2 tablespoons brown sugar
4 large eggs
1 teaspoon double-strength imitation vanilla extract (such as Goodman's Route 66)
½ teaspoon almond extract (such as Watkins® pure almond extract)
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
⅛ teaspoon ground allspice
8 thick slices slightly stale Texas toast

Steps:

  • Mix whole milk and brown sugar in a large bowl.
  • Beat eggs, vanilla extract, almond extract, cinnamon, nutmeg, and allspice together in a separate bowl until the eggs are well beaten; add to the milk mixture and stir to dissolve the brown sugar.
  • Heat a non-stick skillet or griddle over medium-low heat.
  • Set one slice of Texas toast into the milk mixture; let soak until moistened, about 10 seconds per side.
  • Cook the dipped toast in the preheated skillet until bottom is golden brown, 3 to 5 minutes; flip toast and continue to cook until the other side is browned, 3 to 5 minutes more. Repeat dipping and cooking with remaining bread slices.

2 teaspoons vanilla extract
2 pinches salt
1/2 teaspoon nutmeg, ground or freshly grated

3 cups corn flakes, lightly crushed
1/2 cup sliced almonds, lightly crushed
4 tablespoons butter
12 slices challah or 12 slices soft Italian bread (1 1/2-inch-thick)

Steps:

  • Pre heat oven to 350.
  • In a shallow dish, beat together with a wire whisk: eggs, half-and-half, vanilla, salt, nutmeg, cinnamon.
  • In a second shallow dish combine flakes and nuts.
  • Add 2 tablespoons butter to warm skillet.
  • Place a cookie sheet lined with foil (for easy clean-up) near the stove.
  • Coat 4 to 6 slices of bread in egg, depending on the size of your skillet, then coat bread in cornflakes and nuts.
  • Cook slices 2 minutes on each side and transfer toast to cookie sheet.
  • Repeat with remaining slices and transfer toast to oven.
  • Bake 10 minutes.

1 cup unsweetened vanilla almond milk
3 tablespoons sugar
2 teaspoons ground cinnamon
Pinch kosher salt
3 large eggs
3 cups cornflakes cereal, crushed
4 pieces challah or Italian bread, sliced about 1-inch thick
2 tablespoons butter, plus more as needed
Warm maple syrup, for serving

Steps:

  • In a wide bowl, whisk together the almond milk, sugar, cinnamon, salt and eggs. Put the crushed cornflakes in another shallow dish. Dunk the sliced bread in the egg mixture and soak about 45 seconds, turning once. Let the excess egg mixture drip off, then press the bread into the cornflakes. Turn and press on the second side, then set aside on a plate.
  • Set a large nonstick or cast-iron pan over medium heat. Set a rack over a baking sheet and preheat the oven to 250 degrees F. Melt 1 tablespoon butter and add 2 pieces of the crusted bread. Cook gently until golden brown, then cook and brown on the second side, about 3 minutes per side. (Reduce the heat if the bread begins to to brown too quickly.) Remove the bread, set on the prepared baking sheet and transfer to the oven to keep warm. Add fresh butter to the pan and repeat with the remaining bread. Transfer to the oven for 2 minutes, then serve with maple syrup.

3 eggs
1 cup milk
3 tablespoons all-purpose flour
¼ teaspoon salt
½ teaspoon baking powder
½ teaspoon almond extract
1 teaspoon vanilla extract
12 thick slices French bread
3 tablespoons canola oil
3 tablespoons butter
confectioners' sugar for dusting

Steps:

  • Place almonds in a small saucepan over low heat. Tossing frequently, toast until lightly browned, 5 to 10 minutes. Remove from heat, and set aside.
  • In a large bowl, whisk together eggs, milk, flour, salt, baking powder, almond extract and vanilla extract. Soak bread slices in the mixture until saturated. Place slices in a shallow pan. Refrigerate slices approximately 1 hour.

Steps:

  • Put oven rack in middle position and preheat oven to 275°F.
