COUNTRY STYLE STEAK

- Preheat the oven to 300 degrees F.
- Cut the meat with the grain into 1/2-inch thick slices and season on both sides with salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour. Tenderize the meat, using a needling device, until each slice is 1/4-inch thick. Dredge in the flour again and set aside.
- Add enough of the vegetable oil or bacon fat to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
- Remove the last steaks from the pot and add the chicken broth and thyme and whisk until the liquid just comes to a boil. Return the steaks to the pot and make sure they are all submerged in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.
SALISBURY STEAK WITH MUSHROOMS

Steps:
- Gently mix the beef, egg, onion, cracker crumbs, sage, 1/2 teaspoon salt and a few grinds of pepper in a large bowl using your hands. Divide into 4 equal portions and shape into oval patties, about 1/2 inch thick.
- Heat 1 tablespoon butter in a large skillet over medium-high heat. Brown the patties, about 4 minutes per side. Transfer to a plate.
- Add 1 tablespoon butter to the skillet and cook the mushrooms, stirring occasionally, until slightly browned, about 2 minutes. Stir in the Worcestershire sauce, and salt and pepper to taste, scraping up any browned bits from the bottom of the skillet with a wooden spoon. Sprinkle in the flour and stir, then stir in the hot water and simmer until the sauce begins to thicken, about 2 minutes. Add the remaining 1 tablespoon butter, swirling to combine.
- Return the patties and any juices from the plate to the skillet. Simmer until the sauce thickens and the patties are cooked through, about 2 minutes. Sprinkle with parsley and season with salt and pepper. Serve with noodles, if desired.

SALISBURY STEAK WITH BROWN GRAVY
Steps:
- Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Add the onion and saute until soft, about 6 minutes. Put 1/2 of the onion in a large bowl and the remainder in another bowl. In the large bowl add the beef, bread crumbs, grill seasoning, Worcestershire sauce and the egg. Mix to combine everything well and form the mixture into 5 oval patties. Heat the remaining tablespoon of oil in the same skillet over medium-high heat. Cook the patties until they are well browned, about 4 to 5 minutes per side. Remove the steaks and pour off all but 2 tablespoons the fat. (The patties will not be cooked through and will finish cooking in the gravy.)
- Put the pan back on the heat, add the mushrooms, and cook for 5 minutes. Add the remaining onions, sprinkle in the flour, and cook for 2 minutes. Add the beef broth and bring it to a boil. Return the patties to the pan, reduce the heat to a simmer and cook until the sauce has thickened and the steaks are cooked through, about 10 minutes. Salisbury steak is actually named after one J.H. Salisbury, an English physician who prescribed beef back in the nineteenth century the way some doctors dose out Lipitor today. - Whisk the flour and milk powder together in a small bowl.
- Divide the beef into 4 oval patties approximately 3 by 4 inches. Season both sides with the salt and dredge in the flour mixture. Set on a wire rack to rest at room temp.This is to keep the surface of the meat as dry as possible.
- Heat a large heavy saute pan over medium-high heat and saute the diced onion in 2 teaspoons of the clarified butter. When the onion is brown and soft, invite the mushrooms to the pan and cook until the mushrooms brown and reduce by half.
- Transfer the mushroom mixture to a plate and add the remaining 1 tablespoon clarified butter to the pan. Once melted, add the patties and cook for 4 minutes on the first side.
- Meanwhile, whisk together the milk, red wine, and beef flavor packet in a separate bowl.
- Flip the patties and cook for 2 minutes on the second side. Add the mushroom mixture back to the pan, distributing it evenly around the beef patties.
- Pour in the milk mixture, cover, reduce the heat to medium, and simmer for 10 minutes to thicken the sauce.

- Cook rice. Heat olive oil in non stick pan. Cut cubed steak into bite size pieces and coat with flour. Toss in pan until browned on all sides. Slice garlic very thin and chop carrots and broccoli into bite size pieces. Add these to the steak along with all the spices. slowly add the chicken broth. Simmer until thicken stirring regularly. Add the beans and heat through. Serve over rice. Enjoy the taste and aroma!
