1/4 cup GREY POUPON Harvest Coarse Ground Mustard
2 Tbsp. honey
4 skinless salmon fillets (1 lb.)
1/2 cup panko bread crumbs
1/2 cup finely chopped pecans
1/4 tsp. ground red pepper (cayenne)
1 lemon, cut into wedges

Steps:

  • Heat oven to 375ºF.
  • Mix butter, mustard and honey until blended; spread onto fish.
  • Cover baking sheet with parchment. Combine bread crumbs, nuts and pepper in pie plate.
  • Dip coated sides of fish, 1 at a time, in crumb mixture; place, coated sides up, on prepared baking sheet. Gently press crumb mixture into fish to secure.
  • Bake 15 to 20 min. or until fish flakes easily with fork. Serve with lemon wedges.

1 1/2 lbs salmon (1 large fillet or 4 single serving fillets)
3 tablespoons butter, melted
1/4 teaspoon coarse salt
3/4 cup fresh white breadcrumbs (potato bread is wonderful)
1/4 cup grated parmesan-romano cheese mix
3 green onions, thinly sliced (including tops)
2 teaspoons lemon zest
1/4 teaspoon dried thyme leaves

Steps:

  • Heat oven to 375º.
  • Spray shallow baking pan with cooking spray.
  • Rinse and pat salmon dry with paper towel.
  • Place salmon in pan, brush both sides with 2 tablespoon butter.
  • Sprinkle with salt.
  • Mix bread crumbs, cheese, onions, lemon peel and thyme in small bowl with 1 tablespoon butter.
  • Press bread crumb mixture evenly on salmon top.
  • Flip and repeat ending with skin side down in pan.
  • Bake uncovered 18 minutes.
  • Serve immediately.

2 tablespoons finely chopped fresh tarragon leaves
1 cup fresh bread crumbs
Kosher salt and freshly cracked black pepper
1 tablespoon roughly chopped fresh dill
3 to 4 tablespoons butter, melted, plus 1 tablespoon
4 to 6 (6-ounce) center-cut salmon fillets

Steps:

  • Preheat the oven to 400 degrees F.
  • Blend the tarragon with bread crumbs, salt and pepper, to taste, in a food processor, pulsing in the dill last. Remove and stir in just enough melted butter to create the consistency of wet sand.
  • Pat the salmon dry and season on all sides with salt and pepper, to taste. Heat 1 tablespoon of butter in a large saute pan and sear the salmon, flesh side down, over medium- high heat, about 2 minutes. Do not crowd pan. Flip and top each fillet with the herb/crumb mixture. Put the pan in the oven and bake until the fish flakes with a fork. About 8 to 12 minutes. Transfer the fish to a platter and serve immediately.

1 cup Italian seasoned bread crumbs
1 teaspoon dried tarragon
1 teaspoon dill weed
1 cup white wine
¼ cup teriyaki sauce
1 tablespoon melted butter

1 tablespoon minced garlic
2 pounds salmon steaks

Steps:

  • In a shallow, medium bowl mix Parmesan cheese, Italian seasoned bread crumbs, tarragon and dill.
  • In a medium saucepan over medium heat, blend white wine, teriyaki sauce, butter, red onion and garlic. Cook and stir until onions are tender.
  • Press one side of each salmon steak into the Parmesan cheese mixture. Place steaks crust side up in saucepan with white wine mixture. Cook over medium high heat until most of the liquid is reduced, 10 to 15 minutes, then flip with a spatula. Continue cooking until crust is golden brown and fish is easily flaked with a fork.

500g baby new potatoes
zest ½ lemon , then cut into wedges
4 tbsp fresh white breadcrumbs
25g butter , melted, plus a knob for the potatoes
1 ½ tsp coarsely ground peppercorns
4 skinless salmon fillets
a few thyme sprigs , leaves only
cooked broccoli or spring greens , to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Wash the potatoes and place in a large pan of cold, salted water. Cover and bring to the boil, then simmer for 15 mins until cooked.
  • While the potatoes cook, combine the lemon zest, breadcrumbs, butter and peppercorns. Put the salmon fillets in a large roasting tin and sprinkle 1 tbsp of crumbs on each fillet. Pop the lemon wedges in the tin and bake for 8-10 mins until the salmon is cooked and the crumb is golden and crunchy.
  • When the potatoes are cooked, drain in a colander and crush lightly. Add a knob of butter, season and scatter with the thyme. Serve with broccoli or spring greens.

1 cup 2% milk
1 cup finely chopped pecans
1/4 cup all-purpose flour

2 large russet potatoes, peeled and cut into 1/8ths
1/2 cup cream
2 tablespoons butter

Steps:

  • Lightly season the salmon with salt and pepper. Generously coat 1side of the salmon with the finely grated Parmesan. In a non-stick saute pan, add approximately 3 tablespoons vegetable oil and place over high heat. When the oil is hot, carefully place the salmon in the pan cheese side down. Turn temperature down to medium heat and allow the salmon to cook about 4 minutes before flipping over. The idea is to form a nice crispy, lightly brown crust. Turn salmon and allow to cook another 3 or 4 minutes. Remove from pan and set aside in a warm place until plating.
  • Sun-Dried Tomato Pesto Paste:
  • In a blender or food processor, add the sun-dried tomatoes along with their oil, the garlic cloves, and 1/4 cup of extra-virgin olive oil. Process the mixture on high speed approximately 1 minute until almost smooth. The mixture should be slightly chunky. Season with salt and pepper, to taste.
  • Basil Pesto
  • In a blender or food processor, place the extra-virgin olive oil and garlic clove. Process until smooth. Add the basil leaves, and process for about 1 minute until mixture is relatively smooth. Add the Parmesan and process again until fully incorporated. Season the pesto with salt and pepper, to taste.
  • To plate:
  • Place a small mound of mash potatoes in the center of the plate. Place the asparagus on top of the mashed potatoes at an angle. Then put the salmon nicely on the plate, overlapping the asparagus. Drizzle the plate with both pestos and garnish the plate with the Parmesan crisp by securing it in the bed of mashed potatoes.
  • Preheat the oven to 350 degrees F.
  • Heavily grease a cookie sheet (parchment paper is optional, but if using parchment, make sure it is heavily greased). In a 5-inch diameter circle, sprinkle the coarsely grated Parmesan. Make sure there is just enough to fill the circle, don't over do it! Place in oven and bake for approximately 8 minutes, or until golden brown. Remove from oven and allow to cool before lifting from cookie sheet. Be extremely gentle with them they are very brittle when cool.
  • Cut off about 2 inches of the ends of the asparagus, as they tend to be very coarse and tough. Blanch asparagus in boiling, well-salted water until tender. Shock them in ice water to keep them from cooking any further and hold them until you are ready to plate. Right before plating, in a saute pan over a low flame, melt the butter with the asparagus. Once the asparagus are hot, season with salt and white pepper.
  • Place the potatoes in cold, salted water over high heat. Cook thoroughly and strain. In a separate pot, heat heavy cream and butter. Using a potato masher, mash potatoes. Slowly incorporate the cream and butter mixture. Season with salt and white pepper, to taste.

WILD GARLIC-CRUSTED SALMON

1 side of salmon (about 1kg), skinned
lemon wedges, to serve
800g loaf of sliced white bread, crusts removed
1 garlic clove
50g wild garlic leaves
250g butter , melted
50g wild garlic leaves
8 salted anchovies
70ml extra virgin olive oil
1 lemon , zested and juiced
1 shallot , sliced
1 tsp small capers

Steps:

  • To make the crust, put the bread and garlic in a food processor and blend until you have a fine crumb, then add the wild garlic and blitz for 1 min. Once the leaves have broken down, pour in the melted butter and blend to a fine green dough. Lay one large sheet of baking parchment on your work surface, then tip the dough on top. Lay a second sheet on top and, using a rolling pin, roll the dough to the thickness of a £1 coin. Put in the fridge to firm up for about 1 hr.
  • Heat oven to 180C/160C fan/gas 3. Sprinkle the salmon with some salt and transfer to a baking sheet lined with baking parchment. Remove the crust from the fridge and cut to the same size as the salmon. Remove the parchment from either side of the crust and place on top of the fish. Roast for 20 mins or until the fish is just cooked through.
  • To make the salsa, put all the ingredients in a food processor and blend to a fine purée. Once the fish is cooked, remove from the oven and place on a board in the middle of the table, along with the salsa and a few lemon wedges.

1 lb fresh salmon (fillet is best)
1/4 cup mayonnaise
1/3 cup parmesan cheese
1/2 teaspoon garlic powder (or to taste)
1/2 teaspoon dried chives (or to taste)
1/2 teaspoon dried parsley (or to taste)
fresh ground black pepper

Steps:

  • Preheat oven to 375*.
  • Cut fillet into 4 pieces.
  • Rinse and pat dry.
  • Grease baking sheet. (I cover with foil and use a little olive oil. It makes clean up a breeze!).
  • Lay fillet pieces on prepared sheet, skin down.
  • Combine all remaining ingredients and mix well.
  • Slather entire mixture on top of fillet pieces.
  • Bake in preheated 375* oven for 15 minutes or until done. This depends on thickness.
  • Serve with your favorite sides!

4 (6- 7 oz each) skinless salmon fillets
3/4 cup panko bread crumbs
3/4 cup finely shredded parmesan
2 1/2 Tbsp chopped fresh parsley
3/4 tsp garlic powder
Salt (and freshly ground black pepper, to taste)
1 Tbsp olive oil
1 large egg
4 lemon slices

Steps:

  • Preheat oven to 425 degrees. Spray an oven safe wire cooling rack with non-stick cooking spray and set over a rimmed 18 by 13-inch baking sheet.
  • In a shallow dish toss together panko, parmesan, parsley, garlic powder, salt and pepper (I use about 3/4 tsp salt and 1/2 tsp pepper). Drizzle in olive oil and toss well to evenly coat mixture.
  • In a separate shallow dish beat the egg until yolk and white are well blended.
  • Working with one piece of salmon at a time dredge each side in egg, then transfer to panko mixture and coat and press both sides of salmon in panko mixture (also sprinkle panko mixture over top and press to help stick).
  • Transfer to prepared wire rack on baking sheet. Repeat process with remaining 3 portions (If you have extra breading sprinkle over fillets and gently press down to and even layer so they brown evenly).
  • Bake in preheated oven until salmon is barely cooked through, about 10 - 15 minutes (bake time will vary based on thickness of salmon).
  • Serve with lemon slices for spritzing over.

1/4 cup salmon "glue" (recipe follows)
2 cups shredded potatoes
2 ounces garlic mashed potatoes
2 ounces lemon butter sauce
1/4 cup sauteed vegetables
6 ounces fresh salmon filet
1/4 teaspoon shallot
3/4 cup 40 percent heavy whipping cream
1/2 teaspoon salt
Pinch white pepper
Pinch chopped fresh thyme
1 tablespoon fresh lemon juice
3 tablespoons white wine
1/4 teaspoon chopped fresh garlic
2 tablespoons 40 percent whipping cream
2 tablespoons diced unsalted butter
Pinch turmeric

Steps:

  • For the Salmon breading:
  • Place 2 cups shredded potatoes into a shallow pan. Using a rubber spatula spread 1/8 cup of salmon glue evenly onto one side of a 6 ounces salmon filet. Place coated side of salmon filet into shredded potatoes. Repeat process for opposite side. Ensure that salmon is evenly coated in shredded potatoes.
  • For the Lemon butter sauce:
  • In a saute pan add white wine, lemon juice, cream, garlic, turmeric, salt and pepper. Heat on high heat and reduce by 1/2 its original volume. Remove from heat and swirl in diced butter.
  • Plating procedure:
  • Place potato crusted salmon onto griddle over medium high heat. Allow to cook on one side until potatoes are golden brown. Flip salmon and complete cooking and browning of salmon. Approximately 3 1/2 to 4 minutes for each side. Place 2 ounces garlic mashed potatoes onto the center of a dinner plate, ladle sauce around mashed potatoes, and place vegetables atop mashed potatoes. Place browned salmon atop vegetables. Garnish with julienne green onions.

  • Pat the fish dry with a paper towel and divide the fillet into three uniform portions.
  • Sprinkle salt and pepper on the skin, and lay it skin-side down on the parchment-lined baking tray.
  • Combine the mustard and chives in a small bowl.
  • Spread one-third of the mixture evenly on each piece of fish.
  • Next, sprinkle the crushed nuts on top of the mustardy salmon and pat them down gently to make sure they stick.

  • Place the salmon fillets, skin side down, on a board. Generously brush the top of the fillets with mustard and then sprinkle generously with salt and pepper. Press the panko mixture thickly on top of the mustard on each salmon fillet. The mustard will help the panko adhere.
  • Heat the vegetable oil over medium-high heat in a 12-inch cast-iron skillet or large heavy, ovenproof pan. When the oil is very hot, add the salmon fillets, skin side down, and sear for 3 to 4 minutes, without turning, to brown the skin.
  • Transfer the pan to the hot oven for 5 to 7 minutes until the salmon is almost cooked and the panko is browned. Remove from the oven, cover with aluminum foil, and allow to rest for 5 to 10 minutes. Serve the salmon hot or at room temperature with lemon wedges.

30g/1¼oz parmesan cheese
handful fresh parsley, chopped
2 garlic cloves, crushed
150g/5¼oz salmon steak
150g/5¼oz broccoli, cut into florets

Steps:

  • Place the breadcrumbs, cheese, parsley and garlic in a food processor and blend until combined. The mixture should form fine crumbs.
  • Coat the top of the salmon with the crumbs and bake in the oven for ten minutes or until the salmon is cooked through and the crumb is golden and crisp.
  • Meanwhile, boil a saucepan full of salted water and drop in the broccoli.
  • Cook the broccoli for four minutes or until just tender. Drain.
  • Serve on a plate topped with the salmon.
