CUCUMBER PARTY SANDWICHES

Steps:
- Beat cream cheese, mayonnaise and dressing mix until blended; let stand 30 minutes. , Spread cream cheese mixture on bread. Top each with 2 cucumber slices and, if desired, dill and red onion slivers. Refrigerate, covered, until serving.

CUCUMBER PARTY SANDWICHES
Great for a bridal party, meetings or any social event. Easy and quick preparation. Use either white or wheat bread. Filling may be made a day ahead and refrigerated until sandwiches are made. Recipe is easily doubled.

Steps:
- Prepare cucumber by peeling and grating. Press out water from cucumber.
- In a medium bowl stir softened cream cheese with mayonnaise until fluffy.
- Add grated onions, cucumber and salt. (If filling is made ahead and refrigerated, allow to get to room temperature before preparing sandwiches.).
- Spread filling onto 7 slices of bread and top with 7 bread slices. Crust maybe be trimmed, if desired. Cut into quarters.
- Enjoy!

EASY CUCUMBER PARTY SANDWICHES
These easy, beautiful, yummy sandwiches are perfect for brunches, tea parties or spring and summer lunches. Can be prepared ahead of time and assembled just before serving. This is an easy appetizer to prepare the day before, except for the assembly. The cream cheese mixture is actually better after about 8 hours. Feel free to experiment with the dressing; we prefer the buttermilk dressing but ranch or Italian works great, too. Also, cocktail bread can be substituted for the hand-cut bread, which will save 10 to 15 minutes.

- Mix cream cheese, sour cream, mayonnaise, ranch dressing mix, and dried dill in a bowl until creamy and smooth.
- Cut crusts from bread slices; cut sliced bread into decorative shapes (such as rounds or flowers) with cookie cutters. Spread each piece of bread with cream cheese mixture and top with a cucumber slice. Top each canape with a few fresh dill leaves.

CUCUMBER TEA SANDWICHES

- In a small bowl, mix together the butter, parsley, chives, shallot and lemon zest.
- Lay the bread slices out on a clean work surface. Spread 2 teaspoons of the compound butter over each slice of bread. Trim the cucumber slices so that they are the length of the bread slices. (Save the scraps for salads.) Lay 4 pieces of cucumber across 1 slice of buttered bread--it is okay if the cucumbers overlap. Repeat on 5 more slices of bread. Season the top of the cucumbers lightly with salt. Next, add a single layer of radishes over the cucumbers, about 12 rounds per slice of bread.
- Toss the frisee with the lemon juice and a pinch of salt. Divide the frisee evenly over the radishes. Top the frisee with the remaining 6 slices buttered bread. Cut each sandwich into thirds with a serrated knife to make small rectangles. Serve immediately.

- Spread one side of each slice of bread with a thin layer of butter. Arrange a single layer of cucumber slices on 4 of the bread slices. Stir together the mayonnaise, chives, mustard and some salt and pepper in a small bowl. Spread a thin layer of the mayonnaise mixture over the cucumbers. Top with the remaining slices of buttered bread. Cut off the crusts and cut each sandwich into three fingers.
BUCKINGHAM PALACE GARDEN PARTY CUCUMBER SANDWICHES
Cucumber sandwiches are made with fresh springy white or brown bread, lightly buttered, and with the crusts cut off - the perfect cool summer snack to go with your afternoon tea. This recipe idea came from a friend who was lucky enough to attend a Garden Party at Buckingham Palace - she swears this is how they made them! Cucumber sandwiches achieved literary notoriety in Oscar Wilde's play The Importance of Being Earnest (1895) when Algernon devours an entire plate full in the first act and there are none left for his aunt, Lady Bracknell. They are presented by Jack as being a delicacy: "Hallo! Why all these cups? Why cucumber sandwiches? Why such reckless extravagance in one so young? Who is coming to tea?"

- Peel cucumber and slice in paper-thin rounds. Salt rounds lightly and place in colander for 15 minutes to drain. Press to release water; pat dry with paper towels.
- Spread sliced bread with softened butter. Put 2 layers of cucumber slices on bottom slice, sprinkle with finely chopped mint, salt and pepper to taste, and top with another buttered slice. Press lightly with palm of hand.
- Cut all crusts off with a sharp knife. Cut sandwiches in half diagonally and then again into quarters.
- Serve in alternate rows of brown and white bread sandwiches, points facing up!

- Place cucumber into a strainer and sprinkle with kosher salt; allow cucumber to drain for about 20 minutes. Transfer cucumber to a piece of cheesecloth and squeeze dry.
- Mash cream cheese with seasoned salt and cumin in a bowl. Stir cucumber into cream cheese mixture.
- Spread the cucumber mixture on a slice of bread; top with a second slice. Press the slices together lightly and trim off the crusts. Slice each sandwich into 4 triangles by cutting an X shape. Chill sandwiches until serving time.
