OYSTERS SAUTEED IN CUMIN
This is one of those recipes in which the sum is much greater than the parts. Although it is simple to prepare, the combination of wine, cumin, and a touch of soy sauce results in a captivating, complex flavor. Serve this a la minute dish from its saute pan or skillet, and accompany with French bread to catch the pan sauce.

Steps:
- In a saute pan or skillet over medium-high heat, melt the butter and saute the mushrooms and garlic for 2 to 3 minutes. Add the oysters and saute for 3 minutes. Add the oysters and saute for 3 minutes. Add the wine, cumin, and soy sauce and simmer for 1 minute. To serve: Place the oysters back in their shells. Arrange on four small plates and serve with extra pan sauce.
OYSTERS EN ESCABECHE
Steps:
- In a mortar and pestle or a coffee grinder reserved for grinding spices, combine the cumin, cloves, allspice, and peppercorns. Grind until cracked but not pulverized, then transfer to a small dish and add the bay leaves, oregano, and cinnamon. In a large heavy skillet, heat the olive oil over medium heat. Add the onion and carrots and cook, stirring occasionally, until the onion is softened, about 5 minutes. Stir in the garlic and chiles and cook for 2 minutes more. Add the vinegar, fish broth, and all the spices to the pan, cover and reduce the heat to medium-low. Simmer for 10 minutes. Transfer to a glass bowl and let stand at room temperature for 1 to 2 hours, for the flavors to marry. When ready to serve, return the mixture to the skillet and add the oysters. Over medium-low heat, bring the mixture just up to a gentle simmer and let the oysters cook very gently for about 3 minutes (the oysters are done when the edges curl and they turn almost white do not overcook). Remove from the heat and adjust the seasonings, adding more salt and vinegar if desired. Remove the bay leaves and cinnamon stick and serve in deep bowls, scattered with the fresh cilantro.
MEXICAN OYSTERS

Steps:
- Combine first 6 ingredients in medium bowl. Season to taste with salt and pepper. Let stand 30 minutes.
- Preheat broiler. Arrange oysters on broiler-proof pan. Spoon salsa over oysters, dividing evenly. Broil until heated through, about 5 minutes. Serve with bread to soak up juices.
CAMPECHANA: MEXICAN SEAFOOD SOUP
Campechana is a Mexican seafood cocktail usually made of oysters, baby octopus, mussels, shrimp, squid and scallops.The seafood mix is prepared in its broth with vegetable juice, lime juice, ketchup, cucumbers, tomatoes, onions, avocado and cilantro. Of course, jalapenos for the spicy kick (I only use 2 SMALL ones for flavor)! Tried this in a restaurant for $20 a bowl!!! I was able to find all these ingredients at Wal-Mart for under $35!! What you can't find in the mix purchase separately (my mix didn't have oysters, mussels or shrimp so I bought canned oysters, skipped the mussels and got frozen shrimp). This is in one word: SUBLIME.

Steps:
- Boil seafood mix in 4 to 5 cups of water for 5 to 10 minutes.
- Drain, setting aside broth.
- Cool both seafood and broth.
- Prepare tomatoes, onions, cilantro, cucumbers and jalapenos.
- In a large bowl, mix well. Add seafood mix.
- Add vinegar and juice from limes, broth, ketchup and vegetable juice.
- Season with cumin, and salt and pepper to taste.
- Add avocados.
- Serve with tostadas or saltine crackers. (I served it with extra sour sourdough crusty rolls).
- TIPS:.
- 1) I purchased the seafood as a mix from Food4less for around $3.50 a pound. It was already pre-sliced and ready to go. This is a more economical and convenient alternative than purchasing the oysters, squid and such individually.
- 2) Most recipes call for Clamato juice but since we are using the broth that absorbed the flavors from the seafood when they were boiled, vegetable juice such as V-8 will do.
- 3) Beware! I found the 5 jalapenos called for in this recipe to be beyond my "spice" tolerance. Modify the amount according to taste.
- 4) Of course, get a cold bottle of Corona beer and enjoy!

CRISPY OYSTERS
Steps:
- In a bowl, combine vodka and water, and soak the oysters in the mixture for 15 minutes.
- Combine flour with cumin, paprika, parsley, salt and pepper, and mix. Dredge the oysters in the seasoned flour until they are well coated.
- Add the olive oil to a pan, and heat until the oil is hot. Fry the oysters in the oil for 1 1/2 minutes until lightly browned and crispy on the outside. Remove and drain on a paper towel Serve over saffron grits, 6 oysters to a serving.

- Drain shucked oysters. Mix oysters and tomatoes. Arrange in an ungreased oblong baking dish. Pour 1/4 cup of the half-and-half over mixture.
- Mix the remaining ingredients except lemon wedges and remaining half-and-half. Sprinkle over oysters and tomatoes.
- Pour remaining half-and-half over crumb mixture. Cook uncovered at 375 degrees until light brown, about 30 minutes. Garnish with lemon or lime wedges.
