CHILI WITH CHICKEN AND BEANS

Chili with Chicken and Beans image

If you like, spice up this robust chili by adding chopped fresh hot chile peppers. You can also replace the canned beans with cooked dried beans; if you do so, use the bean cooking liquid to replace half the chicken stock.

Number Of Ingredients 17

1 tablespoon olive oil
3 teaspoons whole cumin seed
2 medium onions, finely chopped (about 3 cups)
5 garlic cloves, roughly chopped
1 green bell pepper, finely chopped
2 boneless and skinless chicken breasts (about 1 3/4 pounds), cut into 1-inch cubes
2 teaspoons chili powder
1 teaspoon dried oregano
1 dried bay leaf
One 28-ounce can chopped tomatoes with their juice
One 4-ounce can green chiles, finely chopped
2 1/2 cups homemade or low-sodium canned chicken stock, skimmed of fat
1/2 teaspoon coarse salt
4 cups canned kidney beans, drained and rinsed
Freshly ground black pepper
2 ounces (1/4 cup) low-fat sour cream, for garnish (optional)
Fresh cilantro leaves, for garnish (optional)

Steps:

  • In a large, heavy-bottom pot or Dutch oven, heat the oil and cumin seeds over medium heat until the cumin is lightly toasted and aromatic, about 1 minute. Add onion, garlic, and bell pepper, and reduce heat to medium-low; cook, stirring occasionally, until vegetables are soft and lightly golden, about 10 minutes.
  • Raise heat to medium, and add the chicken, chili powder, oregano, and bay leaf to pot. Cook, stirring frequently, until chicken is seared on the outside and coated thoroughly with spices, about 10 minutes. Add tomatoes and green chiles, and stir to combine. Cook 5 minutes. Add stock, salt, and beans; season with black pepper, and stir to combine.
  • Cover; simmer. Stir contents, then replace lid to partially cover pot. Reduce heat to medium-low, and cook until chili is thickened and chicken is tender, stirring occasionally, about 1 1/2 hours.
  • Divide chili among six bowls; garnish with sour cream and cilantro leaves, if desired. Serve immediately.

Provided by Wade in Indianapolis

Categories     < 60 Mins

Time 1h

Yield 2 quarts, 8 serving(s)

Number Of Ingredients 23

1 (8 ounce) package tempeh, diced medium
1 large yellow onion, diced medium
1 green bell pepper, diced medium
1 large carrot, diced small
3 garlic cloves
1 tablespoon olive oil
2 teaspoons olive oil
2 teaspoons soy sauce
6 tablespoons chili powder
2 teaspoons ground cumin
2 teaspoons fresh oregano, chopped (or 1/2 teaspoon dried)
1 1/2 teaspoons salt
1 pinch black pepper
15 ounces pinto beans, drained
15 ounces garbanzo beans, drained
15 ounces red kidney beans, drained
15 ounces corn, drained
1 cup dark beer (Bodingtons)
18 ounces diced tomatoes
3 tablespoons tomato paste
2 cups vegetable broth
1 tablespoon lemon juice, fresh
1/2 cup fresh cilantro, chopped (optional)

Steps:

  • Put tempeh in a large frying pan and add water until it is almost covered. Add 2 teaspoons soy sauce and let simmer over high heat for 15 minutes or until water is absorbed, stirring occasionally. When water is absorbed, mash tempeh with a fork, so it's crumbly but still chunky. Lower heat to medium and add 2 teaspoons olive oil, sauté for 15 more minutes.
  • At the same time in a large pot, cook carrot, onions and green bell pepper over med-high heat, until tender and a little brown (15-20 minutes) stirring occasionally.
  • Add garlic to veggies and sauté one minute, then add salt and spices (except cilantro, you add that last) and sauté a minute more. Add beer and deglaze the pot. Cook for 2 minutes. Add tomato sauce, tomato paste, beans, corn and water. Your tempeh should be done cooking so add that as well. Lower heat to medium, stir it up and cover for 20 minutes, stirring occasionally. Uncover and cook 30 more minutes stirring occasionally. Add lemon juice and stir it up. Serve with cilantro garnish or as is.

VEGETARIAN HOMINY CHILI WITH BEANS

Vegetarian Hominy Chili With Beans image

Adapted from a Cooking Light recipe I found years ago. This is QUICK, HEARTY and DELICIOUS, which is great considering it can be made in less than 30 minutes, simmer time included. Pretty much Involves peeling some garlic and opening cans, but of course, you can use fresh tomatoes and pre-soaked beans if you want. The hominy adds a great texture, as does the TVP if you choose to include it. Like most chili it tastes even better the next day and freezes well. Serve with sour cream and sprinkle with a good sharp shredded cheddar.

Categories     Black Beans

Time 25m

Yield 4-6 serving(s)

Number Of Ingredients 12

2 teaspoons canola oil
3 -4 fresh garlic cloves, crushed
1 teaspoon ground cumin
1 (15 ounce) can hominy
1 cup kidney bean, rinsed
1 cup black beans, rinsed
1 (15 ounce) can diced tomatoes, undrained
1 (15 ounce) can stewed tomatoes, undrained and chopped a bit
1 (8 ounce) can tomato sauce
1 tablespoon olive oil
8 ounces textured vegetable protein (I use TVP that comes in larger chunks as it has a chewier texture, but you can use any kind.)
1/2-1 cup water or 1/2-1 cup vegetable broth, as needed

Steps:

  • Saute garlic in the canola oil in a large sauce pan or small pot.
  • Stir in the remaining ingredients and bring to a boil. Reduce heat and simmer uncovered for 15 minutes.
  • If using TVP, add water if chili gets too thick as TVP will absorb liquid pretty quickly.
  • Garnish with cilantro, shredded cheddar cheese, sour cream.

Very spicy and tasty chili for those cold days. It will make hot days a lot hotter. Serve with tortillas or great over hamburger patties with fresh diced onion, cheese and oyster crackers. If you don't like it hot, don't add the jalapeno and serrano peppers.

CHILI CON CARNE CON FRIJOLES

Chili con Carne con Frijoles image

This chili is chock full - of meat, beans and flavor! And it feeds a crowd. If making vegan, don't add the ground beef. Substitute any canned beans for the ones listed, the more the merrier, whatever your pot will hold. If making a small batch use the cans of unseasoned "bean medley" and cut back on the other ingredients. If you're watching your sodium, drain and rinse the beans before adding, but if not, use undrained - excellent source of fiber.
