Made famous by my Aunt Sue, here's an easy pound cake recipe that's guaranteed to deliver a deliciously moist and sweet vanilla sponge cake.

6 eggs
1 cup butter (2 sticks)
3 cups sugar
3 cups all-purpose flour
1 cup whipping cream (also known as heavy cream)
1 teaspoon vanilla extract

Steps:

  • Grease and flour a tube or bundt pan and set out the eggs and butter to allow them to come to room temperature.
  • In a large bowl, cream the butter and sugar until smooth. Add the eggs, one egg at a time, beating for one minute after each addition. Sift the flour and add it to the creamed mixture alternately with the whipping cream. Mix until fully incorporated.
  • Stir in the vanilla.
  • Pour the vanilla cake batter into the prepared pan and place in a cold oven. Turn the oven to 300 and bake for 80 to 90 minutes, until a toothpick inserted in the center comes out clean. Cool completely before removing from pan.

Number Of Ingredients 7

3 c sugar
3 c sifted flour (sift three times after measuring)
6 stick butter, room temperature
1 1/4 c milk (add flavoring to milk)
5 large whole eggs
2 tsp flavoring (vanilla, lemon, or one of each) (could also use almond and/or vanilla)
5 drops yellow food coloring added to the whipped ingredients before the flour and milk

Steps:

  • 1. DO NOT PREHEAT OVEN. All ingredients room temperature (75F or above) WELL GREASE and Flour: one tube pan, or two loaf pans
  • 2. Cream the sugar and butter. Reduce speed and add one egg, whip for 1/2 minute then add the other eggs, one at a time, whipping for 1/2 minute between each one.
  • 3. Reduce speed to slowest and add 1/4 of the flour, blend for 2 minutes using spatula to scrape the bowl. Now add 1/3 of milk, the food coloring and whip 1 minute then repeat alternating flour and milk. Starting and ending with flour.
  • 4. Do not preheat the oven. Place the cake on the middle rack and turn oven to 325 F. Bake for 1 1/4 hour -- then set oven to 350 F and bake for 15 minutes more. Cake should be very brown but not burnt.
  • 5. Remove the cake from the pan immediately when taken out of oven and place it on a cooling rack to cool.

1 teaspoon almond extract
1 teaspoon lemon extract

Steps:

  • Mix all ingredients together in a mixer for 10 minutes.
  • Pour into greased and floured bundt pan.
  • Bake for 1 hour and 10 minutes at 325° or until golden brown and tests done.
  • Cool and turn out onto rack.
  • Turn it over onto a plate and the top will be crunchy.

14 crushed vanilla wafers (1/2 cup)
2 tablespoons melted butter
1/2 cup pecans, finely ground
2 tablespoons sugar
2 cups butter (no substitutes)
2 cups confectioners' sugar
7 large eggs
3 cups all-purpose flour, sifted
2 teaspoons vanilla extract

Steps:

  • Do not preheat oven.
  • Grease a 12-cup tube pan.
  • In a small bowl, blend all the topping ingredients with a fork and press into the bottom of the prepared pan; set aside.
  • In a large mixing bowl, blend the butter and sugar on low speed and beat until light and fluffy (approximately 5-6 minutes).
  • Add the eggs one at a time, beating well after each addition. Slowly stir in the sifted flour. Add the vanilla extract.
  • Pour the batter into the prepared pan and bake for 1 hour at 325°F, or until a cake tester inserted in the center comes out clean.
  • Cool the cake in the pan for at least one hour.
  • Invert the pan over a cake plate, cake should slide out nicely with a beautiful crunchy top!

1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup (2 sticks) butter, softened at room temperature
1 cup sugar, plus 1/3 cup
4 eggs
2 teaspoons pure vanilla extract
1/4 cup lemon juice, plus 1/3 cup

Steps:

  • Preheat the oven to 350 degrees F. Butter a 6-cup loaf pan and line it with parchment or waxed paper. In a medium bowl, combine the flour, baking powder, and salt.
  • In a mixer fitted with a whisk attachment (or using a hand mixer), cream the butter. Add 1 cup of the sugar and mix. With the mixer running at low speed, add the eggs one at a time. Add the vanilla.
  • Working in alternating batches, and mixing after each addition, add the dry ingredients and 1/4 cup of the lemon juice to the butter mixture. Mix until just smooth.
  • Pour into the prepared pan and bake until raised in the center and a tester inserted into the center comes out dry and almost clean (a few crumbs are OK), 65 to 75 minutes.
  • Meanwhile, make the glaze: In a small bowl, stir together the remaining 1/3 cup sugar and the remaining 1/3 cup lemon juice until the sugar is dissolved.
  • When the cake is done, let cool in the pan 15 minutes (it will still be warm). Run a knife around the sides of the pan. Set a wire rack on a sheet pan with sides (to catch the glaze) and turn the cake out onto the rack. Peel off the waxed paper.
  • Using a turkey baster or pastry brush, spread glaze all over the top and sides of the cake and let soak in. Repeat until the entire glaze is used up, including any glaze that has dripped through onto the sheet pan. Let cool at room temperature or, wrapped in plastic wrap, in the refrigerator (Well wrapped, the cake will last up to a week). Serve at room temperature, in thin slices.

This is my favorite pound cake. This recipe came out of a book called, Bell's Best. A friend in Augusta, Georgia gave me this cookbook. This makes a good cake for strawberry shortcake.

1 cup oleo
3 cups sugar
6 eggs
1 cup sour cream
1/4 teaspoon baking soda
3 cups flour
1 teaspoon vanilla

Steps:

  • Sift flour and measure; resift twice with soda.
  • Set aside.
  • Cream oleo and add the sugar slowly, beating constantly to cream well.
  • Add eggs, 1 at a time, beating after each addition.
  • Stir in sour cream.
  • Add flour mixture, 1/2 cup at a time, beating well.
  • Stir in vanilla and turn batter into a well greased and floured 10-inch tube pan.
  • Bake in 325°F oven about 1 1/2 hours.
  • Place pan on rack to cool 5 minutes.
  • Loosen cake around edge of pan.
  • Turn cake onto rack to cool completely.

3 cups cake flour
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
2 cups granulated sugar
1 cup butter, softened
4 large eggs, room temperature
1/4 cup sour cream
1 cup buttermilk
2 teaspoons pure vanilla extract
1/4 cup granulated sugar
1/4 cup sweetened flaked coconut

Steps:

  • 1. Preheat oven to 350 Degrees Fahrenheit.
  • 2. Sift together cake flour, salt, baking powder and soda. Set aside.
  • 3. In a large separate bowl, beat butter until very fluffy (approx. 5 minuets) then add 2 cups of sugar. Continue to beat until light and fluffy (approx. 2 more minutes).
  • 4. Beat in eggs, one at a time, making sure that each egg is thoroughly blended before adding the next egg.
  • 5. Mix in sour cream and vanilla extract.
  • 6. Blend in some of the dry ingredients followed by some of the buttermilk in alternates. This is a way to ensure that the ingredients are being thoroughly blended together -- For example; add dry mixture followed by buttermilk, dry mixture, buttermilk dry mixture -- so on and so forth -- DO NOT OVER BEAT OTHERWISE CAKE WILL BECOME HARD AS A BRICK ONCE FINISHED BAKING!
  • 7. Grease a bundt cake pan. I used a non stick angle food spring formed tube pan. If you do not have a non stick pan, be sure to grease your pan and dust with flour! Add in 1/4 cup of sugar to the bottom of pan and about 3 inches up the sides, tapping the pan to ensure even distribution. Leave excess sugar in pan. Sprinkle coconut flakes to the bottom of the pan. Scrape batter into the bundt pan and spread evenly.
  • 8. Bake for about 50 minutes to an hour or until a wooden skewer inserted comes out clean (if it comes out wet, bake another 10 minutes or so, if it comes out crumbly, you over baked the cake).
  • 9. Let cake cool for about 10 minutes, then carefully remove from pan, making sure that the sugary coconut side is faced upward. Use a knife to scrape the sides if cake becomes stuck. (this step is very important otherwise your cake will continue to bake and will become very dry and completely stuck in the pan).
  • 10. Drizzle glaze over the crunchy top portion of cake. Please use my Vanilla Almond Glaze recipe to complete this cake!
