
I double this recipe for my family.
Bake for 40 to 45 minutes.
Potatoes should be tender and slightly crisp.

Combine all ingredients except butter, and spread into baker. Drizzle melted butter over top. Microwave on high for 30 minutes.
