Crispy crunchy salmon patties, or salmon cakes, are made with just three ingredients plus a little oil for the pan. Everyone loves them!

10 ounces canned pink salmon (boneless and skinless, drained)
2 large eggs
1 cup Italian breadcrumbs (divided)
olive oil (or your preferred oil for frying)

Steps:

  • Add enough oil to cover the bottom of a large nonstick skillet to a depth of 1/4 inch. Preheat the pan with the oil on medium heat while you prepare the salmon.
  • Combine the salmon, the eggs, and 1/2 cup of Italian breadcrumbs. Stir thoroughly until the mixture is well combined. Pour the 1/2 cup of remaining breadcrumbs on a plate.
  • Form the mixture into round patties about the size of the center of your palm. Place the formed patty on the breadcrumbs on the plate; pat gently to make the breadcrumbs stick, then flip and pat the other side into the breadcrumbs.
  • Slip each patty gently into the pan. Fry on one side for 2 to 3 minutes, until the cooked side is golden brown. Flip the patty and fry the other side the same way.
  • When both sides are golden brown, remove to a plate lined with paper towels to absorb excess oil. Serve warm.

A fail-safe recipe for a speedy fish supper - flaked salmon flavoured with parsley, dill and some secret ingredients

450g floury potatoes, cut into chunks
350g salmon (about 3 fillets)
2 tsp tomato ketchup
1 tsp English mustard
zest ½ lemon, plus wedges to serve
1 heaped tbsp chopped parsley
1 heaped tbsp chopped dill
3 tbsp plain flour
1 egg, beaten
100g dried breadcrumb
4 tbsp sunflower oil
salad, to serve

Steps:

  • Heat the grill.
  • Place 450g floury potatoes, cut into chunks, in a pan of water, bring to the boil, cover and cook for 12-15 mins until tender. Drain and leave to steam-dry, then mash.
  • Meanwhile, season 350g salmon fillet and grill for 5-6 mins until just cooked. Cool for a few mins, then break into large flakes.
  • Mix the potato, 2 tsp tomato ketchup, 1 tsp English mustard, the zest of ½ lemon, 1 heaped tbsp chopped parsley, 1 heaped tbsp chopped dill and some seasoning. Lightly mix in the salmon, taking care not to break it up too much.
  • Shape into 4 large fish cakes.
  • Put 3 tbsp plain flour, 1 beaten egg and 100g dried breadcrumbs in 3 shallow dishes. Dip the cakes into the flour, dust off any excess, then dip in the egg, and finally coat in breadcrumbs.
  • Heat 4 tbsp sunflower oil in a large pan. Fry the cakes over a medium-low heat for 3-4 mins each side until deep golden and heated through.
  • Serve with salad and lemon wedges.

These cakes will make a salmon volunteer for the honor to be in this dish. I love these crispy little suckers and so does Dugan. The delicious sauce I blatantly stole from my friend Chef #119466 who blatantly stole it from Cooking Light. There is no honor among thieves.

6 tablespoons fat-free mayonnaise
2 teaspoons capers
1/2 teaspoon lemon juice
1/2 teaspoon fresh lemon rind
1/4 teaspoon fresh black pepper
1/8 teaspoon red pepper flakes
1/4 cup red bell pepper, diced (I sometimes use jarred or drained pimientos)
1 teaspoon garlic, minced
4 green onions, chopped
1/4 cup mayonnaise
2 tablespoons lemon juice
1/2 teaspoon seasoning salt
1/2 teaspoon Old Bay Seasoning
1/8 teaspoon dried dill
1/8 teaspoon cayenne
1 small egg, beaten
4 tablespoons dry breadcrumbs
14 3/4 ounces pink salmon, skin and bones removed and flaked
1 cup crushed corn flakes (not too finely or they won't be crunchy like I like them) or 1 cup panko breadcrumbs
vegetable oil, for frying

Steps:

  • Combine ingredients for the Gayla sauce and refrigerate.
  • Sautee red pepper about 3 minutes in a non stick skillet in some butter or margarine. Add chopped garlic for the last thirty seconds.
  • Combine peppers and garlic and all the rest of the ingredients except corn flakes in a bowl and mix together.
  • Make four equal sized balls of this mixture and roll well into cornflake crumbs. Pat crumbs firmly and make sure it is well coated.(Balls will be about the size of a small baseball).
  • Place balls on platter and press into patties about 1 inch thick.
  • Fry immediately in a few tablespoons of hot oil in a non stick skillet on medium high heat. (You don't want them to sit around too long or the cornflakes will absorb moisture from the patties and not fry up as crispy.) Sear them quickly but of course, do not burn them about 3 or 4 minutes a side.
  • NOTE: After mixing all the ingredients together you may refrigerate this to stiffen mixture up but I don't find it necessary unless you have used a very large egg. You may also make everything ahead of time and refrigerate. Simply remove about an hour before dinner and bring to room temperature or they will be hot on the outside but cold in the middle. Just don't roll in the cornflake crumbs until the last minute.
  • Another Note: For a nice variation feel free to add 1/2 tsp or so of cumin to give these a "Tex-Mex" taste topped with some chili con queso. Yum! Be creative! This is a drop-to-the-floor-crawl-to-the-door moist patty. Make it as directed the first time and then EXPERIMENT! Make it your own.

1 cup panko breadcrumbs
1/2 cup celery, chopped
1/3 cup chopped fresh cilantro
1/4 cup onion, chopped
1 egg white
1 tablespoon hot sauce (Sriracha preferred)
1 tablespoon fresh lemon juice
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1 lb fresh salmon, skinless, diced
2 tablespoons vegetable oil

Steps:

  • Process the first 9 ingredients in a food processor until the vegetables are minced.
  • Combine the salmon with the vegetable mixture, then form it into 8 cakes on a parchment-lined baking sheet using a 1/3-cup measure. Lightly press into 1-inch thick patties, cover, and chill for 30 minutes. Preheat oven to 400°.
  • Heat the oil in an ovenproof sauté pan over medium-high. Add cakes and fry for 2 minutes per side, or until browned. Transfer pan to the oven and cook cakes through, 2-4 minutes.
  • Serving size: 2 cakes. 292 cal, 45% from fat; 15g total fat; 13g carb; 645mg sodium; 1g fiber; 26g protein.

**I ALWAYS remove the bones and skin**. The tiny little bones that run throughout the can of salmon are just way too hard to get to (you won't really bite into them when you cook it, they either dissolve or just don't really crunch when you eat em) , but down the length of the can I think towards the middle runs the vetebrae. You can kinda "roll" the salmon off and you will find them. The skin will kinda just slide off, it's very slimy.

1 (14 3/4 ounce) can salmon
2 eggs
10 -12 crackers, crushed (either town house, ritz or some other buttery cracker)
1 hefty pinch red pepper flakes (about the size of a quarter in your palm)
1/2 tablespoon dried parsley
1 juice of small lime
1/2 tablespoon dill (or size of a nickle in your palm)
1 dash black pepper
1/2 tablespoon dried minced onion
1/4 cup panko breadcrumbs

Steps:

  • Place your Panko in a shallow dish.
  • Mix all other ingredients for the cakes in a bowl with your hands until they will form a patty. If they are too mushy add a few more crushed crackers, too dry a little more lime juice.
  • Place the patties in the panko and coat both sides.
  • Get oil and the butter hot in pan (turn down slightly when you put in the patties because you don't want them to burn before they cook).
  • After they have cooked on one side take your spatula and carefully lift up one side to see if they are brown underneath, if they are, then flip em'. Cook till both sides are golden brown.
  • ENJOY!

This started out as a basic recipe many years ago and slowly evolved until it became the best salmon cakes I've ever had. Please use the celery and red bell pepper as it is essential to the taste. If you don't have the wasabi powder you can just substitute cayenne pepper which tastes different but is still good but please don't use 1/2 tsp! LOL!

2 tablespoons hellman's light mayonnaise
2 eggs
1/2 small red bell pepper, finely diced (about 4-5 tablespoons)
1 stalk celery, finely diced

1/2 teaspoon wasabi powder
1/4 teaspoon garlic powder
1/4 cup plain breadcrumbs, plus extra for coating

Steps:

  • Remove skin and bones as desired.
  • Add rest of the ingredients to the salmon and combine well until the mixture holds together well (if it is too dry add a little mayo).
  • Forming a salmon cake with your hands, coat on both sides with the breadcrumbs.
  • Gently place in hot oil in your frying pan and cook over a medium heat until nicely browned.
