CREAMY VEGAN CUCUMBER SALAD (GERMAN-INSPIRED)



Creamy Vegan Cucumber Salad (German-Inspired) image

Creamy, German-inspired cucumber salad with fresh dill and tangy coconut yogurt. A refreshing, plant-based side for BBQs and beyond. Just 15 minutes, 10 ingredients, and 1 bowl required!

2/3 cup finely diced red onion ((or halved & thinly sliced with a mandolin* // ~1/2 medium onion as recipe is written))
1 large clove garlic, minced
1 cup unsweetened plain coconut yogurt ((we like Culina))
1/2 tsp each sea salt and black pepper
2 Tbsp lemon juice ((~ 1 medium lemon as recipe is written))
1 ½ Tbsp apple cider vinegar
2 tsp dijon mustard ((or yellow mustard))
1-2 tsp maple syrup ((to balance out the flavor))
1/4 cup finely chopped dill
1 medium cucumber, halved lengthwise, thinly sliced ((~2 cups as recipe is written))

Steps:

  • In a medium mixing bowl, add all ingredients except for the dill and cucumber (so onion, garlic, coconut yogurt, salt, pepper, lemon juice, apple cider vinegar, mustard, and maple syrup). Mix the dressing until smooth. NOTE: For less intense onion/garlic flavor, you can soak the onion and garlic in boiling water for 5 minutes, then strain well and add to the mixing bowl.
  • Add the dill and sliced cucumber and mix again until cucumber is well coated with dressing.
  • Taste and adjust as needed, adding lemon juice or apple cider vinegar for acidity, maple syrup to balance the acidity, dill for herby flavor, or more cucumber for a less saucy dressing.
  • Best when fresh. If preparing in advance, store dressing and cucumber separately in the refrigerator for up to 2-3 days. Not freezer friendly.

4 cucumbers, peeled, seeded and diced
3 tomatoes, cored, seeded and diced
2 carrots, peeled and grated
1 to 2 serrano chiles, finely chopped, seeds optional
2/3 cup freshly grated coconut
1/2 cup finely chopped lightly toasted peanuts
1/2 to 1 teaspoon sugar
1 to 2 tablespoons freshly squeezed lemon juice
Salt and freshly ground black pepper to taste
Cilantro leaves, for garnish

Steps:

  • When ready to serve salad, combine all of the ingredients in a bowl. Spoon onto individual plates, garnish with the cilantro leaves and serve. This tastes great with a dollop of strained yogurt.

1 English cucumber, peeled and diced
1 cup (1/4 whole) honeydew, finely diced
Kosher salt
2 cups Greek yogurt
1/4 red onion, thinly sliced
1 jalapeno, seeded and finely minced

Steps:

  • Put the cucumbers and honeydew in a fine mesh sieve set over a bowl. Sprinkle with a pinch of salt and allow it to sit for 5 minutes. Press out as much liquid as possible. Toss the cucumber and melon with the yogurt, onion and pepper in a serving bowl. Cover and chill in the refrigerator at least 1 hour or until ready to enjoy.

1 tablespoon grapeseed oil
1/2 teaspoon brown mustard seeds
1 tablespoon honey
1/2 teaspoon minced ginger
Juice of 1 lime
1 cucumber, washed and cut into thin slices
1/4 cup red onion, thinly sliced
1 green onion, chopped
1/4 cup cashews, roughly chopped
1 small red chile, seeds removed and minced
1/4 cup grated fresh coconut, plus more for garnish
A pinch of salt

Steps:

  • Heat the oil in a small skillet over medium-high heat. Add the mustard seeds and fry until they begin to pop, about 1 minute. Add to a small bowl along with the honey, ginger and lime juice, and whisk well. Set aside.
  • Put the cucumbers, red onions, green onions, cashews, chile and coconut onto a platter. Pour over the dressing and garnish with more coconut.

1/2 small red onion, thinly sliced lengthwise (about 1/2 cup)
4 Persian cucumbers or 1 English cucumber, cut into thirds crosswise (about 3/4 pound)
1 cup unsweetened large-flaked coconut
2 tablespoons coconut water
1 tablespoon fresh lime juice (from 1 lime)
2 teaspoons sugar, plus more for seasoning
Coarse salt

Steps:

  • Place onion in a bowl of ice water. Let onion stand 10 minutes, then drain.
  • Thinly slice cucumbers lengthwise with a handheld slicer or peeler and place in a large bowl. Add onion and coconut and gently toss to combine. Add coconut water, lime juice, sugar, and 1 1/2 teaspoons salt and gently toss again to combine. Refrigerate until chilled, at least 30 minutes and up to 4 hours. Before serving, season with salt and sugar.

1 small red bell pepper, minced

Steps:

  • In a large bowl, combine the cucumber, chile, lemon and lime juice, brown sugar, coconut, mango, and bell pepper.
  • Toss well.
  • Cover and chill for 20 minutes and serve cold.
  • Just before serving, top with cilantro or spearmint.
