STRAWBERRY COBBLER

Strawberry Cobbler image

Baked with a golden biscuit topping, this springtime dessert makes the most of sweet strawberries. To ensure that the filling sets correctly, be sure to let the cobbler cool completely before serving.

Provided by Food Network Kitchen

Categories     dessert

Time 3h20m

Yield 6 to 8 servings

Number Of Ingredients 13

1/3 cup strawberry jam
1/4 cup cornstarch
1/4 cup granulated sugar
1 tablespoon fresh lemon juice
2 pounds strawberries, hulled and quartered
1 3/4 cups all-purpose flour (see Cook's Note)
1/4 cup plus 2 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon fine salt
6 tablespoons cold unsalted butter, diced
3/4 cup plus 2 tablespoons cold heavy cream
1 teaspoon vanilla extract
Vanilla ice cream for serving

Steps:

  • For the filling: Position a rack in the center of the oven and preheat to 375 degrees F. Whisk together the jam, cornstarch, sugar, lemon juice and 2 tablespoons water in a large bowl until well combined. Add the strawberries and toss gently to coat evenly. Transfer the mixture to a 2-quart baking or gratin dish, using a spatula or the back of a large spoon to gently pack the fruit into an even layer. Set aside.
  • For the topping: Pulse together the flour, 1/4 cup of the sugar, baking powder, and salt in a food processor. Add the butter and pulse until the mixture resembles coarse meal. Add 3/4 cup of the cream and the vanilla and pulse until the dough just starts to come together. Do not over mix.
  • Spread the dough evenly over the strawberries, drizzle with the remaining 2 tablespoons cream and sprinkle with the remaining 2 tablespoons sugar.
  • Place the cobbler on a baking sheet and bake until the topping is lightly browned and the fruit is bubbling, about 1 hour. Let the cobbler cool completely before serving, 2 to 3 hours. Serve with vanilla ice cream.

CUP-O'-COBBLER

Categories     Food & Cooking     Dessert & Treats Recipes

Number Of Ingredients 9

5 ripe peaches, pitted and sliced (4 to 5 cups)
1 cup sugar
8 tablespoons (1 stick) unsalted butter
1 cup all-purpose flour
2 teaspoons baking powder
1/4 teaspoon freshly grated nutmeg
1 pinch of salt
1 cup milk
Whipped cream, for serving

Steps:

  • Heat oven to 350 degrees. Combine sliced peaches and 1/4 cup sugar in a medium bowl. Toss to coat peaches evenly with sugar. Set aside until sugar melts and peaches begin to extract their juice, about 10 minutes.
  • Line two baking pans with parchment paper. Place eight 8-ounce baking dishes on prepared baking pans. Place 1 tablespoon butter in the bottom of each baking dish. Transfer to oven until butter is melted and bubbling, 5 to 10 minutes.
  • Meanwhile, in a medium bowl, whisk together remaining 3/4 cup sugar, flour, baking powder, nutmeg, and salt. Add milk slowly, whisking until completely combined. Divide batter evenly among hot baking dishes. Spoon an equal amount of peaches with their juice into the center of each baking dish, keeping an outer edge of batter. Return to oven, and bake until tops are golden brown, about 1 hour. Serve with whipped cream.

CUPA, CUPA, CUPA COBBLER

Cupa, Cupa, Cupa Cobbler image

One of my favorite movies is "Steele Magnolias". In the movie Truvy talked about her Cupa, Cupa, Cupa recipe. My mother made this for us all the time when I was growing up with either fresh peaches or frozen ones she "put up" in the summer. So simple, yet so good. You can use your favorite fruit, or you can make it using undrained fruit cocktail, omitting the milk.
