Number Of Ingredients 16

2 tablespoons unsalted butter, softened
2 tablespoons finely grated Parmesan cheese
1 1/2 cups (1-inch, day-old) bread cubes, preferably sourdough
2 tablespoons unsalted butter or extra-virgin olive oil
2 cups half-and-half
2 large eggs
2 large egg yolks
1/2 teaspoon kosher salt
Freshly ground black pepper
Freshly grated nutmeg
Pinch cayenne or paprika
2 to 3 cups prepared vegetables, such as braised leeks, broccoli, sauteed onions, mushrooms, spinach, peppers, tomatoes
4 ounces, or about 1 cup grated or crumbled cheese, such as Cheddar, goat cheese, Gruyere, Parmesan, fontina, provolone, mozzarella, Gouda, solo or combined
1 to 4 tablespoons minced herbs, such as parsley, chives, tarragon, basil, dill, rosemary, marjoram
3/4 cup chopped crisp bacon, diced ham or salami
1 tablespoon all-purpose flour, optional, this is good to use with vegetables that release liquid during cooking, such as zucchini and spinach

Steps:

  • Preheat oven to 350 degrees F. For the pan: Brush pan with the soft butter and sprinkle the grated Parmesan evenly on top. Or for a Quick Crust, pulse bread into crumbs in a food processor. Heat butter or oil in a large skillet over medium heat; add bread crumbs and stir until evenly toasted, about 5 minutes. Evenly spread crumbs in a 9-inch glass or ceramic pie pan. Place pan on a baking sheet.
  • Whisk the half-and-half, eggs and yolks in large glass measuring cup. Season with salt, pepper, and nutmeg, cayenne or paprika to taste. Spread half the desired filling evenly in the pan, top with about half the cheese; repeat with remaining filling and cheese. Pour the custard over the fillings. Top with more herbs or cheese as desired.
  • Bake until the quiche is just set in the center, about 40 to 50 minutes. Cool completely on a rack before serving.

2 tablespoons olive oil
1/2 small onion, diced
2 cups mushrooms, sliced (6 to 7 medium mushrooms)
2 cloves garlic, minced
1/2 red pepper, diced
2 cups kale, center rib removed & shredded
4 large eggs
1 cup fat-free half & half
1/2 teaspoon nutmeg
Salt
Fresh ground pepper

Steps:

  • Preheat oven to 375°F. Grease a 9-inch pie dish with cooking spray and set aside. Heat oil in a large sauté pan over medium heat.Cook onions until slightly translucent, but without browning, about 2 to 3 minutes. Stir in mushrooms, season with salt and pepper, and cook until their liquid has fully evaporated, 8 to 10 minutes, stirring occasionally. Add garlic and red pepper, and cook for 3 more minutes. Stir in kale, and continue to cook until kale begins to wilt, about 2 minutes. Remove pan from heat and set aside. In a medium bowl, whisk eggs until light and fluffy. Whisk in the half and half, nutmeg, salt, and pepper. Add the cooked vegetables to the pie dish. Top with egg mixture. Bake 30 to 35 minutes, until edges are light golden and the center remains slightly jiggly. Serve warm or at room temperature.

1/2 cup self-raising flour or 1/2 cup gluten-free self-raising flour

2 cups vegetables, chopped (such as tomato, brocolli,celery, zucchini, capsicum or sweet peppers, mushroom, carrot)

Steps:

  • Preheat oven to 180°C Grease a medium sized round quiche or pie dish.
  • Mix all ingredients together and pour into the quiche dish.
  • Cook for 45 minutes in the oven, or until the eggs have cooked through- will depend a little on your oven and the size of the dish used.

2 tablespoons olive oil
1 medium onion, chopped fine
2/3 cup broccoli, chopped fine
1 medium zucchini, chopped fine
3 large eggs, beaten
1/2 cup half-and-half (or milk)
1 tablespoon all-purpose flour
1/2 cup parmesan cheese, grated
1 1/2 cups swiss cheese, shredded
1 dash garlic powder
1 dash salt & pepper
1/2 lb bacon, chopped, fried crisp & drained

Steps:

  • Prepare bacon, set aside and drain fat from skillet.
  • In same skillet, heat oil; add onion, broccoli, & zucchini and cook until almost soft.
  • Heat oven to 350 degrees.
  • In bowl, beat eggs with fork. Add milk, flour, cheeses, garlic powder, salt & pepper; mix well.
  • Add vegetables and bacon to egg mixture. Stir to combine.
  • Pour into greased 10" pie plate or quiche pan. Bake 30-35 minutes.
  • Cut into wedges and serve warm.

4 medium yellow squash
8 ounces mushrooms, sliced
1 medium vidalia onion
1 cup green beans, cut into small pieces
2 tablespoons olive oil
6 large eggs, beaten by hand
4 ounces feta cheese, crumbled
1 cup sharp cheddar cheese, shredded
4 ounces swiss cheese, finely diced
2 cups 1% low-fat milk
1/4 cup half-and-half
1/4 cup flour
3/4 teaspoon salt
1/8 cayenne pepper

Steps:

  • Preheat oven to 375 degrees.
  • Dice onion and begin to saute in olive oil over medium heat. Meanwhile, cut each squash into quarters and then slice thinly. Chop mushrooms as necessary to ensure that there are no large pieces.
  • After 4 or 5 minutes, add mushrooms, squash, and green beans to onions in pan and continue to saute until vegetables are tender. Remove pan from heat and transfer vegetables to collander to drain off excess liquid.
  • Combine all remaining ingredients in large bowl and mix well by hand. Stir in vegetables.
  • Pour mixture into greased oblong (9X13) glass dish. Bake at 375 degrees for 35-40 minutes. Quiche is done when top is lightly browned and knife inserted in center comes out clean.
  • Allow to cool for 15-20 minutes before serving. Makes 6 large servings.

1/2 red pepper, finely chopped
6 broccoli florets, chopped
1 small zucchini, chopped
5 ounces American cheese or 5 ounces provolone cheese
6 eggs
1 teaspoon oil
salt and pepper

Steps:

  • Sautee veggies in oil until tender.
  • Remove veggies and allow to cool.
  • Beat eggs in bowl, add salt and pepper add cool veggies to eggs and mix well.
  • Spray glass pie plate with cooking spray.
  • Pour half of the egg mixture in pie plate.
  • Add the cheese slices.
  • Top with remaining egg mixture.
  • Bake at 350 degrees for 15-17 minutes.

Make a simple crustless quiche to cut out the faff of making pastry. It's packed with cheese, smoky pancetta and green veg for a lovely lunch or picnic dish

20g butter , plus extra for the tin
1 onion , finely chopped
100g chopped pancetta or smoked bacon
200g asparagus or broccoli, trimmed
8 large eggs
150ml double cream
80g gruyère or parmesan cheese

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Butter and line a 23cm round deep, springform cake tin so the paper comes 2-3cm up the sides of the tin.
  • Melt the butter in a frying pan. Add the onion and pancetta and cook over a low heat for 10 mins or until softened and translucent.
  • Bring a pan of lightly salted water to the boil. If using broccoli, cut into small florets, if using asparagus, keep whole. Blanch the veg for 2 mins, drain and leave to steam-dry.
  • Whisk the eggs, cream and two thirds of the cheese together in a bowl. Season with salt and black pepper. Mix through the onion and bacon mixture. Pour into the tin and top with the veg and remaining cheese. Bake for 25-30 mins or until golden brown with a slight wobble in the centre.

I absolutely love quiche. But not for breakfast, I like it for dinner. Loaded with veggies and goat cheese. I've been known to change the vegetables using zuchinni and yellow squash, it's pretty versatile. This quiche is crustless and it's good that way. Of course, you could bake it in a crust if crust is a must for you. I use a pirex pie plate to bake mine in. I slice the peppers into thin strips and then cut in half. This recipe is a variation of a recipe I found on Gluten Free Goddess.

1 bunch fresh spinach, cut into small pieces
1 cup sliced mushrooms
1 yellow pepper, sliced
1 red pepper, sliced
8 ounces goat cheese
4 eggs
1/2 non-dairy milk substitute (I use hemp milk for this recipe)

Steps:

  • In a bowl, toss vegetables until mixed pretty good. Put vegetables into the pie plate.
  • In a separate bowl, mix eggs with milk. Pour egg/milk mixture over the vegetables. Shake it a bit to get the egg mix to the bottom of the plate.
  • Crumble up the goat cheese and mix into the quiche.
  • Top quiche with leftover goat cheese crumbles.
  • Bake at 375 degrees for 30 minutes or until edges are golden brown.

1/4 cup flour
1/2 teaspoon baking powder
1/8 teaspoon salt
1 medium zucchini
1/4 onion
3 mushrooms
3 teaspoons butter
1/2 cup cheddar cheese, grated

Steps:

  • Preheat oven to 350°F.
  • Chop zucchini, onion, and mushrooms.
  • Place each type of vegetable into a small bowl (3).
  • Add a teaspoons of butter to each bowl.
  • Microwave vegetables, one at a time, for one minute. Set aside.
  • Mix together 5 eggs, flour, baking powder, and salt.
  • Add egg mixture to a glass baking pan.
  • Add vegetables to egg mixture and incorporate well.
  • Add in the cheddar cheese. Mix well.

1 green bell pepper, diced
2 cups cheddar cheese, shredded
2 tablespoons flour
