This makes two loaves of long baguette type French bread that has wonderful flavor and is so easy to make!

Number Of Ingredients 4

3 1/2 cups bread flour
1 teaspoon salt
1 (1/4 ounce) package active dry yeast
1 1/4 cups warm water

Steps:

  • Place ingredients in bread machine according to manufacturers directions.
  • Start machine on dough setting.
  • When dough cycle is complete, remove dough with floured hands and cut in half on floured surface.
  • Take each half of dough and roll to make a loaf about 12 inches long in the shape of French bread.
  • Place on greased baking sheet and cover with a towel.
  • Let rise until doubled, about 1 hour.
  • Preheat oven to 450°.
  • Bake for 15 to 20 minutes or until golden brown, turning pan around once halfway during baking.
  • Remove baked loaves to wire racks to cool.

420 grams Bread flour ((or all purpose flour))
1 tsp Salt
7 grams Bread machine yeast ((or instant yeast))
1 cup Water ((microwave 30 seconds))

Steps:

  • Add all the ingredients (water, salt, bread flour, yeast) in the order recommended by your bread machine manufacturer.
  • Close the lid, select the "French bread" cycle, 1.5 lb loaf size and crust of your preference (dark is preferred for French bread) and start the cycle.
  • French bread is ready once the cycle is complete.
  • Remove the container from the bread machine. Invert and shake it a little bit to remove the bread.
  • Place it on a cooling rack to cool it down.
  • Once cooled down, slice it with an electric knife or a serrated knife.
  • Remove the dough from the bread machine pan just after the last knead cycle and knead it on a lightly floured surface.
  • Shape the dough into a loaf and apply a few cuts using a serrated knife and allow to rise for 60 minutes in a warm place.
  • Bake in the preheated oven at 400 °F for 30 minutes.
  • Remove from oven and allow to cool on cooling rack. Slice it wit a serrated or electric knife.

A really good, crusty French bread, with a soft inside. My family begs me to make it several times a week. And using the bread machine makes it very easy.

1 1/2 c warm water
2 Tbsp honey
3 1/2-4 c flour
2 tsp salt
2 pkg active dry yeast
cornmeal for dusting
3-4 ice cubes

Steps:

  • 1. Put ingredients in bread machine,wet ingredients first, set on dough setting
  • 2. Punch down the dough and divide it in half. Shape into 2 baguettes by making a flat rectangle out of your dough, then folding the top and bottom towards the middle, like an envelope, and sealing the seam with your fingers. Keep repeating the folding and sealing, stretching the rectangle lengthwise as you go, until it's about 12 to 14 inches long and 2 inches wide. Fold and seal either end to round. Flip seam-side down and place on a sheet pan or baguette pan that has been dusted with cornmeal. Score the tops of the loaves, making deep diagonal slits 1/2-inch deep, cover with a dishcloth and let rise in a warm environment until they have doubled in size, 25 minutes.
  • 3. Preheat the oven to 450 degrees F and position your oven racks with one on the bottom and the other in the middle. Place an oven-safe (non-glass) bowl or pan on the bottom rack. Baste top of loaves with a beaten egg white mixed with 1 tablespoon cold water.
  • 4. When your bread has doubled for the second time, remove the towel and quickly and simultaneously, slide the sheet tray with the baguettes onto the middle rack while carefully throwing the ice cubes into the bowl on the bottom rack. The ice will create a burst of steam that will give you a nice crispy crust. Quickly shut the oven door so no steam escapes. Bake the baguettes until golden brown, 15 minutes.

This is my winner with Tammiev and our friends. This recipe is for a 2 pound loaf and has never failed me. I think it is the lack of oil and sugar that they like in this one.

1 1/2 cups water, at about 105 degrees
4 cups flour (a flour with at 4 grams protein per serving is best)
1 1/2 teaspoons salt (I use kosher)
2 1/2 teaspoons dry yeast

Steps:

  • Add to the bread pan in the order yours needs.
  • For mine it is water first.
  • Then I add half the flour and the salt followed by the rest of the flour and the yeast on top.
  • This will run well on the normal, rapid, and delay start cycles.

3/4 cup water
1/2 teaspoon salt
2 1/4 cups bread flour
2 tablespoons parmesan cheese
1/2 teaspoon garlic powder
1 1/2 teaspoons active dry yeast
cornmeal
vegetable oil
1 large egg white
1 tablespoon water
sesame seeds

Steps:

  • Add 3/4 cup water, salt, flour, parmesan cheese, garlic powder and yeast to bread machine pan in order suggested by manufacturer.
  • Select dough/manual cycle.
  • When cycle is complete, remove dough from machine to a lightly floured surface.
  • Roll dough into a 15x10 inch rectangle.
  • Beginning at long end, roll up tightly as for jelly roll.
  • Pinch seams and ends to seal.
  • Taper ends by gently rolling back and forth.
  • Place loaf, seam side down on a greased baking sheet sprinkled with cornmeal.
  • Lightly brush loaf with oil.
  • Cover and let rise in warm draft-free place until almost double in size, 10 to 15 minutes.
  • With a sharp knife, make 3 or 4 diagonal cuts about 1/4 inch deep across the top of loaf.
  • Lightly beat egg white and 1 tablespoon water; brush some of egg white mixture over top of loaf.
  • Bake at 375 for 20 minutes.
  • Brush again with remaining egg white mixture and sprinkle with sesame seeds.
  • Bake 5 to 10 minutes more or until done- bread should sound hollow when tapped.
  • Remove the bread from the baking sheet and cool on a wire rack.

  • Place ingredients in bread machine pan as suggested by manufacturer.

1 egg yolk
1 teaspoon cold water
Sesame or poppy seeds, optional

Steps:

  • In bread machine pan, place the first six ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed)., When the cycle is completed, turn dough onto a lightly floured surface. For this recipe, cut into four 4-ounce pieces, and one 8-ounce piece. With each piece, pat dough onto a rectangle. Roll the long side, forming a cylinder.   • Place all ingredients in a bread machine pan in the order listed. Select the DOUGH cycle and press START. After 5-10 minutes, lift the lid and check the dough. If the dough is too sticky (levels out), add more flour 1 tablespoon at a time. If the dough is too dry, add water a tablespoon at a time. The dough should be a loose ball that sticks to the sides, then pulls away cleanly.
  • When the dough cycle is complete, turn the dough out onto a lightly floured board. Roll into an oval shape slightly longer than you want your final loaf to be (about 9 x 12 inches is what I do.)
  • Starting from a long side, roll into a cylinder shape. Pinch seam together. Pinch ends together. Pull ends to reach seams and pinch together with the seam making a small rounded shape on each end. (This is difficult to describe. See the picture above or watch the video if you are confused.)
  • Flip the loaf over and carefully place it onto a greased baking sheet or one covered with a silicone baking sheet or parchment paper. Cover with a tea towel and allow to rise in a warm place until almost double.
